Hey Josh,im a single dad who loves to cook and is always trying recipes from your channel, have probably watched each video you have lol have had the cookbook for awhile, was wondering if you would ever think of starting like a "week day meals"/"Quick at home meals" segment
All three recommendations below are great I’ve followed all for some time now… fast quick and simple it’s not this guys style and it’s what sets him apart he is an over achiever
Ethan Chlebowski, Pro Home Cooks, and Adam Ragusea are perfect channels for you man. Unfortunately, while Josh sometimes does that kind of cooking, his realm is more in fine dining
For those of you who can't afford truffles, you can use porcini powder for a deep mushroom flavor. I add porcini powder to all sorts of things. You can make it by getting a package of dried porcini mushrooms (most grocery stores have them at a reasonable price) and then grinding them into a powder in a coffee grinder you use for grinding up spices.
I first heard of mushroom powder probably forty years ago on The Frugal Gourmet. He suggested using it for a stew or sauce needing a little something extra. Best way to go is buy items whole then grind at home.....the only sure way to know exactly what we're getting.
Made this today. Never had a patty melt before. This was AMAZING!!! Since I made shoe string onions, I made onion rings as well. I bought bread at the store for it. I didn’t use the truffles and used black pepper for all pepper. Made for an incredibly cheap meal and that was amazing. Papa’s saving me tons of money from not eating out.
Can confirm that burger sauce (made to Josh's specification) without the truffle is still damnear magical. Never not having this sauce on all burgers forever :) Thanks Josh!

@@iJustMarisa yeah but that means he has to have 100 videos filmed and edited before he even releases his cook book. Which seems like it’s a lot of work. It’s a really cool idea but seems like it’s ALOT of work

I've worked at Whataburger (many years ago, granted) and I agree with how their food smells. The issue is using the same grill space for frying onions: the onion vapor permeates the oil used for frying, which gets all over the grill, which gets all over everything else cooked on the grill. If the store has been busy or it has been a few hours since they could do a deep clean, it starts to smell. Remember, hydrogen sulfide is why onions make you cry, rotten eggs stink, and farts smell bad.
I also worked at a whataburger before and I think you just didn't clean the grill often enough or well enough when you did you don't need a deep clean to get rid of onion juice and smell because I never had a smell other than burger patties on the grill
His cooking is always on point, but damn these videos be like “first things first, in order make this recipe, we’ll have to start by building our very own stove from scratch”

Hey Josh, I’ve been watching your videos for quite some time now and I really love the recipes you make and how much care and attention you put into your videos While I understand that comparison videos like this do really well for you, as well as that you’ve kinda taken on a pretentious camera personality for humour. Hey bud, long time viewer here, love the videos. Im a young professional that works 80+ hours a week and gets fed at work. I rarely get time to cook, although i do love it. Weekly ill go get myself ingredents to make a meal, or sometimes cook a snack before i go to bed before work. I was wondering if you ever considered doing a video on "setting up your pantry" or "basics every cook should have" simple spices and ingredients that are versitile and can in many combinations add flavour and kick to any meal. Sauce building, seasonings etc. Whenever i cook i find that im missing layers of flavour in my dishes just because i dont know what to buy. Dont know if that makes sense, but wanted to through that out there. Happy new year bud!
like LiaiGuess said, ProHomeCooks and I'll add Ethan Chlebowski and Brian Lagerstrom that other people added elsewhere too! These 3 are the trifecta of "weeknighting" or 15 minute meals. I just made fish tacos a few weeks ago and incorporated all of their styles/preferences - Josh's chipotle SAWCE, Ethan's pickled onions, Brian's technique, and Mike's (PHC) toppings. also, not everything *needs* to be made from scratch, not everyone has time for that (I sure dont) - that said can't recommend deep diving on all off these when you get time.

