Add salt , keep to rest for 30 min. Give tadka to the batter for good taste- Little oil, mustard seeds, green chili, curry leaves Hing. N coriander leaves. Add 1 tsp baking soda n Mix all well. Now make idlis in a steamer as we make rice idlis. Have with coconut chutney. Must try Very soft

as a health expert and promoter of millet, how could you use the powdered (processed) sugar in your recipe for raggi laddu? you can as easily make laddu with the deshi gud or pulverized pitted dates. i have been using both these ever since i began to cook over 70 years ago, first for myself, and then in a nutritional food food for the wholesome being in a not for profit eatery in san fancisco an d in little rock, arkansas.
Here's an interesting recipe which I prepare quite often. Mix 3 measures of jowar flour with 1 measure of amaranth (rajgira) flour and keep it aside. Take 3 measures of water in a pot and add salt and coconut oil. Mix well and keep it on the flame. When the water starts boiling, lower the flame to sim. Add the mixed flour to this and stir well. Put off the flame and stir once again. Close it with a lid and allow it to cool for 15 minutes. Transfer this on to a plate and knead well by Adding intermittent water little by little. Make a few balls of this dough and one by one spread it with a rolling pin. Use rice flour to sprinkle while spreading the chapathis. Transfer this on to a hot tawa and make phulkas as usual. You can add desi ghee while serving. This can be served with any chutney or sabzi of your choice. The chapathis are yummy and soft and needless to say very nutritious. Please do try it.
I suggest making muthiyas with the thalipeeth batter, adding a few vegetables like grated bottle gourd, fresh methi or palak or Moringa leaves. In Kutchh region of Gujarat, bajra is a staple diet. They not only make bhakris, but also bajra khichdi, which tastes just yummy with lots of ghee & garlic-red chillies chutney, since Kutchh is a salt desert, no vegetables can grow there. I make Gud Papdi or Sukhdi as it is called in parts of Gujarat, with jowar or bajra flour & wheat flour in 50:50 proportion. Traditionally Gud Papdi is made of flour, jaggery and ghee. Chopped dates & powdered dry fruits can also be added, but that's optional. It is especially given to children, young girls during their periods, during pregnancy and to lactating mothers.

Just an observation n sharing… I watched another video by you wherein you advised to shun all plastic n cling film. I do try my best. However, I use milk plastic bag cut n open to roll out parathas, bhakris … as I find it much easy. But it is still a plastic. In early days, my elders used plant leaf as banana or so to make certain savouries. We could use the leaf instead of plastic sheet. … only if we can have it handy.
