I tried adding 1g of amylase as you suggest because I thought it is the secret to soft buns, but turns out: what you were using is surely a ”bread improver” mix that contains some parts of amylase because if you use pure alpha amylase you are supposed to only use 0,006% of it, while you are using 0,2%, meaning I was overdosing by 30 times and my dough just turned into a gummy substance and did not develop a crumb at all. The buns came out like raw although they reached the correct internal temperature!
To be fair with the sauce debacle they do always ask you if you want to add sauce that you can always put on yourself. Also prefer oil-dipped style Nashvilles more than the Chick-fillit spicy these days and I don't even miss sauce on that plus it goes super good on a biscuit for brekky.
I’m from Scotland and first tried Chick Fil A in the US a few years ago, and neither store I visited asked me what sauce I wanted. I thought it was really overrated until I had it with sauce on a few years later

As a person who doesn't like mayo at all, (or many condiments on my sandwiches), I appreciate that Chick-Fil-A doesn't put sauces on their sandwiches. Not everyone is crazy about sauce and I like the fact that they give you the option to just do it yourself if you want that. I don't know if I just have good CFAs by me, but I eat my sandwiches without any sauce on them and my chicken is never dry. I can't speak to anyone else's experience, but I've always had a good experience with CFA. Plus, the spicy chicken sandwiches has a good amount of spice to it and I really appreciate that the spice is in the chicken and not in the sauce like in other restaurants.

As someone with a ton of allergies I love chick fil a cause I don’t have to worry about any sauce with something I’m allergic to and they only make chicken so I don’t have to worry about cross contamination with other meats either it’s so nice. Plus they have so many sauce options I like that so I can put the sauce on when I want and not have soggy bread.
They don't put sauce but they offer you any sauce that you want. I usually put the Chick fil A sauce. And it's can be a bit dry, but that's why I get the spicy deluxe, it has lettuce and tomato.
Love your video's and I can tell everything you make is super yummy. I can only eat this way once in a while, but I like to go all out when I am serving others. Great inspiration!

I make a variation of the "crispy chicken flamethrower" sandwich and I might have to try that chicken recipe. To me, the chipotle mayo and thick cut bacon (on top of the deluxe dressing) just cranks everything to 11. A good tomato and pepperjack cheese makes any sandwich better
Past chick fil a worker here. The secret to the spicy chicken is the buffalo marinade that comes already on the chicken from the manufacturer. Our coater is basically what you made, you got all the spices right. Our coater itself isnt that spicy and its only real difference from the regular is that it has paprika. Other than that, nailed the but better.
Used to work at CFA! We don’t do a sauce so those who have allergies (like me) don’t have to ask for it off, and then we have to make a whole separate sandwich and slow up the line.

To be fair, there aren't really many fast food restaurants that you couldnt cook a better version of the food of. thats kind of the point. If a restaurant offered this sandwich instead, it would be $12-15 easy. Fast food has to balance cheap with taste. The idea is to balance taste with affordable. If it ever becomes too easy to replicate, the quality is too low, and if it ever becomes too expensive, people will just make it themselves.
Still waiting to see Papa take on Panera's cheddar broccoli soup. Easy enough to flex on a fast food sandwich but no homemade buns to elevate your soup game

It's going to be a bit before I can make these and see what the difference is -- if anyone ends up making both, I'd love to see which one turns out the best! And they are most certainly different recipes in case anyone wants to double check -- if you convert this to baker's percentages, it'll be a little easier to see. nah I live in Mexico, and when I travel to the U.S. the thing I most look forward to is a Chick'fil'a Spicy chicken deluxe, with mac'n'cheese instead of fries and a root beer. It fast and delicious, but granted it is fast food. I have had better chicken sandwiches than what you get at chick'fil'a, but for the time it takes and how good it is it makes it worth it

Hey yall!! Heat up your jars before pouring hot/boiling liquid into them. You can do this by cleaning out your sink, plugging it, and filling it with really hot tap, put your jars in there for a minute. This will help prevent cracking or breaking ofyour jars.