As much as I love a good burger, I'm actually a bigger fan of the patty melt. And I love this presentation, too, esp with the fried onion instead of grilled. Those fried onions would actually be a thrifty and delicious alternative to store-bought French's. We don't have Whataburger here in Iowa; I would still look at eating at one someday. But this will be a profound alternative in the meantime. 😋 Thank you Papa
@Cookies_with_milf not sure how you came by that info but I have been watching the channel for over a year since I first learned of it. Regular viewers will often comment on a channel that they like.
@@mattotis8412 I'm the opposite, while I don't necessarily hate patty melts. There's just something off about the sliced bread vs a bun. It takes me out of the exp, and reminds me it's burgeresque, but not all there.
I've made so many of the recipes on this channel. Yes including the breads. And I'm not gonna lie, its pretty much ruined my ability to eat out. With Josh's help, I'm eating some of the best tasting meals I've ever had in my life.
I was a grill cook at Hamburger Mary’s in San Francisco around 2000. All of our burgers were pattymelts on whole wheat. Our premier burger was the Monster Burger which was two 1/3 pound patties, cheese, bacon, grilled mushrooms, grilled onions, scoop of guacamole, lettuce, to, tomato and 1000 Island… all on a pattymelt situation. It stood over a half foot high and held together by impaling it with a steak knife
I love a good patty melt. I'm going to make this but I doubt I'll make bread from scratch. I will definitely try your special sauce (that doesn't sound quite right).
Josh you Weissman you lol get it wise man, i love your cookbook and have personally tried 4 of them for myself and they've came out brilliantly, may i suggest you make Whataburgers Buffalo ranch chicken strip sandwhich next but better!
Hi Josh, Super curious but how is the dish washing process after these amazing meals like 😅 Thank you for always putting bomb af food on my feed. I’ll always be hungry ❤️
Hmm kinda makes me want to try the patty melt from whataburger because there was quite a lot of extra stuff put in it and it had to be like a day old to make it "better" must be pretty good. 🍔🏃♀️
We just had Whataburger for lunch yesterday and your video makes me want to have it again today. My go-to is the #4 double meat double chz with mayo. They are generous with the jalapeños, but they're usually just piled directly in the middle.
Whataburger is delicious. I live in New Mexico and we have the Green Chile Double and it’s like pretty damn alright. I still prefer to make burgers at home, but I ain’t gonna knock WB.
To be honest, the home made bread makes a thousand times bigger difference than the mayo. Many chefs/big food you tubers also agree that mayonnaise is probably the one thing that's (almost) just as good as homemade.
Hey Josh, That is an amazing looking patty melt, and I am totally going to try that recipe. However, my wife has made some interesting points about how your 'But Better' series does not adhere to the restaurants strict quantity and ingredient list and she would really like to see a series about that. Specifically on how you can make a fantastic and delicious meal in the same restrictions of ingredients and portions as these restaurant chains have. We both absolutely love watching your videos; However, if you are going to flex on a 'But Better' we feel that the true spirit of it means you would stick within the same parameters of said chain restaurants. Maybe time for a new series? Much love - no disrespect, just our two cents.
@@ZoeRebecca I agree. I got so darn tired of paying what we have to for a fast food burger and it looks like and tastes like cardboard. Not only are these recipes better they're cheaper.
Having Josh cook with the exact same standards the chains have to me misses the point of the show. He doesn't expect anyone to make his version of a Big Mac everytime they want one. If you notice he only does major chains and huge companies he never picks on some small family owned diner. He attacks McDonald's......which is not only one of the 10 largest companies in the world....it also doesn't matter what anyone says about them people are going to eat it anyway
I want to see you “but better” Chester chickens potato wedges. They are huge and amazing and I want to see how to make them. The best chesters chickens are usually at truck stops
Out of over 2.7K comments, I really don't expect mine to be seen. That being said, Whataburger lets you customize your burger more than any other chain.. If you go through the drive-through and order a patty melt, it is going to be basic. Go for the options they offer, which is extensive. Ask for the same at a McDonald's....
