I made these and they were amazing! I halved the dredge and spicy oil amounts, so I didn't have too much left at the end. The only thing that was tricky was the sause... it did split on me... but I brought it back to life 😊 with the old good trick. I put a tablespoon of storebougth mayo in to the bowl and was adding tablespoons of my " concoction ", whisking by hand. And it worked like a charm😁Thank you for a recipe!

I worked at Wendy's in the early 80s. The chicken was great then. We had just regular chicken breasts that we breaded like you would at home, right before they went into the fryer. Then they started making all these cost cuts and the chicken was the first to go. Started getting pre-breaded frozen stuff that wasn't even close to the original.

For those that want to dial this down in spice level, skip the coating in oil+spices step and toast your buns using a chipotle/siracha/hotsauce of your choice mixed with mayo instead of the butter and it will still be fantastic. Nice work Josh. I do think the hot oil pushes this into Nashville hot chicken territory though, as opposed to the spicy coating on the Wendy's version.

You get to choose two of three things. Fast, Cheap, or Quality. Wendy's is fast and cheap and honestly the quality is better than its competitors. It's not, spend 6 hours in a professional kitchen quality, but if you wanted that you would be spending $20 on a chicken sandwich, not $6.
So while Josh's sandwich may be the superior sandwich I really cant dedicate hours of my day to it. It's an advantage he has over us average Joe's. He gets paid to do this stuff, because he's good at it and he made that decision with his life. I respect that and totally use his videos for other things (looking at you Fermentation Fridays!!!) but these types of recipes are just nice to dream about for the regular viewer.

It's true, but if a person were so inclined they could make the buns and have them ready for a week, you could make the aioli and that should be good for a week (I think?? I don't know how long it would last), then just make the chicken in real time when you want it. you could skip the marinade since it's going to have a sauce anyway. if you had the chicken ready to cook, start to finish in 20-30 minutes maybe? a lot of work and forward planning, but still better and overall cheaper than 2 sandos for 12$ then you'd have buns and aioli for other dishes - burgers or just a few more chicken sandwiches.

Toum (prononciated Toom) is pretty much garlic in Lebanese ( probably similar for other countries in region ). Very good idea to have toum inspired mayo sauce. Us (lebanon) we have a special sauce for grilled chicken that we call toum which is a mix of garlic, potato, olive oil and other( changes ingredients to some extent depending which village you go to). It is same as garlic sauce you have in shawarma but more authentic.
Will be trying this chicken burger on my next cheat day, thanks budd.

Don't get me wrong. This looks delicious, but this is not the Wendy's Spicy Chicken Sandwich. This is a Nashville Hot Chicken sandwich with garlic aioli. And that doesn't even address the argument of you using thighs when Wendy's uses breasts, but, you know, whatever floats your culinary boat.

But that’s the whole point of a “But Better” he does lots of things to each recipe that would make it not the original. Whether it be the bread sauce or an extra special ingredient like truffle or how he makes the dough. But in essence it’s still what he says it is because at the end of the day all the burgers/chicken sandwich/nuggets are the same no matter who’s name is on the bag.
