If you go to Italy from town to town they do things different as well so it pretty much depends on the italian you ask. 10 italians will tell you 10 different ways to cook a dish and all 10 of them think that they are the one who is right :D

I never knew lemon pasta was a real dish. I've been making it since I was a kid. I just take spaghetti lemons and parmesan and put them together very simple and so good. I've been growing mint in my aerogarden lately. I might try that with the mint leaves.
I have recently moved to Southern California where the neighbor's lemon tree often drops a handful of lemons into our yard.. just love them. I make lemon pasta often. I do not use eggs.. just a thin beschamel where I incorporate the juice into the flour before adding any milk..helps to prevent curdling.. It is good and refreshing.
But why are so many Brits trying to imitate the CA accent? Especially the famous brits. Like they're ashamed of the Original form of English. (I don't blame them though, British English is hard to understand without subtitles)
I just made Lemon pasta today. I don't use olive oil. Instead I use butter. Half pound of pasta , half a stick of butter, zest 1 or 2 lemons depending on size, juice of the lemon then add it to the melted butter. When the pasta is ready I put it in the pan and cook it stirring it around for a min or so. Add some pasta water if you need. I like eating it plain or sometimes I put some broccoli in it. Grate some fresh Romano cheese and it's time to eat.

Good effort for Nigella. Need to change the Parmesan for Pecorino, and remove the butter and cream from the recipe. I would also substitute parsley for basil if you want to add some colour (and flavour) to the plate. At the end, I always like to add a drizzle of extra virgin olive oil. Served with a Foccacia made with rosemary and lemon zest. Will send you the recipe !....
actually for a great lemon pasta recipe you should remove the cream, eggs and butter! for this recipe you only need lemon, which is the main ingredient, and cheese!

I have a question for you. In an Italian restaurant where I worked, we had a large "starchy water" pasta pot in which we cooked pasta all day long. Since in home we don't have that kind of equipment, don't you think we should use just enough water instead of a large quantity in a way to obtain the starchy water ? What do you think?
everyone at home has their own pots, even I don't have restaurant equipment, but to cook pasta we need at least a couple of liters of water, so we need a fairly large pot!

Could it be that lemon will react to the proteins in the egg to slightly cook it? I mean when you marinate meat with lemon you can't do it for more than 1-2 hours otherwise the meat outside gets cooked by the lemon acid and the meat gets chewy/strange.

Regarding raw eggs & salmonella, in the UK chicken eggs are safe to eat raw because the hens are vaccinated against salmonella. This wasn't the case before 2017, as we were still in the process of vaccinating all the hens. In 2017 the UK's Food Standards Agency declared that British eggs with the Lion mark (our safety mark to show that the hens have been vaccinated against salmonella) were now safe to eat by anyone, including people who were more likely to suffer serious syptoms from food poisoning, such as the young, the elderly & pregnant women. Since then the only people who are advised not to eat raw eggs in the UK are those who are severely immunocompromised to the extent they are under medical supervision. So Nigella was perfectly fine pouring the raw eggs over the dish when the pasta had cooled.
LoL even my friend always using cream+cheddar cheese (as it's the easiest found on my country) when cook carbonara pasta. But in this video she make that kind of mix that will become great dressing on top of cheese cake.
If every regional Italian dish has it's own flavor profile, tradition should be respected. Other ingredients could be fighting the profile achieved from hundreds of years of tasting.

I like her. She's cool, but it's always awful when she's adding so much fat (especially butter) to her dishes. I'd prefer your simple recipes with olive oil. Italian food is really simple and elegant way to make people happy. I found that less is more in terms of Italian cuisine. Now thanks to Lucio and you - I'm eating only pizza margherita, because good pizza don't need any additional ingredients. PS. I really don't understand why restaurants often offer ketchup or garlic sauce to their pizza. It's like they're feeling sorry about what they made and the only way is to eat this with ketchup or garlic sauce 🤷♂️
I fully agree with everything you said! Italian cuisine is made up of few ingredients... it takes very little to create a delicious recipe, just think of the Aglio e Olio pasta. I'm really happy that thanks to Lucio's recipe you were able to find the perfect pizza recipe!
Yes and no. Everyday Italian cuisine is simple, right, but during holidays , festivities or sunday isn't 😂 there are tons and tons of not simple recipes.
A little important addition - Italian (and Spanish) food is about a few ingredients but top quality beautiful fresh ingredients. That is what makes the food beautiful and delicious. of course history and combinations of flavours that have been working for decades. But if you get tomatoes that taste like cotton pads (which if often the case here in the UK sadly) your pasta wont be as amazing unfortunately :) but totally agree to the main point

I think its tastes like a carbonara, without bacon, but with lemon, certainly good but not a lemon pasta, since she has not made it the main ingredient of this recipe
Nigella can ruin a dish for me any day. Even if it's horribly wrong I will eat it and STFU. Well, except for my vongole spaghetti. British people can ruin any recipe with peas, cream or over cooked beef. But I will still watch her cook all day long :)

Regarding raw eggs & salmonella, in the UK chicken eggs are safe to eat raw because the hens are vaccinated against salmonella. This wasn't the case before 2017, as we were still in the process of vaccinating all the hens. In 2017 the UK's Food Standards Agency declared that British eggs with the Lion mark (our safety mark to show that the hens have been vaccinated against salmonella) were now safe to eat by anyone, including people who were more likely to suffer serious syptoms from food poisoning, such as the young, the elderly & pregnant women. Since then the only people who are advised not to eat raw eggs in the UK are those who are severely immunocompromised to the extent they are under medical supervision. So Nigella was perfectly fine pouring the raw eggs over the dish when the pasta had cooled.
Vince really cut Nigella some slack on this one, lmao.

If every regional Italian dish has it's own flavor profile, tradition should be respected. Other ingredients could be fighting the profile achieved from hundreds of years of tasting.

@@vincenzosplate Thank you kindly. I'm reminded of "Fettuccini Alfredo" being just a bland addition of cream and eggs version of a simple home made pasta with just Butter and Pecorino Romano. The New World version seems to need more cheese and pepper to add flavor. Like watering down soup.

I like her. She's cool, but it's always awful when she's adding so much fat (especially butter) to her dishes. I'd prefer your simple recipes with olive oil.
Italian food is really simple and elegant way to make people happy. I found that less is more in terms of Italian cuisine.
Now thanks to Lucio and you - I'm eating only pizza margherita, because good pizza don't need any additional ingredients.
PS. I really don't understand why restaurants often offer ketchup or garlic sauce to their pizza. It's like they're feeling sorry about what they made and the only way is to eat this with ketchup or garlic sauce 🤷♂️
I fully agree with everything you said! Italian cuisine is made up of few ingredients... it takes very little to create a delicious recipe, just think of the Aglio e Olio pasta.

Yes and no. Everyday Italian cuisine is simple, right, but during holidays , festivities or sunday isn't 😂 there are tons and tons of not simple recipes.
A little important addition - Italian (and Spanish) food is about a few ingredients but top quality beautiful fresh ingredients. That is what makes the food beautiful and delicious. of course history and combinations of flavours that have been working for decades. But if you get tomatoes that taste like cotton pads (which if often the case here in the UK sadly) your pasta wont be as amazing unfortunately :) but totally agree to the main point
