Running a YT channel won’t be the only dumb thing you do for no obvious return in your life. Don’t worry lol. Low carb/Keto is a really small niche. He is doing so well esp. keeping up with quality make. My channel targets a similar group but is limited down to Chinese speaking community on YT (which most Chinese speaking people won’t have access to in the foreseeable future😭). 9 months later I have only 500+ but I feel so fulfilled and satisfied.
I am Hispanic....and have made homemade flour and corn tortillas for the last 30 years. These (the Gluten version) are as close to a real tortilla without being a tortilla as I've ever tasted. They even smell like tortillas when you are cooking them! I made quesadillas and they were awesome. Just cook them, and pop them in a microwave with some cheese on top. Absolutely delicious. I'm looking forward to making bean and cheese tacos now with black soy beans, refried in bacon fat, with these tortillas. God bless keto!!!
Have you tried making tortillas with just King Arthur's keto wheat flour? I tried and they turned out exactly like real tortillas! The flour works exactly like non keto flour.

Been making Joe Duff’s keto tortillas for a few years, same recipe here. They are incredible, you don’t need the gluten. I make 3 batches at a time, use some immediately and freeze the rest for later. You can even cook them differently and make tortilla chips with them.
Possibly! Its always crazy how a different sized egg will affect a recipe. You can always sprinkle some oat fiber of coconut flour to soak up some of the moisture if it's too wet!
Very entertaining video! I'm definitely going to give this recipe a try because it does not have psyllium husk as an ingredient. The grit in psyllium husk is a big turn-off. It feels like I'm eating sand. And while I'm at it, I'm going to try swapping lard for the water to see what happens with the flavor. I love the taste of real tortillas made with lard.
Yeah, it's a completely different flavor and texture with the husk (I second your sentiment on eating sand). In my trials, lard didnt help much since rhe xanthan gum wants to stick to water. I did my tests with bacon grease, so the flavor was overwhelming and I found it didnt add much to the tortilla overall.
1st attempt failed, they were way to sticky. I thought, maybe I got the ingredients wrong? 2nd attempt, I realized that my kitchen was too warm causing them to be sticky. This time, I made the tortilla first and left them in the parchment paper and placed them in the freezer while cooking one at a time! They came out perfect! So happy for this recipe! Thank you ;)
Okay, so I made the first tortilla recipe today (couldn't find wheat gluten). They're not bad. I was able to section them into six small tortillas (street taco size) with my little tortillas press. I'm going to fry them up as chips and make chilaquiles out of them tomorrow. In the future I'll add spices to the dough. Do you suppose the first or second recipe would work for tamales? Thank you!

I made this twice. First batter was too crmumbly but I think it would have worked fine if I'd had a tortilla press (the rolling pin method yeilded jagged edges). The secodn batch was more stick, so sticky in fact that I could't peel it off the parchment paper. The ones I managed to cook were pretty close, not quite as pliable or strudy, but I'll be trying this again.
Hmm did you measure exactly? The tortilla press definitely makes it easier, but it should still be rather manageable with a rollin pin. Pressing down with a large pan works really well too as long as it's even pressure - and it shouldnt be so sticky that you cant peel it off 🤔
@@BlackTieKitchen Oh, this is absolutely user error. My kitchen scale has some kind of power saver feature and would cut off half way through trying to measure stuff out. As I said, I'll be trying this again, it was pretty darn succesful for as much trouble as I had. I also made the cheesy busciuts and they turned out great. I sent you a shot over on Instagram.
Steve over at Serious Keto just did a 90 second tortilla that he swears by - requires a microwave though. Not that you shouldnt try my recipe again, but just providing options 😄
I made the non gluten even though I bought a 5 lb bag of wheat gluten. I kinda had the same expression as you when I tasted it. Definitely not bad. But it wouldn't save Beast 😂 Anyway I need to work on the fold and flappability. Please advise... Not enough water? Too much of something like banking soda? Too little of something Thule Xanthan gum? Hmmm it would be cool if you shared a video about how low carb baking ingredients effect other ingredients and the goal of baking recipes.
It's hard to say - the lack of gluten doesnt provide good stretch, so you need xanthan which gives it a weird texture and odd flavor. Maybe even cheese might be the answer lol. Theres some mysteriously good properties when you mix certain gums together, but I dont think they will yield that which we seek :(
Can anything else be used in place of the wheat gluten? I really don't like hurting, and for me, wheat is very infmmatory. Also love the nod to Sergio Leone.

Hey Buckaroo. For those of us cowpoke who don't have a fancy food scale can you convert to cups, tsp, and what ever else it might be?. I just made these by googling and using conversions and I got it wrong. Not bad but too dry. They are not a floppen at all. Tastes good. I love it. Thank you kindly cowboy!
It's incredibly difficult to convert to imperial for this recipe since 1 tsp is not always the same mass. You can buy really decent scales for $10 and it will be life changing
So I noticed that in your Pizza 2.0 recipe you specifically eschew the use of Xanthan Gum for Gelatin. Do you think gelatin would work as a replacement in this tortilla recipe to provide better flexibility? Also, I notices you did not use any Lupini flour in this recipe. Did you consider it and/or do you think it might help? Thanks for the great video!
Its on the agenda for a second go around - lupin flour was something I learned about afterwards! And the gelatin might give extra bite, so that too might be a worthwhile substitution

One question could you replace the xantham gum which has some carbs i believe with guar gum that has no carbs? or will it change the outcome. Awesome! Crazy how something like ambient temperature can have such an effect. Adds another element to low carb cooking as well

It's hard to say - the lack of gluten doesnt provide good stretch, so you need xanthan which gives it a weird texture and odd flavor. Maybe even cheese might be the answer lol. Theres some mysteriously good properties when you mix certain gums together, but I dont think they will yield that which we seek :(

Can anything else be used in place of the wheat gluten? I really don't like hurting, and for me, wheat is very infmmatory. Also love the nod to Sergio Leone.

Hey Buckaroo. For those of us cowpoke who don't have a fancy food scale can you convert to cups, tsp, and what ever else it might be?. I just made these by googling and using conversions and I got it wrong. Not bad but too dry. They are not a floppen at all. Tastes good. I love it. Thank you kindly cowboy!
It's incredibly difficult to convert to imperial for this recipe since 1 tsp is not always the same mass. You can buy really decent scales for $10 and it will be life changing

So I noticed that in your Pizza 2.0 recipe you specifically eschew the use of Xanthan Gum for Gelatin. Do you think gelatin would work as a replacement in this tortilla recipe to provide better flexibility? Also, I notices you did not use any Lupini flour in this recipe. Did you consider it and/or do you think it might help? Thanks for the great video!
Its on the agenda for a second go around - lupin flour was something I learned about afterwards! And the gelatin might give extra bite, so that too might be a worthwhile substitution

i have enjoyed your videos i do not have diabetes but i am supporting my husband who does and going on this journey with him by going keto with him. I love the videos make me laugh every time. One question could you replace the xantham gum which has some carbs i believe with guar gum that has no carbs? or will it change the outcome. It will change the outcome, unfortunately. Xanthan gum has such minimal carbs - and the amount used is so minuscule that it wont count really