The Whataburger kid was under time constants and was 17 when he made it, so the fact that Josh made it better isn’t surprising. God bless Texas, god bless Whataburger
Personally I think Whataburger is the best fast food or even chain burger I've ever had. I've been to Texas once and went to 3 different Whataburgers and they were fucking WRAPPED with cars day and night. I've been to Shake Shack in Manhattan, I've gotten animal style from In-N-Out and I've had just about every major national brand except Five Guys. It's all fast food though, I do agree that they're a bit overrated but that doesn't mean they're bad.
Might be a great patty melt, but there is 0% Whataburger contained in the video. Take em on when you're ready to do a big boy Whataburger video, such as a double jalapeno burger. That would be interesting.
Pro: he's a chef that teaches very well. Con: he's so embarrassing and condescending that I can't share his videos. I've been here from the beginning and this is so sad.
This looks delicious but I'm so intimidated to cook it 😂 also, I used to work @ whataburger. They do salt every patty however lightly. The ultimate is a triple triple patty melt (triple meat, triple cheese) add grilled jalapeños and bacon and thank me later 😌 A good runner up we also have in TX is the Hopdoddy patty melt ... If it had the creamy pepper sauce I'd almost prefer it

While I understand that comparison videos like this do really well for you, as well as that you’ve kinda taken on a pretentious camera personality for humour.
I really feel as if you are more talented than the need to shit on fast food that people know it’s going to be all that great.
And when people are saying to you that using far out of reach or expensive ingredients is like “cheating” or anything alike it’s not because people don’t like seeing it because they can’t afford it. It’s because when people see you advertise your content as doing -blank- but better, at least from what I’ve come to consensus with from other folks I know who watch your content is that people are kinda expecting you to do out do the product with just technique.
This all being said I’d really love to see some videos that just focus on your recipes and ideas.
I think it would be dope to see you make some more of the food you grew up with and what you like to eat on the regular nowadays
Cheers my guy 🍻
0:09 I love the serious, almost threatening face he makes. Lmao love u joshy!
The fact that Whataburger DM'd you is hilarious. Great content as always 👍
Not to take away from the rest of the video but I thought that was the best part honestly. Speaks to the work they put in.
Everything from Whataburger is delicious. The buffalo chicken sandwich on Texas toast is where it’s at
As a french person I can say that Josh's 'Bonjour!' was perfect!
Happy new year bud!
you might like the ProHomeCooks channel
like LiaiGuess said, ProHomeCooks and I'll add Ethan Chlebowski and Brian Lagerstrom that other people added elsewhere too!
What the hell do you do for more than 80 hours a week?!
80+ hours your are being overworked that aint right.
80+ hours?? What are your work times?
I'm totally enjoying reading your book, and hopefully I'll be making some of these recipes soon
You got this fam remember to spank your horse lmao
Paul Wagner, fellow Foodwisher Evan King here. Good to see a familiar name on Joshua's channel. Maybe Chef and Joshua can collaborate in the future?
Go for the Bagel Bread Loaf first. Life changing
@@evanking920 Hmm. Chef John's experience in a brigade de cuisine vs Joshua's restaurant experience? Interesting...
@@paulwagner688 They both have their plusses but Chef is still my" go to guy". He combines flavor with accessibility. Josh is spectacularly entertaining but I don't have the time to do the work yet. Both have a special place in my "Cooking Heart". Stay well brother .
ps. I love the book.
@Cookies_with_milf it’s cool I wouldn’t have known about the comments if I didn’t stumble upon the feature
@@mattotis8412 I'm the opposite, while I don't necessarily hate patty melts. There's just something off about the sliced bread vs a bun. It takes me out of the exp, and reminds me it's burgeresque, but not all there.
I haven’t watched it yet, nor have I cooked it yet. But I’m from Texas, and your subscription is on the line.
Just finished dinner and this made me hungry 🤤
I'm gonna be real here: There was no need to go so hard on fucking Meat on Toast but Papa Joshua did it for us anyway. Appreciated.
