    之前做过了脆皮版曼煎糕,今天来做马来西亚古早味传统厚软曼煎糕/Manchang Kuih/Peanut Pancake/Apam Balik Kacang, Ban Chien Kuih。面糊制作过程还蛮直接的,中途需要休息面糊至少1小时以上,而且一定要确保泡打粉和苏打粉有效,防粘锅温够热,这样可以做出切面蜂窝气孔满满,蓬松厚弹的曼煎糕。 加上里面自烤的新鲜花生香味和奶油玉米,古早味又回来了。
    收藏方式:做好吃口感最佳,如要收藏建议先不放奶油玉米因为含有水分容易变质。彻底放凉收密封容器收普通冰箱。吃前用toaster弄热回温再吃。
    Previously, I have made Crispy Manchang Kuih before, and today let’s make traditional Malaysian thick fluffy Manchang Kuih/Peanut Pancake/Apam Balik Kacang, Ban Chien Kuih. The batter making process is quite straightforward. Midway need to rest batter for at least 1 hour, must ensure the baking powder and baking soda are still active, with Non-Stick Pan hot enough, can yield sliced cross section full of honeycomb air holes, fluffy and thick pancakes. With the aroma of freshly roasted peanuts and cream corn oozing out, the ancient nostalgic taste is back.
    Storage method: Best texture eaten once freshly made. For longer storage, recommended not to put cream corn because it contains moisture easily deteriorate. Let cool completely and store in airtight container in the refrigerator. Reheat with toaster before eating.
    ♦Ingredients食材 =Non-Stick Pan 防粘锅Bottom底: 25cm, Top顶: 28cm=
    =Batter 面糊 (2pcs Big Thick Manchang Kuih 大厚曼煎饼)=
    355g All Purpose Flour 普通中筋面粉
    20g Cornstarch 玉米淀粉
    70g Caster Sugar 细砂糖
    3g Salt 盐
    450g Water 水
    84g Whole Egg 全蛋液
    (Rest 1hour 休息1小时)
    75g Water 水
    6g Baking Powder 泡打粉
    3.5g Baking Soda 苏打粉
    =Fillings=
    200g Peanuts 花生
    50g(4Tbsp) Caster Sugar 细砂糖
    Butter 牛油
    425g Cream Corn Can 奶油玉米罐装

      糖的效果在面糊里面起了很大的效果~是和泡打粉起了发酵的做用~(纯粹个人觉得)
