The best way to mix anything in something like this is to mix your egg, dry ingredients and wet ingredients together first in a separate bowl and then into ground beef I found out over the years. Ingredients get distributed more evenly that way. I also mix it into the ground beef on a flat surface like a plate or cutting board or mat. It's soooo much easier and faster and easier on your hands and wrist and less work.

That looks sooo tastey!! However, could I use less oil and get the same result? There is already fat from the ground beef in addition to the oil in the pan, and I am trying to moderate (not eliminate) fat consumption. Would lightly buttering the outside of the tortillas and frying them without the oil work as well? Thanks for your work!

My Tiá/aunt/family friend taught me this when I was a kid. I'm pretty sure those are corn tortillas, they're thicker and almost more grey. If you do it with flour tortillas they'll puff and crisp into shards essentially. But regardless this is a phenomenal recipe thank you for sharing it!
