Your channel has really changed my mind on Italian pasta. I always thought that Italian pasta required so much finesse and complicated because a lot of Italian restaurants sell themselves as this super high end expensive thing and wasn't easy to make. When i'm finding that actually most authentic Italian pasta is quick, simple, and easy. Americans put proteins (chicken/beef/shrimp) in pastas because they always need meat LOL.
There is a difference between American-Italian and original Italian restaurants. Those first ones you can find almost everywhere, and they don't represent Italian cuisine in proper way. Italian food is mostly easy and fast to do, with high quality ingredients (quality over quantity). There is nothing wrong to connect meat with pasta (you have pasta Ragu, pasta with Seafood...) but should be done in proper manner. That is why i like his YT channel, he is pointing out things that needs to be addressed, in tasteful way. Have a nice day.

@@jmoa5758 On the side, or even better after it, as a second dish :-) There is really a cultural taboo in Italy about chicken in Pasta or Pizza, difficult to explain honestly: you can have beef or pork (various ragù for example, or sauces done with sausages), even goat, wild boar, deer, sheep or hare (in particular in some regions), but chicken just feels wrong. Do not know why. Also consider that in Italy traditionally you eat primo (first dish, pasta or rice) and secondo (second dish, meat, fish or eggs) and contorno (a side dish of vegetables served with the secondo), most days. A simpler pasta all'alfredo followed by a chicken dish and some spinach would be the most typical meal in Italian hospitals :-)
For a lazy ass like me, I dont understand the effort of putting all of those ingredients together just to come up with *that Alfredo* ... Pasta (+ its water) + Butter + Cheese + some arm power! No need to complicate it.
I already knew Alfredo isn’t in Italy. I went to Italy one year and the only thing that was even similar to it was a cheese sauce ravioli. But everything there was amazing
My friend showed me this channel last week, and I have to say that this channel is amazing. It makes me laugh, and it's extremely educational. My interest in learning to cook Italian cuisine is definitely multiplied thanks to you, Vincenzo. Thank you for the content, I look forward to seeing more.
@Phantom Alpha I'm not a fan of Panda Express, I prefer my local Chinese-American restaurants. Each region in the US has its own version of these dishes as well. My favorite restaurant serves "New York Style" dishes. The closest thing we have to any authentic Chinese food is from an Asian grocery store that also has a little restaurant section.
Italian cuisine: Primo piatto: Pasta al burro e parmigiano mantecato Secondo piatto: petto di pollo in padella con erbe, cipolla e aglio. Contorno: funghi saltati in padella American “gourmet” cuisine: FETUCINI ALFREYDOW...
I understand that the people are continuing changing the recipe. America is not Italy, so is logic that someone decided to make his own version, with different and more ingredients, following his own tastes. The problem is that is not italian kitchen, which is the FIRST thing they say. You can make all the variations you want, but at least, please, do not pretend you are following another recipe. The disinformation is the real problem, here. And yes, maybe they called it Alfredo only because it is easy to search... Bellissimo video, Vincenzo.
The problem with you comment is that if she named her channel "American Kitchen" and did this same recipe, you would be here complaining that this is an Italian dish.
@@IcyDeath91 oh oh boy trust me, no Italian would affirm that stuff is Italian in any way... It Is American and we Are happy of having nothing to di with it 🙈
I have to disagree. Fettuccine Alfredo is really an American dish with Italian roots. Americans cook it in many ways. It is really our cuisine, not authentic Italian, but most people don’t know that. If you used tomato sauce instead, then it would not be Alfredo. But adding a little garlic or onion or pepper or herbs is probably okay, as long as you can still taste the cheese. Adding chicken to everything is just something we do in America. I don’t know why, but I think I will go fix myself some chicken fettuccine Alfredo tonight, because it is delicious.
@@scalywing1 I agree. Vincenzo also said that Alfredo pasta doesn't exist in Italy. Since pasta existed, i think any people can create their own dish for pasta. Not because its pasta dish, its from Italy. Although pasta originated from Italy, it doesnt mean we cannot create another dish using pasta.
I feel like the Americanized version of fettuccine alfredo just needs to be renamed, because even if it's not traditional at all it still tastes amazing
That is a ridiculous comparison. It is just a cultural difference. That doesn’t mean it is wrong. Apple pie is a sweet, dessert dish. It does not have any savory elements. Pasta with cheese is already savory, so adding chicken makes sense. If Italians don’t eat it, or even find it disgusting, then that is fine. Some cultures find pork to be disgusting, but lots of Italian dishes use pork.
@@scalywing1 Its not a cultural difference, but stupidity. If you want to make a certain dish, you cant change several main ingredients and call it the same. You are the example of a person that sticks squares into circles at the children shape test.
The funny thing is that when I don't have pasta I use kal-guksoo noodles to mix it with butter and goat cheese when I'm hungry and I need a quick fix. I'm offending both Italians and Koreans. 😂
Yes fair point. But as a Mexican how do your feel when Spanish say that you are doing their dishes wrong. Cause this is what this guy is saying.. that Americans cant be allowed to change recipes.
What do you expect to happen when you bring the dish and your culture to our country? I'd bet money the first people to bastardize your own dishes were your own people all to try to sell it to Americans to make money. America isn't Mexico or italy so we will cook whatever we want. We obviously have no problem eating.
if i ever made alfredo this way my grandfather would come out of his grave and slap me with the wooden spoon that used to hang on his wall. this is all the americanized way. even my girlfriend at one point made this for me and i said what is this? so i showed her how alfredo is done, she loved it much better and admitted it was way easier to cook, less then 5 min.
Filippo Cardinale that’s not entirely true, as a bechamel can be made without it, in the traditional French method, yes nutmeg is used, but it is not required or needed for a lot of dishes.
In France, we often eat pasta with butter and cheese as a kind of last resort when there's not much else in the fridge. I think it tastes fine and using butter instead of olive oil in pasta can indeed make it creamier. I find it to be quite a comforting food to eat when you're sad or hungover and just can't really be assed. It also gives me memories of being with my family in France. However I've never considered it anything special or called it "alfredo", though I have seen it served in restaurants simply calling it "pâtes au beurre" (often what you end up eating if you are vegetarian and you're in a small countryside town). All my english family find the idea of putting butter in pasta to be totally bizarre though, but nor do they put olive oil in pasta and instead that "rice bran oil" is the way to go because it "has no taste", so I don't really think they get pasta...

