How To Make A Banana Oatmeal Pancake/Dessert

  • I USED A CAST IRON SKILLET. IF YOU WANT YOUR PANCAKE TO BE MORE BROWN, COOK IT FOR AN ADDITIONAL FEW MINUTES.
    3 bananas (divided)
    1/4 cup rolled oats
    2 eggs
    1/4 tsp cinnamon
    1/4 tsp vanilla
    1 tbsp salted butter
    Honey or Maple Syrup.
    Use a 9" skillet with a lid. Put the flame on medium/low. Let it heat up. Now slice 2 of your bananas. Use a food processor to make your oat flour. Then add 1 banana, eggs, cinnamon, and vanilla. Blend together. Add the butter to your hot skillet. Coat the bottom with banana slices. Pour liquid on top of bananas, cover and cook for 10 minutes. Flip onto a plate. Then transfer back into the hot skillet. RAISE THE FLAME TO THE MEDIUM HEAT. Then cover and cook for an additional 5 minutes. Top with honey or maple syrup. Serve and Enjoy!

    ** I was conservative with the flame. The first time I made this pancake, I cooked it ten minutes on each side, on a medium flame. It started to burn. Some pans are thicker than others. My cast iron skillet retains the heat. As described in the video, it is completely cooked. **
    **You can simply stir all of the ingredients together without using the food processor. It will still work.**
