- 2 hour No knead cinnamon raisin bread
Ingredients
13 Oz very warm water
13oz warm water
1 1/2 teaspoon instant yeast
1 1/2 teaspoon salt
1/4 cup brown sugar
1 3/4 teaspoon cinnamon
3 1/2 cupsbread flour
1 cup Raisins
In medium Bowl combined warm water,
1/4 teaspoon of the brown sugar
and yeast
Stir and combine to dissolve yeast and brown sugar. Set aside for 5 to 10 minutes until the yeast has begin to Bubble.
In a large bowl combine the rest of dry ingredients, stir together to incorporate well.
Stir in with spatula or dough whisk until well combined. Form into a round ball and cover. Saran Wrap, Pressand seal or lid will work.
Set aside in warm location for one and a half to two hours.
About 40 minutes before bread is ready to go into oven turn your oven on to 400° and place Dutch oven with lid on and let Dutch oven warm up with oven approximately 40 minutes.
While oven is warming remove dough ball from bowl and put on parchment paper dusted with flour. Punch down to remove air and reform into a ball. Let rise 1/2 hour more.
After rise is finished transfer dough ball to hot Dutch oven and cook for 40 minutes.
After 40 minutes depending on how you like your crust remove lid and let Brown an additional 5 to 10 minutes for crunchier crust.
Remove from Dutch oven and let sit on rack for 40 to 45 minutes before cutting. Enjoy

Honestly I just put it in a ziplock bag for as long as it's around. But to tell you the truth it doesn't last more than a day or two before it's all gone.

I am going to make this today. Would it hinder the dough to add in about a quarter more cup of brown sugar and a smidge of cinnamon in the last shaping step to add a swirl of sweetness?
You know that's a great addition I would be willing to try making this again with those additions. If you do do it go ahead and let me know how it turns out but I think it probably would be fine.

I am dealing with a non threatening health issue and haven’t been able to get to it. I am blessed with a devoted husband that is able to work from home when needed and is watching my every move. 🤣 Hopefully he’ll return to work soon! I did watch another video and the gentleman did use brown sugar after one of his proofs, so I’m thinking that we’re golden, I like your methods better, so that’s what we’re going with! Was that 1 3/4 tsp of cinnamon or 1 3/4 Tablespoons of cinnamon. I didn’t hear you say bread flour, but reading your bag backwards, you did use Red Mill Artisan Bread Flour - correct?

What temperature is it on?

Don't mean to pry, but just how far off the grid are you. Do you ever show photos of your home and other buildings....I am just amazed. Anyway, loved the video, like your attitude and tried the bread...yum
We are solar dependent with generator backup. We do have starlink for internet so we can watch TV and stream. We run on propane for cooking and backup Heating. We also have a wood stove. If you go back to the beginning of when we posted videos there's a tour of our place and you are also able to see some of what we have planned in the future and what out buildings we have now.

Right now we are just weekenders and are up to relax. We will be moving up full time this year finally. I am hoping to work from home so we need fast internet service. I'm hoping to be able to be to take care of the animals we raise and gardens we grow while working from home.
will a 3 qt dutch oven accommodate this recipe?
I used a 4 quart when I baked this but had extra room. It should work.
Can you use bread flour and get the same results?
Yes I have used both and had great results with them
Can you tell me more about soaking the raisins?
Yes all I did was soak them in hot water For about an hour To get them nice and plump And then drain them and added them
