When water freezes, it expands. When you freeze fruit that have high water content the water expands breaking the walls of the cells of the fruit, therefore the fruit completely loses its structure when thawed out again. So using frozen tomatoes instead of fresh ones, means you’ve basically already got a tomato mush. Ya just gotta heat it up and its becomes a sauce.

fun fact: water expands when it’s frozen. (that’s why the bottom of your standard water bottles bow outward when it’s frozen) The reason veggies and fruits are more mushy/juicy is because when the water in each cell expands upon freezing, it splits open the cell wall and the liquid contents aren’t held back by the plant’s wall or membrane anymore, so it looks like it’s “MORE” juicy than before. Not great when you want to preserve texture/crunch to your foods, excellent when you want to make juice/smoothies/purées

No because when I tried freezing tomatoes and as soon as I took them out and they started to defrost the skin literally peeled off so easily without me doing anything to it so yeah I guess when frozen tomatoes defrost the skin peels off automatically and the tomatoes were like normal I was afraid at first that freezing them might affect the taste but it absolutely didn't and they lasted so much longer. Long story short I'll always be continuing to freeze tomatoes from now on :)
She did kind of a backward blanche. Instead of going from boiling water to rice water, she poured the boiling water over the frozen tomatoes. Seems the extreme change in temps usually splits the skin and makes it easy to remove.
We eat tomato soup with eggs in my country too (Romania), but we cook it differently. We put chopped onion and some oil in a pot, cook it for a bit, then add some flour and paprika. The we add equal parts of water and homemade tomato juice. We bring to a boil, add the eggs (some we leave to be cooked whole, some drizzled lile you do), then add salt and black pepper and some parsley and it's done. It's one if the easiest Romanian soups and the first one I learned how to make.
Finally a recipe I can make. Everytime i search for a snack recipe, there is always cheese and i don't like to add cheese in everything. But this tomato soup looks delicious and easy. I'll definitely try it!!
She will slober in the soup for others. If it's a habit it will caryover while cooking for others. I don't cook like that. I tast and the spoon goes to wash, not back in the pot.

Made this for dinner! Didn’t have some of the ingredients towards the end, so it didn’t taste the same without the sesame oil and green peppers, but it was very good 😊
