Invert sugar syrup:75g

oil: 30g
lye water: 10g 2 teaspoons
(or 1/4 teaspoon of dietary alkali/ Na2CO3 dissolved in 2 teaspoons of water)
salt: 1g 1/8 teaspoon
Fillings
12 salted duck eggs
lotus seed paste 1 package 450g
Oven temperatures:
preheat oven to 400°F/205°C, bake for 5 minutes
brush egg wash
325°F/165°C bake for 5 minutes
brush egg wash again
325°F/165°C bake for 5-10 minutes

Helen Mackay they’re delicious! They’re sweet and chewy. Other popular fillings are red bean (a desert bean) and sweet potato. Every time I go to the Chinese market, I pick one up as a special treat.

@@jojopemb2218 You are right! it's sweet and has a little bit of a nutty taste. It's also very soft and thick, but not nearly as thick and chewy as caramel is. Definitely is less sweet too. It's not really my taste, but a lot of people like it!

二胡背景音乐配得太妙了,此处二胡曲折委婉的音色配合小高姐娴熟的传统月饼制作手法带来的感觉非常的丰富,令我想到了李安的电影 饮食男女里面的烹饪镜头。今天的片子拍出了新高度。小高姐,佩服!
小高姐真的好厲害,舉凡中式西式,甚麼都會做,甚麼都難不倒她.
回油重點在於上下倒轉室溫放一晚 : 蓮蓉加熱後釋出油份, 再由餅皮吸收, 餅皮就有綿綿的感覺, 放冰箱會妨礙油份吸收, 上下倒轉是讓有塗蛋黃的餅面吸收足夠油份(因有一層蛋黃做膜, 可慢慢吸油, 不倒轉可能油會走出餅皮) , 餅面光亮會很好看。PS蓮蓉由薯蓉, 蓮子蓉, 糖, 加油黏合
in chinese class evveryone got their own mini mooncake but the inside was red bean and it was soooo good!
I think it depends on what part of china your from. that determines the filling in a moon cake.
@@mistiking8382 It might...but my family is from Beijing and we have all of the different fillings. We get red bean, green mung bean, and of course the egg yolk.

My Mother’s English is not that good so she asked me to help her about business. I met with a really kind Chinese lady that day. We were supposed to talk about work but she showed me pictures and told me about different places of China. Learning about China from a Chinese person was amazing. We only talked about work for like 10 minutes lol. I really miss her and I want ed to meet her again after a few months because I really wanted to see her little daughter, she is ADORABLE.Unfortunately,I later learned that she got married and moved to Canada. Hope she is happy there.

周六尝试了,方子太棒了!赶紧来汇报😊跟着小高姐熬的转换糖浆,一次成功。采用了小高姐的两个视频方子,包括本视频的饼皮方子和之前做过的奶香白豆沙月饼的馅儿。分别在原方子基础上稍作调整:饼皮中多加1Tbs的奶粉和5克油(面粉吸水性强)。馅料中也多加了1Tbs奶粉。皮18克,馅料35克。皮馅之比34%:66%,共包了15个。刚出炉颜色一般般,次日回油后太惊艳了👍👍👍室温第五天依然新鲜酥软如初,爱死它了!想做传统广式,饼皮方子一定锁死小高姐的😊🌹🌹🌹

The technique and the care, and also, the ingredients, they're so uncommon (to me) and precious! Moon cakes look stunning (and probably taste amazing too - Look at how thin that crust is, it looks like it has a nice texture too), I wish we had more access to these different cultures in my country.

用广东音乐《平湖秋月》作背景音乐就完美了!我是生活在温哥华的广州人。
第二年用小高姐的广式月饼配方做月饼了😍 因为量大,蛋黄我用烤的。转化糖浆我跟着做也很成功。包的月饼皮很薄。我会在莲蓉里面加入瓜子仁,会更好吃😍
這個月餅教學收藏了幾個月, 終於等到中秋,可以跟高小姐學做月餅😋, 小試牛刀做了三個,脫模總是不完整,有待改善,會再嘗試, 之前做過高小姐教的麵食, 非常成功,非常期待高小姐 新片😍😋

Although I don’t make mooncakes I really appreciate the method and process of making it. It’s a beautiful process and it’s probably a significant aspect of Chinese festivals and religion. Great vibes in the video ☺️💖 I love how each religion around the world celebrate the same thing in their own way, in this case it’s the moon. It’s shows both our diversity and uniformity

I went to a food pantry one time and they had 100's of these little Moon cakes. Of course at the time I had never seen one and I had no idea what they were. I thought they were so pretty! I So I bite into one and it has an egg yolk in it!! My western palate was ! Anyway the whole thing took some getting used to. I looked them up on the internet and found out all about them. Now every year at that one time of year I am yearning for Moon cake!!

For those unfamiliar with food-grade lye water, you've probably already eaten it in ramen noodles. It's fine in food, just don't drink directly from the bottle. The same caution goes for vinegar. :-)

试用了这个配方,面团很干,成型很不容易,不得不增加面皮/馅料的比例。烘培易开裂,我都等不到回油了。

You know in Chinese there's a term called 'kungfu culinary' (功夫菜). Mooncakes is definitely one of these. I know now why they are so expensive, to make or to buy!