When I moved to New Zealand someone asked me to make them authentic Italian Pasta Alfredo and I didn't know what it was, I googled it, and the ingredients were cheese and butter and told them "I could make you Cacio e Pepe but I don't have the right cheese and I don't want to put butter in Cacio e Pepe" but they didn't know what Cacio e Pepe was and insisted on real Alfredo pasta, so I googled this crap Alfredo some more and yeah I had the same reaction as Chef. Why the hell did this thing become so popular. Matriciana, Pesto Genovese, even Carbonara is not as popular as this Alfredo thing. I will never understand this obsession with butter. In my family butter is used only for baking and besciamella.
This channel explains the difference between a Italians and Italian Americans. We take a LOT more liberties. Not as many as Papa John’s says we do, but we do XD
there is a difference between taking liberties on a dish and making it something completely different. You could add different variants of butter or like 1 or 2 ingredients. This is something totally different though.
John H Agreed, but chicken and garlic? I’m from South CT, just a couple trains from Brooklyn. It’s very common to incorporate a protein and an allium in fettuccine alfredo. Now granted, it’s usually called “Chicken Alfredo” but it’s just a variation, not an entirely different dish.
Wrong. What there is is Italians and Sicilians then you have the Italian/Sicilian Americans then there is the ones that because they have an Italian last name they think the know how to cook Italian. (Yes i left out the Sicilian when talking about Americans. Why because they do not know) How do I know that? I am not Italian. I am Sicilian. My Grandmother would kick me in the A%% if I ever said I was Italian.
I enjoy how you share as well the history and background to a dish! It's always interesting to learn about the initial ideas and reasons for certain foods especially in Italy where records and regional cuisines have been passed down for such a long time!

I have eaten "fettucini alfredo" in dozens of restaurants and homes. I'm finding out, only one time was I actually served the real thing and I thought it was odd because I'd never had it served that way in my life. America's "melting pot" in a nutshell.
Hello chef, I have been to Italy once and I got to taste a couple of the original dishes you have. I love how they are based on fresh and simple good quality ingredients. The rest of the world though, we like to complicate things too much. Respect from Greece.
It’s becoming like more of the American cuisine not the Italian cuisine I’d prefer people to call it Chicken creamy noodle instead of calling it Alfredo it would be a dish on it’s own
Italian-American cuisine is just different. It's pasta centric with a protein thrown in because it's cheap. It's very rare to find an Italian-American restaurant which will put as much effort into a separate protein dish that it does into its pasta.
Italians are extremely proud of their food. They have laws like Denominazione di Origine Protetta, and Indicazione Geografica Protetta specifically to retain culinary treasures. I can completely understand how it would be upsetting to see others disrespecting the culture.

@@vincenzosplate I think Italo-American food culture is now in the anger-teenager phase that Italy had in the '80s, with all the Panna Funghi e Piselli / Boscaiola terror that luckily went by without much of a lasting scar on Italian culture... I like to think they will get over it too :-)
Honestly, food is THE cultural medium through which culture gets transferred and adopted. It is completely normal for a recipe to change substantially when it reaches new shores according to local preferences and neccessities. I mean im chinese, where noodles were invented, and i have never heard of even one chinese complaining about italians appropriating our noodles and making completely different recipes with them. Its simply a different dishyet theyre still called noodles this noodles that. pasta is just the italian word for noodles. people need to at least get over food being cooked differently from what theyre used to. if its worse than what youre used to, then let them be, at least leave others the freedom to EAT whatever they want.
@Mahima Bhat i actually heard about this indo-chinese cuisine, and ie found it mighty interesting that even india would adopt chinese foods, since india is one of the 5 great cuisines itself. we chinese have a similar issue like the italians with americna chinese food, where most of it is invented by chinese immigrant sin america and is not authentic at all but we understand that back in the day these immigrants needed to make money and their onl option was to open a restaurant and since they were in a foreign country they had to adapt the recipe substantially. but successful dishes like chop suey or in this case chicken alfredo pasta need to be given credit where credits due. this recipe probably secured hundreds of households income for italian immigrants, not to mention that it probably tastes better than just pasta with butter and cheese.
Haha love these videos, I have seen many of the videos you react to and it is fun to see an italian showing how it is traditionally made! I think the recipes you react to look good but it is interesting to make it the italian way😊
When somebody says adding a twist to a recipe, I imagine adding one extra ingredient to give a special additional flavor to the original, maybe a spice, or just a tiny bit of chopped vegetable, or exchanging one cheese for another, but these dudes end up making a completely different thing by adding so much stuff, that as Vincenzo says, why even keep calling it Alfredo?