I love the SCS. Consistency is an issue. Sometimes they are dry af, but other times I’ll get one that’s moister than a oyster and that’s what keeps me coming back for more.
I made it. It's delicious and saved myself 40$. I didn't do the overnight. I needed it now. My son liked it also. He's 7. I went easy on the cayenne but I wanted that taste. Next time I'll half the breading and wash (egg, milk). I had a lot left over. I also pan fried it with 1/4 inch oil. Lard & EVOO Which was more than enough for my 5 chicken. I used chicken thighs pounded 1/4 inch thick. RIP Auntie Fee. Miss yeah.
I came back from visiting the US last week and I really did enjoy chick-fil-a. I ordered this exact sandwich. I wish I was able to try some of the other sandwiches. I loved this one...I ended up buying a chick-fil-a sauce in walmart, so I'm hoping to try out this recipe!

I’ve made both! They’re both tasty for sure, but I think the breasts have a much better texture for a sandwich. Breasts are just as easy to cook as thighs as long as you have a thermometer. Texture is way more important than the very slight difference in taste imo.

I think Chick Fill-A not putting sauce on their sandwiches is genius, actually. If you want sauce, you can just ask for some sauce and then you get to decide how much you want on it. It's impossible to get complaints about there being too much or too little sauce.
You can ask for half a dozen sauces and the response is always "My Pleasure"... I think that's the whole point, not only avoiding a soggy sandwich on your way home but you can dress it with the exact flavor you prefer.
The problem with bread and butter pickles is the sweetness combined with the pickle flavor, which is not appreciated by everyone. I appreciate that the acidity is meant to balance the richness of the sandwich but an alternate way to do this is with pickled jalapeños, which adds to spiciness and cutts the aforementioned richness.
Chick-fil-A doesn't need to be the best. It needs to be good enough and judging from the line that goes around the building 3 times near me, I think they can consider it good for fast food. Also, just ask for sauce packets if you want a sauce.
If u get a sandwich special ordered… for example say “extra pickles” you won’t get a Sammy that’s been sitting in a bag for 3 hours under a hot lamp, you will get a freshly fried MOIST lil chicky with crispy bits and an acceptable amount of pickles… if that’s what u get, it’s a fantastic sandwich, otherwise it’s just OK
I think what makes them succeed is the flavor profile of the chicken. Not so much the sandwich as a whole. It's the reasons everyone loves the nuggets.

I made this today. Lots of work but damn it was so good I keep thinking about it. I had enough breading leftover that I started breading fish I had in the freezer. Might as well fry everything since I have the hot oil ready.
I think Chick Fill-A not putting sauce on their sandwiches is genius, actually. If you want sauce, you can just ask for some sauce and then you get to decide how much you want on it.
It's impossible to get complaints about there being too much or too little sauce.
You can ask for half a dozen sauces and the response is always "My Pleasure"... I think that's the whole point, not only avoiding a soggy sandwich on your way home but you can dress it with the exact flavor you prefer.
The problem with bread and butter pickles is the sweetness combined with the pickle flavor, which is not appreciated by everyone. I appreciate that the acidity is meant to balance the richness of the sandwich but an alternate way to do this is with pickled jalapeños, which adds to spiciness and cutts the aforementioned richness.
Chick-fil-A doesn't need to be the best. It needs to be good enough and judging from the line that goes around the building 3 times near me, I think they can consider it good for fast food.
Also, just ask for sauce packets if you want a sauce.

If u get a sandwich special ordered… for example say “extra pickles” you won’t get a Sammy that’s been sitting in a bag for 3 hours under a hot lamp, you will get a freshly fried MOIST lil chicky with crispy bits and an acceptable amount of pickles… if that’s what u get, it’s a fantastic sandwich, otherwise it’s just OK
That chick fila sandwich is the closest a fast food item ever got to what it looks like in the ad.
I think what makes them succeed is the flavor profile of the chicken. Not so much the sandwich as a whole. It's the reasons everyone loves the nuggets.

I literally left the house to get this exact sandwhich, realized it was sunday and went home, and then saw this later in the same day.
