I feel like the reason big blue and mute city have those out of bounds coins is because of the power panel things. They just increase your coin count, so I have a feeling those strange out of bounds coins might be part of that system
It may be that the out of bounds coin is set to instantly respawn. As you drive on the power panels you "collect" that coin and it instantly respawns back again. Probably done that way to save a lot of coding thats used on 2 courses.
I’m pretty sure it’s just there because they put vital code required for the game to run into the coin object, since in base Mario kart 8 every map had coins they didn’t have to worry about what would happen without them. Games commonly do this kind of thing, for example in the first paper Mario game Mario had important code for the game to run, so every in engine cutscene has Mario somewhere below the map

The coin remaining on Rainbow Road is likely an oversight as it's so far out of the way, in the very corner of the sky. The coins on Big Blue may also be leftover dev objects as the course was likely built the same way, floating in space without any environment to reference, and forgotten in the corner. Having three of them is because of how huge the long course maps are, essentially being three smaller course stitched together. But they could also be used to have the charge panels function using the coin as a function while the panels are used as a "dummy". They could also be used as something needed for the game to function as you said, you wouldn't be able to know without cracking the game and seeing how they function and what each is tied to. This is all speculation based off my limited knowledge of building 3D environments, but it's fun to try and figure out why these exist.

I know there's a glitch in mariokart 8 deluxe called motion glider that allows you to achieve a much higher horizontal speed on gliders. Maybe it's possible to utilize it to collect more coins on the gliders by moving horizontally through them?
I think your videos would be even better if you added a bit of Ceave-style narrative, where you announce that there are X impossible coins… but you found a way to collect them at the last minute.

Sometimes developers leave things out of bounds as part of the process in designing the world, or by accident in the first place. Like in Breath of the Wild, there is a random One-Hit Obliterator that falls out of the sky at a certain spot.
The one thing I woud have appreciated more was having a counter of how many impossible coins there were, whichw ould help during the lightning round and such

And sometimes you just skipped so fast through stages or abruptly went to the next one, that I didn't really catch if those were now possible or not. Then the shortcut on one of the tour maps you talked about that you never knew, I hoped you would show it, because I also have never seen it, but you didn't show a lot about it. And there were so many coins there, I don't even know if you collected them or not because it went down so fast. Otherwise good video they keep getting better, just keep on improving
You probably already thought of this, but in case you didn't, was there any way that, with the coins in mid-air, you could glide into the death zone in order to send yourself back to before the glider, then come back for the rest of the coins?
For MK Stadium,what if you leave the coins as close to each other as possible,then in the last lap you motion glide to get a bunch of diagonal speed,thus collecting them both in a single swoop?
Maybe another reason for the coins existance in those F-Zero levels is for the panels to function? Like that when you get over it, that it effectively copies a coin pickup... Sounds stupid, I know, but you would be surprised what stupid ways devs do to make something work...
Actually, the only reason it’s there is because without a standard coin or standard item box object in a course, the game will not load. Moving item boxes and those coin panels don’t count so they placed one out of bounds to get around it
