AMAZING LAMB RACK RECIPE! Oven-roasted with veggies!

- Lamb rack for your Sunday lunch? There you go!
Ingredients:
Lamb rack 600g
Garlic 4 cloves
Thyme few pinches
Green zucchini 1/2pc
Yellow zucchini 1/2pc
Eggplant 1/2pc
Onion 1/2pc
Cream 125ml
Millet 200g
Bay leaves 3pcs
White wine 150ml
Clean the rack:
1. Remove the fat cap using your fingers
2. Finish with a long knife following the bones, and keep the fat for later
3. Remove the last fat part between the bones
4. Remove the silver skin from the loin
5. Season with salt & pepper
6. Heat some olive oil in the pan, color the rack 1min on each side and put aside
7. Chop the fat cap and add it to your pan
8. Add the garlic, thyme and onion & stir for one minute
9. Place the rack on the top and put in the oven for 15-18 minutes at 220C & let it rest for 10 minutes
10. Slice the zucchinis and eggplant & fry them with olive oil
11. Remove the fat from the pan
12. Deglaze with white wine
13. Add the cream and reduce for one minute and strain the sauce
14. Serve with the millet and the fried veggies
15. Add a nice spoon of Mustard with sauce!
