之前做过酥软版的葱油饼,现在一起来做“酥脆葱油饼”,每一口酥脆掉渣,满满葱香味。采用了新鲜青葱来制作,面团采用了简单折叠法开酥来增加层次感,油酥部分也用了炸过葱的热油来增添香味。这食谱是免烤食谱,每家每户都可以做来吃。新鲜煎好的葱油饼,满屋的葱香味。外皮颜色黄金,切开来酥脆掉渣,内部层次分明的酥皮展现出来,加上满满依然保持翠绿的青葱,葱咸香味,口感口味十足。
收藏方式:煎好温吃最佳。放凉收密封容器,室温2天。要保存更长,做好葱油面团生胚直接包好冷冻在冰库那里,吃前新鲜煎即可。
Previously made flaky fluffy Scallion Pancakes, now let’s make “Crispy Scallion Pancakes/Spring Onion Pancakes”, each bite crispy till crumbs drop, full of scallion flavors. Fresh Scallions are used in this recipe, the dough used easy folding lamination method to increase layering, and the oil dough part is also made of hot oil that has fried/infused scallion to add aroma. This is no-bake recipe that every household can make and eat. Freshly fried scallion pancakes, full of scallion fragrance. The crust is golden in color, once cut, the distinct layers of crispiness reveal through, plus full of scallion that still remain green, scallion salty fragrance, full of texture and flavor.
Storage Method: Best eaten after baked. Once baked, let cool and put in airtight container at room temperature up to 2 days. To keep it longer, wrap and freeze raw scallion dough directly in the freezer, freshly pan-fry before eating.

300g All Purpose Flour普通中筋面粉
2g Salt盐
10g Vegetable Oil 植物油
190g Water水
=Scallion Oil Dough 葱油酥 =
35g All Purpose Flour普通中筋面粉
2g Salt盐
0.5g Pepper Powder 胡椒粉
0.5g Clove Powder 丁香粉
2g Onion Powder 洋葱粉
2g Garlic Powder 蒜头粉
150g Scallion/Spring Onion青葱
0.6g Baking Soda 苏打粉
80g Vegetable Oil 植物油

You mean during frying? More oil will make the color more even, without oil the color will be less even and easily burnt
