    INGREDIENTS
    Dough
    2 cups (300 g) all-purpose flour
    1/2 teaspoon salt
    1/2 cup boiling water
    1/4 cup cool water
    Filling
    1/4 cup + 2 tablespoons (95 g) all-purpose flour
    1/4 cup peanut oil (or your favorite oil like olive oil, melted coconut oil, melted butter, or melted chicken fat etc.)
    3/4 teaspoon salt
    8 to 10 green onions, split down the middle and chopped (yield 1 cup)
    Cooking
    Vegetable oil for pan frying
    Dipping Sauce (Optional)
    1 1/2 tablespoon soy sauce
    1 tablespoon Chinkiang vinegar (or rice vinegar)
    1/4 teaspoon sugar

    Hi! Just made this recipe and they came out wonderful, however I have a couple notes for those of us using grams instead of cups/tablespoons -- I found the measurements to be off! Luckily I have cups also so I could weight the precise quantity and fix the proportions. Here's the adjustments I needed to make:
    - For the filling "cream", it's 60gr of flour instead of 95!
    - For the dough, I haven't measured as precisely but I had to add a bit more water for 300g of flour. I would say it was probably 1/4 cup more. Added hot and slowly, until I got that elastic and sliiiightly sticky consistency (doesn't stay glued to your hands, but moist enough that you don't get big creases when making the ball).
    - Scallions, I used about half (3 instead of 6)! Could have used a little more for a stronger flavor but they were breaking my dough a little, so in the future I will probably add an onion powder to the filling cream for more onion-y deliciousness!
    Looooved that crisp sound when cutting it, just like in your video! Thanks for the great tutorial

    I have to say that this is the most well made video about scallion pancakes that I have seen, and believe me I've watched them all! I'm about to try the recipe right now!

    I made these today and everyone loved them! They came out so crispy and tender. I was a bit intimidated to try scallion pancakes before but the video made it simple to know exactly what I was doing. Thank you for such a detailed, easy-to-follow recipe!

    My pancake is unable to make it past the rolled up scallion filling. Its not adhering and im not able to roll it flat. Oil explodes out.
