BETH ITALIAN SAUSAGE POTATO BAKE RECIPE
Serves 8
Ingredients:
1 tbsp (15 ml) olive oil
4 links sweet Italian sausage, casings removed
1 tsp (5 ml) Italian Seasoning
3 1/2 pounds (1 1/2 Kilos) of russet potatoes
4 tbsp (60 g) unsalted butter
1 cup (240 ml) of half & half or milk
2 tsp (10 ml) salt
1 ½ cup (360 ml) of Mozzarella cheese
freshly cracked pepper and paprika to taste
1 tbsp (15 ml) Fresh Italian parsley, roughly chopped
METHOD:
Drizzle a large sauté pan with olive oil.
Remove sausage from casings, place in pan and add 1 tsp Italian Seasoning.
Cook sausage, breaking into chunks with a wooden spoon, until browned on all sides. Remove with a slotted spoon and drain on plate lined with paper towels. Allow to cool.
Meanwhile, wash and peel potatoes. Cut potatoes in half and then quarters. Place in a pot of cold water to boil until fork tender. Drain from water and transfer into a bowl of a standing mixer (or a bowl and hand mixer works too) add butter and beat well until melted, then add milk and combine well, then season with salt.
Transfer mashed potatoes to a large mixing bowl, stir in sausage and ½ cup of cheese. Transfer to a casserole dish, and top with remaining 1 cup of cheese. Top with salt, pepper and paprika to taste.
Bake at 375F (190C) until potatoes are warmed through (about 20 minutes) Then keeping casserole dish on middle rack of oven, turn on the broiler for 1-2 mins until cheese is golden brown and bubbling. Remove and garnish with freshly chopped parsley
NOTE: If making these a day ahead, cover and refrigerate. Then heat covered in a 425F (200C) degree oven, covered for 20 mins until potatoes are warmed through, since they are cold they will need a hotter oven and the foil will help concentrate the heat, then remove foil and allow cheese to brown and bubble (about 10 mins more)
MOM'S CANDIED YAM CASSEROLE WITH MARSHMALLOWS
Serves 8
Ingredients:
4 cans candied yams
3 tbsp butter
1⁄2 cup heavy cream
1 tsp of nutmeg
1⁄2 tsp salt
2 1⁄2 cups of marshmallows
3⁄4 cup of raw pecans, chopped
Method:
Drain yams, leaving all but about 2 tbsp in each can. Place in a large sauce pan, on a low flame.
Add butter, and mix with a hand mixer until smooth and creamy. Add cream, nutmeg and salt.
Transfer to a casserole dish. Cover and refrigerate until the party.
The day of the party. Place in a 350 degree oven for 15 mins. Remove cover, top with marshmallows and pecans and continue baking for 5-10 minutes until marshmallows are golden brown and melted.

I enjoy how real the process is ...."I don't think I can put one more thing on this table.." ..next shot "I did add one more thing to this table"....this is probably 99% of all of planning a big dinner. Wonderful tips. The favorite for me is the folder of recipes. So one is not re-inventing the wheel and everyone's favorite appears plus a new thing to try. Thank you for the inspiration!

Mom had 11 children… now add all the new husbands, wives and grandchildren we’re talking over 30 people for thanksgiving. She kept it super simple… turkey, dressing, mash potatoes, gravy, mixed veggie, rolls and pie … that’s it!! Delicious, simple and Mom made. 💕
Beth, love when you show us all the nitty gritty in prepping for hosting a big holiday dinner. You’re a great culinary adventurer and glad you bring us along. Also, enjoy the fact that you can plan an Al fresco Thanksgiving dinner while I’m looking out my windows with fresh 8” of snow. We live near Tahoe and Sierras received 2nd snowfall in a weeks time.

When you showed the white flat pumpkins... the idea of pinning down some flowers and foliage on top of them came to mind. I imagined them in the middle of the table with lanterns or glowing candles, whole fruit, and dried corn, and I don't know what else but, you got my imagination going! Lol! You always have such good ideas when you're planning for a party! I love having the boxes for people to take home. I've used so many Rubbermaid containers that people never return and that gets expensive. Lol. Thanks for all the great ideas and helpful tips. Have a great week.

I love the dried corn on the buffet table. You could use some jute to cover the rubber bands or jute ribbon from the craft store. You will still have the natural look for fall. Love your videos.
I put each of my recipes in plastic page covers and then into a three ring binder. Protects the recipes (I’m a messy cook!) and you can remove them from your binder as needed.
Seeing your messy drawer gave me a giggle as you really are one of us 😂

Roaster oven is the best gift ever. Your turkey that takes up all the time and all the space just cooks away on the countertop so your oven stays available for everything else. my family loves it.