However, I have been struggling with having fun cooking for a while and it was by watching your video that I realized what it was. I forgot about simplicity, when you said "the chicken is good to be enjoyed as it is, no need to add anything else" I remembered that that is the crucial part in the kitchen, simple but tasty. I have been complicating stuff with no need, thank you for reminding me what is the focus. Best regards from Portugal

Love when you get the older Italians to taste and see how it gives them the dry boat lol....bravo sir You should be on tv
So for me pasta is like soups and salads, it's often a kitchen sink for me to use ingredients about to go bad. From watching his videos, and even getting to go to Italy last year, I finally stopped calling what I made Italian or calling it the dish it was similar too. If I only have American bacon, fake Parmesan, and some random things about to go bad, I don't call it Carbonara anymore. I pretty much call it Rainbow Pasta now a-days. Because I will take liberties with the ingredients based on my wife's and my tastes and what I have in the kitchen. Although, I appreciate his drive to stay authentic, I am a home cook, and being a GOOD home cook is about keeping within a budget and using up what is in the fridge and pantry without wasting food. Authenticity doesn't matter to me, not wasting that half a can of peas in the fridge is far more important, so I will throw it in the pasta dish I am making. Although for me, making due with what you have is authentic to your own cuisine. I love Japanese Yoshoku cuisine, Curry and Rice is not Indian, but dang is it tasty and good way to get rid of those carrots and potatoes and that pack of frozen meat. Spaghetti Napolitan is not Italian, but done right it is tasty and is a good way to get rid of that half pack of hot dogs and that sad looking bell pepper sitting in the bottom of the crisper drawer. That said, if I want to make a special meal, I will spend the money to get guanciale and real Pecorino Ramano and stick to the recipe for Carbonara.
Nicholas I totally agree with you! even in my house, for my family, I don't always and only cook authentic dishes such as carbonara, or other types of pasta. I also use everything in the fridge to get rid of it, with the only difference that, as you said, I don't give those dishes a name that doesn't belong to them. if I cook a plate of pasta with meat sauce like the Bolognese one and then add mushrooms and peas then I will call it in another way or I will not call it in any way.

A simpler pasta all'alfredo followed by a chicken dish and some spinach would be the most typical meal in Italian hospitals :-)
Arkay that doesn’t even sound good though 🤨
If we have Uncle Roger for fried rice, we have Uncle Vincenzo for Italian cuisine.
i can relate that about these two 🤣🤣
For a lazy ass like me, I dont understand the effort of putting all of those ingredients together just to come up with *that Alfredo* ... Pasta (+ its water) + Butter + Cheese + some arm power! No need to complicate it.
Who uncle Roger?????
I already knew Alfredo isn’t in Italy. I went to Italy one year and the only thing that was even similar to it was a cheese sauce ravioli. But everything there was amazing
But it is! There are two restaurants in Rome promoting it! I saw one.

I imagine this is how a native Chinese chef feels when they watch Americanized Chinese food videos.
Hai-yah
@Phantom Alpha That's true. The Chinese people who work in those don't even eat what they serve. Haha. They prepare their own home-cooked dishes.
@Phantom Alpha I'm not a fan of Panda Express, I prefer my local Chinese-American restaurants. Each region in the US has its own version of these dishes as well. My favorite restaurant serves "New York Style" dishes. The closest thing we have to any authentic Chinese food is from an Asian grocery store that also has a little restaurant section.
people always say this, but it was Chinese immigrants who invented these dishes or modified them using local ingredients.
@@satchmodog2 Yes, but they were modified specifically to cater to the Americans' palates.

FETUCINI ALFREYDOW...
God forbid food is simple
be grateful that no one in those videos cut the pasta in half before cooking it. Tons of people do that.
Thank you for your comment!
My American wife was shocked upon learning there is no cream in fettuccine alfredo.

Hahahaahha!!! yeah whatever it is put chicken breasts on it.

You should have used pork!

What do you expect to happen when you bring the dish and your culture to our country?

I'm Italian American, living in Brooklyn, never in my entire god damn life have I heard of someone making alfredo with MILK. Never.

Italian-American cuisine is just different. It's pasta centric with a protein thrown in because it's cheap. It's very rare to find an Italian-American restaurant which will put as much effort into a separate protein dish that it does into its pasta.
