I made this two days ago and it’s delicious. I made the salted caramel also and I couldn’t believe it’s not actually sugar! My only mistake was halving the recipe. It turned out awesome but now I have to make it again.

Hmmmm warm heavy cream and the juice and microbladed rind of oranges or lemons does very nicely too. I was intrigued by the pizza dough recipe. I shall pass it along to my granddaughters who are into, as they say, keto-baking.
If you use heavy cream with 1g carb and almond milk, it's roughly ~6g of net carbs. For a serving, I have it as ~ half a cup, so the recipe should yield about 10

You should be able to use erythitrol for the panna cotta itself with no issue. For the caramel, erythitrol will work, but will only be smooth when its warm. Everytime Ive had salted caramel made with erythitrol, it left something to be desired. Luckily things like allulose are becoming more common place (especially since companies like Splenda now have their own allulose line) - so hopefully it will be more widespread and cost effective in the near future
Panna Cotta = Cooked Cream. Traditional is made with heavy cream and egg whites and if a 0 calorie sweetener is used is Keto. It’s cooked in the oven similarly to a flan. Modern takes do use gelatin with the heavy cream but the traditional recipe is not complicated and much better.
Question for you: Is there a great deal of difference between heavy cream and “whipping cream”? Around holidays, it seems like whipping cream is all I can find. Love your mobsters. So much fun to watch you. Better than television. :)

You can use water in place of almond milk. Normal panna cotta calls for milk, but that is higher in carbs. If you only use heavy cream, the final result will have a consistency more like a creme brulee!
Should you let the salted caramel topping cool before adding to the tops of the panna cotta? It looked like you did it right after making it, but I would think this would be screaming hot and would melt the top of the panna cotta. Also, should you chill the panna cotta after the caramel is added, or will it get too hard.
I added it right after i made the caramel so that it was still pourable. It will warm up the top a bit, but it doesnt ruin the panna cotta or anything. The contrast between hot and cold is really nice, but you can also put it back in the fridge and let it harden!

Hello, why do you use allulose? It's a saccharide epimer of fructose that your liver must work to break removing you from ketosis for a whole day. Even white suggar is healthier than fructose.
I havent seen any study that shows this - only studies where allulose doesnt spike blood glucose, and might actually help the liver from storing fat and thus sidestepping fatty liver disease. Do you have a study link for what youre saying? Id love to take a look

After removing myself from all suggars I'm brand new and worry those d-allulose sold on the market are not pure since not even Walter White made pure methamphetamine (a fiction) on that Breaking Bad show. Making me believe a process that would remove all d-fructose from it is a real fiction. There are probably 2 or 3 % d-fructose on your recipe. Must be used only on cheat days, don't you agree?
Personally, I dont agree. My aim is not to be in ketosis, it's to avoid disease such as diabetes and heart disease- ketosis is simply a side effect. We can imagine all we want about purity of products and how the body reacts to then, but without proof or studies - it's simply conjecture.
The beeps are not timed correctly so you hear the word and then the beep. I just listened to it a second time with my eyes closed to ensure that I was hearing correctly. I know many people that would enjoy watching your videos with there kids but this will deter them. My kids love to cook, growing up watching Alton Brown. I hope my keto friends can say the same in the future after being able to share your videos with their kids.

Potentially. I know agar agar is used as a thickener, but Im not familiar enoughwith it to say whether it can work as a replacement for gelatin

it's a running joke! I grew up in a household that was meticulous about cleaning because if not, it was super easy to get ants (here in Florida)
