Sounds good, but don't feel like you have to replace the chicken. Vegan curry can actually be made just by using the same ingredients she used, except without chicken broth and meat. Many restaurants offer their curry with just carrots, onions, and potatoes, and it tastes just as good. If I were vegan, I probably wouldn't put mushrooms or tofu, just because they secrete a lot of water, and I don't think mushrooms go well with curry in terms of flavour.
Maybe if you brown the mushrooms first, it will help them get rid of excess water and stay more firm in the curry. I once added zucchini because I had one leftover and I thought it went quite well with the curry (but add it closer to the end , 5-10 mins, as it gets incredibly soft if overcooked and will just disappear 😄!)
I made this the other day and it turned out great! I ended up tweaking it a bit, which I usually would never do for a recipe I’ve never made before, but the end result was great!
i made this tonite with chicken breast tenders instead of thighs and the taste was exquisite.. (i added yellow bell pepper to mine and 2 more cloves garlic..) so good!! thank you 😋❤️

I did this yesterday and it was soooo amazingly delicious! I used Envy apple for extra sweetness & added few buttons of dark chocolate. I used Kokumaro curry blocks (it will be quite balanced curry flavor & i like sweet curry base). It is the first time i did japanese curry and turned out to be delicious (than some restaurants 🤣) thank you so much for your recipe. It will be our home recipe definitely!

We stopped filming the intro and ending (need an additional one day to film) because most people skip those segments as they had really low views (so sad!). We instead use the time to make another video, which is why we have been able to produce a video weekly now. We just had to make a decision as we felt we're not using our time well. 🤗
Hi Claire! That happens sometimes. My trick is to use water/broth just barely covering ingredients and simmer. While cooking with the lid on, vegetables and meat will release more moisture. After simmering, you decide if you want more broth or not. See the amount of liquid I use for simmering. It was barely covering but once simmered, liquid increased right? It's a lot easier to add more liquid than taken away. You can simmer with the lid open, if your ingredients are completely submerged with liquid. We never add flour or thickening ingredients to thicken after curry is made. Either we control the liquid amount from the beginning or add more curry roux (but you need extra in pantry all the time). It's a lot easier to dilute and thin out the curry than dealing with thin curry. Hope this helps!
ATTENTION FOR THOSE THAT USE THE PREMADE GOLDEN CURRY ROUX INSTEAD OF HOMEMADE ROUX: I followed this recipe blindly using the premade Golden Curry roux and it was too salty. It was my own fault but the author should have mentioned to other inexperienced cooks that if they’re using curry roux from the box, they should only use water instead of chicken broth and follow the instructions on the box closely, or else it will get extremely salty and inedible. Other than that, this recipe was really good and I finally successfully made it on my 3rd attempt 😅.

What do you change to add the pumpkin in? Any extra spices? Pumpkin is bound to change the flavor. Do you blend the pumpkin or slice it?

The Apple and honey is quite surprising to me. But then again japanese curry is known to be a bit sweeter than others.
