I would probably take the pumpkin cake to the next level of flavor and add pecans or walnuts to the icing, and dried cranberries or dried cherries to the cake batter. I put dried cranberries in a lot of my baked goods. I just love the tangy tartness they add to a sweet cake, especially a Fall cake. My husband's current favorite is my chocolate chocolate chip banana bread with pecans and cranberries or raisins. I made up a recipe last fall for Apple Banana Cranberry Bread (aka ABC Bread). I just saw your channel for the first time with this video and instantly subscribed. I do all the cooking and baking from scratch here, and always need new ideas and happy to share! I definitely want to try making the cinnamon roll poke cake! That looks so good. Hey I wanted to give you a hint. You need an off-set spatula when you're spreading your mixes/frosting. The off-set spatula will allow you to spread more evenly and it will get into the corners easier. Keep sharing those cake mix ideas with us.

Just found your channel as I was specifically looking for cake mix recipes. I must say they all look pretty good. I'm trying to decide between the pumpkin bars or the cinnamon roll cake to do first. This was a good introduction. I'll be back and I'll check out your previous videos. Just a note that it is not your microwave not heating well enough that the cinnamon didn't blend well It's just the way cinnamon behaves. If you've ever added cinnamon to your instant oatmeal before microwaving, even if you stir it in, much of it will be floating on the top and clinging to the bowl because it just doesn't mix well with a light weight liquid - like the butter in your mixture or the water/milk in my oatmeal. Once heated or thickened you just need to stir it in again. Other fine spices like nutmeg, cloves allspice and cardamom do the same thing.
Wow!!! I want to try the cinnamon roll cake and the one with the butter pecan cake. I love butter pecan ice crean, and with the pumpkin, i can just imagine how wonderful that one was! Good job.

For the spice cake, You could have used cloves, cinnamon and nutmeg and make your own spice cake mix. Also to make the bars, line your pan with parchment paper do that is easy to lifted up and cut them into bars. But great recipes nonetheless.
Just last week I made my own spice cake from a yellow cake mix. Same ingredients you mentioned. I used to get Spice Cake mix all the time but to my disappointment my Walmart stopped selling it.
