I had California Closets put a set of drawers and shelves, top and bottom rods, and a couple of pull-out scarf hangers, in my standard closet with sliding doors and I don’t even need a dresser. It’s great.

I'm giving this a thumbs up simply because I love this woman's calming ,stabilizing voice! She immediately helped me relax and feel better! I don't care how the video turns out ( just kidding.) I just love her voice!
Several times, particularly in a girl's bedroom, I have removed the doors altogether and hung a pair of beautiful floor length curtains (sometimes matching the fabric of the window curtains) with bowtie closures. I mount the rod on the outside of the closet above the closet header. Sometimes I reframe the opening with a more beautiful molding, particularly if I have re-skirted the entire room. This eliminates the bulkiness (and squeaks) of the bi-folds (when folded back, which usually is their permanent state) and softens the room. It is a feminine look, but I could do the same in a boy's room making the design more playful.

I’ve contemplated removing my return walls to create a built-in look ( think ikea wardrobes, but built in). Besides the obvious mess and expense of construction, am I overlooking any design issues that will be problematic?
Absolutely! The issue then becomes, what to attach doors to? The doors need somewhere to land or secure to. Options without doors work as well. Wardrobes give you the privacy of doors with full access inside or curtains across the entire space add softness, sound insulation and color! So, you have choices!
The right hand door looks odd. The top shows it inside the bedroom, but the bottom is inside the closet. Bi-fold doors fold into the room, not into the closet.

The doors will need somewhere to attach hinges to. Other than that, you gain the 6” thickness of the wall for more storage!

Not sure what you're asking. You don't have to worry about clearances. As far as the stuff, divide and conquer!
