Cookie Cake Cookies
1 Box Yellow Cake Mix
1 Bag Semi Sweet Chocolate Chips
1 Stick of Butter
2 Eggs
Preheat oven to 350 degrees. Stir together cake mix, butter and eggs. Fold in chocolate chips. Bake 25 minutes. Let cool before cutting.

I would have to vote never again since it would put my blood sugar into a tailspin, but ask the same about bread & I would say I'd eat bread every meal & lots of veges to balance the carbs.
I don't really like cookies very much except a couple of Christmas cookies. Oh, and some Girl Scout cookies, but they just haven't been the same for years. I haven't eaten a cookie in probably 10 years. I'll take a pie any day, though!

My son's favorite is yellow cake mix, eggs, melted butter and chocolate chips, butterscotch chips and white chocolate chips, instead of a whole bag just divide between the 3 flavors to equal a bag.
The Cake Doctor Cookbooks are still a staple for me. There are several in the series, three for cakes, cookies, then she wrote one for dinners, and another with recipes to use for taking to share. Can't go wrong with her great recipes!

Not sure how old the cake doctor books are. But I have some old cake mix recipes that don't turn out anymore. The new boxes of cake mix have less in them than from years ago. Have you had to adjust any recipes to account for the deficit? My recipes call for a 1 lb box.

I’d say any “regular/average” sized cake mix would still work. I have a recipe book, The Cake Mix Bible from 2005. A lot of the recipes in it calls for “about a 18-1/4oz box.” I didn’t really pay attention to the exact size since the mixes seem to come in a “one size” box. I just checked after reading your comment & I guess they started making the boxes smaller bc all of mine are 15.25 oz now. But I have made many of the recipes and they all have turned out great.
On a side note, 16 ounces = 1 pound, so you’d probably be safe using a any regular cake mix. Good luck.

My all time favorite cookie is the Texas sheet cake cookie made with chocolate cake mix. My daughter loves using strawberry cake mix for cookies with white chocolate chips. I know she will want to make those brownies this weekend. Looks yummy!

Jen, these look like great recipes. I did have a Cake Doctor cookbook but didn't use it. I might have to get another copy from a thrift store. That's where I got the first one from. I do like using cake mixes in recipes.

I received that cookbook for Christmas years ago. I looked through it, but I never made anything from it. I need to look through it again now that I'm retired and have time to bake.

Even tho I don't eat sweets, I still love to watch ur recipes Jen, u have a knack of finding the unique, & the peach cake might be one I alter to lower the sugar. Thanks much for ur creativity! Maybe I would sprinkle brown sugar on top to minimize the carbs?
You definitely could. It would still be good without the frosting!
@@CookCleanAndRepeat Oh man, I just thought of an idea: what if u took the "black bottom cupcake recipe" (one with cream cheese marbled in the cake?) and put cream cheese blobs in the strawberry or peach cakes?! Better yet, make the cakes into muffins! I have that recipe for cupcakes & sheet & remember u need to add an egg into the cream cheese to lighten it so it incorporates with the cake batter.
try adding 1-2 teaspoon of cinnamin to your caramel frosting on the peach mix for more of a cobbler taste.

Looks great thanks for sharing. One thing, in Australia we always measure ingredients, so I don't know how many grams a "stick"" of butter is and a bag of choc chips? Not a criticism just observation. Merry Christmas 2023 to you and yours.

Don't know if you have ever tried "caramel" frosting with coconut sugar rather than brown sugar? It has a really nice taste..
for the peach one, could you use any fruit? im allergic to peaches but the topping sounds great for an apple type cake