We know Thanksgiving in US is in November but here in Canada we celebrate it in October. Love your place Beth.
As a Brit living in Canada, I’m with your husband Beth when it comes to the sweet/savoury combo. Not my thing at all! The sweetest combo I knew growing up was lamb with mint sauce!

Awesome tips. As for the buffet, would it make more sense to just have one each of the sausage potatoes and yam dishes out, and keep the second set on "warm" in the oven? Saves on room and serving utensils. Food for thought!

Since this format is different from the usual recipe videos, we now get to see more of your surrounding (the pumpkin farm, your gardens) and this just gives a lovely feeling. The Harvest Salad is my absolute favorite and it’s been apart of my Thanksgivings every year since you put the recipe out. Also I’ve modified it to be used throughout the year as well for regular dinners, Although nothing beats the original.

I love it Beth, your Plan and have a backup plan in case of rain, look to the weather 2 days before app,
also plan that you will set up 2 tables, in the living room? The area that looks out to the patio with the french doors, and with the patio cover then some things could be under that area if it isn't too rainy outside. what a nice view for your guests...the tables could be side by side, one on the left and on one the right and it should work with your space. keep all the food on your dining table and move extra furniture to the garage for the party. can't wait to see part 2, and the main event. How many times did you say corn in the is this video? lol😆,

Wow! What a gorgeous garden and in October! There are no leaves on the trees here now, and I've got my wood stove going to keep my house warm. L.A. seems a world away, but how lovely to be able to have Thanksgiving outside in November!

Right?! Last-Minute is just a recipe for disaster ha! Why add more stress! Ha! Yes love the idea of the raffia :)
You could also arrange the corn fanned out in the plate then place the pomegranates/pears/apples in the centre. Looking forward to next week's video!

What a great and helpful video especially for people who haven't hosted a lot or are looking for a way to plan ahead and have a more relaxing, fun day. I've been hosting for 40 years and do all these exact same things ahead of time (in addition to polishing silver) and just thinking about (and writing down) every thing! I have to remember each year to buy candles, buy paper guest towels for the bathroom, count my wine glasses... the list goes on~ but if you start early its fun and not stressful! Thanks for the helpful video, Happy Thanksgiving!

Awesome! I’m going to use your folder idea! I’m Jewish, so besides Thanksgiving, Chanukah is coming up and this is a great way for me to sort favorites. I keep a section in my financial planner for what I spent and what supplies I need next time but I had not figured the recipes. I have a pretty gold file box and some pretty hanging file folders in my Amazon cart and that should cover the years worth of holidays. So I’ll have to check each holiday what Beth has in her folder!
Love seeing how you feed and entertain all these people at home. Makes me think maybe I can do it too! Do your kids help much? And how do you get all the dishes done afterwards? Must be a pretty late night.

The legal pad is so smart. I am working on planning my son’s baptism in December and I think I am going to use your method on that. I haven’t ever planned anything formal like the dinner afterwards.

I also like to have seperate areas for drinks and desserts because it creates less of a bottle neck and I also find that it almost forces people to maybe talk to another person or peoples instead of just hanging out in one area with the same people.

Your folder reminds me so much of my mum. I used to love sifting through her records of Bonfire Night (I’m from the UK). We’d have a massive party every year for about 80-100 people. My mum used to cook everything. We have so many stapled sheets of the menu, guest list, drinks list etc. it’s like going back in time!!
Also for the corn - could you take off the rubber band and re-tie it with twine? That could look nice xxx

@@EntertainingWithBeth oh of course! It’s so much fun! It’s basically a night where we let off fireworks, have some roasted chestnuts, hot chocolate etc. Most local parks or cricket clubs will hold displays for the community and you can often get things like candy floss (I think in America it’s cotton candy) and glow sticks and light up toys for the kids! I don’t know about everyone else but my family likes to eat jacket potatoes and chilli con carne. Though when we did massive parties my mum would make our traditional food (I’m British but my ethnicity is Pakistani).
As for the history - it might sound a little strange but in 1605 a man named Guy Fawkes (with a gang) plotted to blow up the Houses of Parliament and the King, with gunpowder. I believe he was caught at the last moment, so his plot failed, and the group were executed. So ever since we have been celebrating his failure and the survival of the king by letting off fireworks and lighting bonfires!
You must come to the UK one year to experience it, though it seems a little bit similar to the 4th July? With the fireworks and friends and family getting together!
