I'm from South Africa n this is the recipe I use for years I sold them at schools in 1988 n my kids were young at that time n they went door to door selling it for only R2.00 brought lots of memories I started selling them again in 2023 using the same recipes boy what a good seller n the toffee is glossy crunchy n tasty but the only thing you have to eat on the same day it doesn't last more than a day the toffee drips off but thank you guys I love you n I do it exactly like yours

Made these tonight to sell at a market tomorrow. They turned out beautiful and glossy. Mine have some bubbles as did not have the granny smith. Will try the granny smith next time. The toffee tasted so nice. Was so easy to make thank you for the recipe

Your apples came out with bubbles because you need to remember to remove the wax (by putting them in hot water for 10 sec and dry completely) Then let them sit on your table or counter for 24 to 48 hours. After the hours, whipe with a wet cloth and then again with a dry cloth. The holes is from wax or the sap from the apples.😊

Wanted to let you know how mine turned out. Not too bad for a first timer. Live in the US and darn hard to find proper candy apple where I live, especially the type I’ve been looking for as long as I can remember as a kid. Candy apples my “cryptonite”, ever since a kid growing up in Rustenburg, South Africa and come “show” time mid June, you could count on me getting my “toffie appels”.
So, they turned out fine, as per your mom’s recipe. It’s got that nice hard yet brittle coating when you bite into them. Perfect as you don’t break your teeth biting into it :-) As you explained they harden pretty quick and after a quick taste test, they went straight into their little wrappers, “celotape” and all.
One thing to note: I almost ruined my batch. The time difference without a themometer is crucial. I actually bought one but didn’t use it. I wanted to try exactly as you did it. At 5 minutes did the cold water drop test- still a little bit soft and squishy. Here’s the kicker: at 9 minutes, not 10 for me at least, I did another quick test (and in the process spilled syrup in my index finger...man that’s hot...I know understand your heed of advice and will be more careful next time). I spilled it because I smelled my syrup burning, or got a whiff of it. So between minute 9 and 9:30, the syrup went a much darker or deeper colour and I had to lift it off the plate. I knew it was ready, but by minute 10 I had to rush it a bit in fear of my syrup burning. I was able to dip and cover at least 8 apples and didn’t want to do more since I were afraid my syrup burnt.
However, they turned out perfect except not as red as I had hoped (maybe that’s because it was burnt a little). They have a slight brown tint but tasted fine and a beautiful “glassy” hard outer shell. Maybe next time I’ll turn my plate to low a little bit earlier since it seems those last few seconds make all the difference. Who knew?
Oh, and I did granny smith apples. They made a hissing sound when resting as some of the juicyness was bubbling around the stalk/dowel while cooling. I guess way too hot right?
Anyway, will give this another shot again since I have all the ingredients now.
Oh, and my non stick pan worked like a charm. No real mess really afterwards. Boiling with water again did the trick.

Well done 👏👏👏 Thank you so much for the feedback. My mom is a toffee apple whisperer, she can tell by the sound of the pop the bubbles makes when the syrup is ready, the water testing is just a confirmation. It is important to note the time because every stove top is different. I am sure your next attempt will be perfect. It's great to hear from a South African living abroad. If you are on instagram, share a picture of your toffee apples and tag sweetphatz. Lekker dag vir jou

Hey!! They look great...reminds me of when I was a kid! ; ) I noticed your mom didn't use any corn syrup in her recipe. About every other recipe I have seen uses it, is there a reason why? Does it make the sugar more hard and crisp with out it? Not many use the pinch of COT or the vinegar either. My grandmother use to make them all the time but passed away and I never got her recipe. I really like the "old school" recipes like your mom's...these recipes come from years of experience!! ; ) Seems like the apples hardened beautifully and was ready to package up quickly. Thanks for the help with the questions...Hugs from Texas!! : )

If you use organic apples do they have wax on them? In other videos they dip the apples in boiling water with apple cider vinegar for 15 seconds. I guess that's not needed?

You could add a little baking soda into room temperature water and leave the apples in there for 5 minutes. Rinse again and wipe with a clean cloth.

Hi I love making toffee apples tell me what size cellophane did your mom use for the toffee apples

    • @PhatzKitchen

The size of the cellophane bag depends on the size of your apples. If you buy a roll of cellophane you can cut squares according to the size of your 🍎

This is an old recipe hence the cream of tartar. We don't have a problem finding it. It's used in meringues as well.

Morning dear. I know this is an old video, but I'm selling toffee apples tomorrow. Do your mom only wipe the apples of? So there's no need to wash apples in hot boiling water? Like other videos shows? Give advice pls

Thank you and your mom for this recipe. Can I make this a day in advance? Or is the night before better? It is for my sons’s School bazaar.

A day before is perfect. Remember not to keep in the fridge. Clean the apples and allow them to dry nicely. Stick the sticks in a couple hours before dipping. Clean any juice that might have run out around the stick. The less moisture, the less inclined the toffee is to become sticky. All the best and enjoy. Thank you for the feedback.
