Elegante! I have become a fan of grating onions, garlic, and even tomatoes. I would probably grate onion and garlic into the mashed beans. That onion sauce is glorious! So simple and uncomplicated, too. My favorite type of cooking!
i think i will try this with glucomanan fiber instead of bread crumbs and use a mixture of 65% ground meat and 35% beans. and frying in lard. maybe adding champignons and cream without wheat flour. i think the fiber from the beans has some benefits regarding higher GLP-1 production in the L-cells on the next day but still the protein quality and the taste of ground meat is better. i think that would be a good combination of both worlds but in a low carb setting.
What a great vegetarian option for that can easily translate to other dishes such as Moroccan meatball wit celery that is part of the Jewish tradition, You always give me inspiration on how to include my vegetarian friends more completely when I entertain.
I made this with a minor addition. We like more protein with our meals so I added 1 pound of ground turkey. My can of cannellini beans was 19 oz. I doubled everything except the white beans. I doubled the sauce, but that may not be necessary as I had more than enough left. I did use the excess onion sauce for another dinner. We loved this dish. Simple, fast, and tasty.

Just a little tip, you can use that aqua fava to thicken sauce, if you catch it when draining your beans.
and mix a little with cornstarch to replace the egg.
