There is also a shortcut in Yoshi's circuit where if you pass through the waterfall, lakitu will bring you to the other side! You can also change speed or use a mushroom if you dont want your coins to be stolen by lakitu :)
The one in DK you can go down a few steps and go out of bounds there on the right side I can see a ramp maybe if you had a mushroom I don’t as I am doing this maybe you can get up on top of the rock
In toad harbor of non dlc you can find a blocked out area and a train can go past it and the door will open but Lakitu will pick you up if you go there

I found one on animal crossing. On the rigth side of the 2 ramps there is a rock go to the rock and try to go as far as possible and you’l get ro the other side if you go too far you’l be counted oob.

On 3DS DK Jungle, if you do a bike glitch you can get past the stairs and see most of the stage from an interesting view