I'm doing this today...
The onion rings strings!!
I made your Caesar salad dressing which was great!!!!
Whataburger: josh, please don't do this. We're begging you.
Josh: So anyway, I'm just gonna ROAST the poo out of Whataburger.
At only 5 times the price, and you have to do it at home.
@@benjaminandersen8482 true but just make it as a treat.
Kudos to the SpongeBob reference, it unlocked a core memory and had me rolling 😂😂
I got your cook book and love it
have I made you proud papa🥺
As a brit you saying Worcestershire sauce correctly warmed my cold heart so thank you
This is absolutely amazing , I watch these videos and I learn and laugh . So beautiful
Lol. My whataburger never gets that beat up. Must have been a ruff drive thru the woods to grandmothers house. 🤔
Holy moly that looks amazing! 😘🤗👁️👀
You are the first cooking channel I’ve seen that has even mentioned Whataburger
These episodes are just ways to get me hungry
Hi Josh,
Super curious but how is the dish washing process after these amazing meals like 😅
Thank you for always putting bomb af food on my feed. I’ll always be hungry ❤️
Hmm kinda makes me want to try the patty melt from whataburger because there was quite a lot of extra stuff put in it and it had to be like a day old to make it "better" must be pretty good.
🍔🏃♀️
it's pretty good, dude is just gassing himself and his 1 hr burger up vs a cold burger
Thanks for the vids brotha just stopped eating out bout a month ago and youve helped alot
The place actually dm’ed him and asked not to do it to them that’s super dope
Man. You made your own bread, but used store bought mayo? 😂 the sauce sounds incredible! I’m going to have to try this.
To be honest, the home made bread makes a thousand times bigger difference than the mayo. Many chefs/big food you tubers also agree that mayonnaise is probably the one thing that's (almost) just as good as homemade.
@@Zureiyaa Duke's in the hoooouse
I was kidding. I fully agree with you.
That there is store-bought aioli.
@@hogue3666 That cider vinegar makes all the difference.
Yes..
A good way to compare it would be to create something that tastes better, at the same of lower price.
@@akash1playboy thats why it's called "but better" it's like those vids of people taking fast food and making it 5 star
Can’t wait for the cook book to come I will be cooking all day.
Josh, thanks for the tip on Patti melt. Can you cook one of your Mom’s recipes that you loved when you were growing up? Bring back nostalgia.
Patty Melt is my order when I go to Whataburger, love it!
ayye papa made this at home and ...... so fricking delicious .
I want to see you “but better” Chester chickens potato wedges. They are huge and amazing and I want to see how to make them. The best chesters chickens are usually at truck stops
Bruh. The B roll gets me every time 🤤
First time viewer, great video. I kept my composure until the kiss from papa, had to LOL. Well done dude.
The whole reason to make a Patty Melt is it's quick and simple.
Never been to what a burger. Gotta have my patty melt on Rye bead. So much flavor!
Funny enough, I was actually in the mood for some Whataburger. Also, was that block of parmesan cheese from Costco?
man's really just ground peppercorns in a vitamix, massive respect for having the only blender worth investing in.
Man I always get fire recommended recipes from you🔥
I would love to see Josh travel abroad and do a "But Better." I'm interested to see how different the presentation is
Out of over 2.7K comments, I really don't expect mine to be seen. That being said, Whataburger lets you customize your burger more than any other chain.. If you go through the drive-through and order a patty melt, it is going to be basic. Go for the options they offer, which is extensive. Ask for the same at a McDonald's....
I’m gonna pretend Josh didn’t just say “Whataburger is overrated” and that the patty melt is the only good thing on the menu.
The Whataburger kid was under time constants and was 17 when he made it, so the fact that Josh made it better isn’t surprising. God bless Texas, god bless Whataburger
My name is Josh, I’m from Texas and I LOVE Whataburger and it hurt to hear your words but that’s okay I still love your channel fellow Josh
If Josh has kids, they'll never complain when he says, *"We have food at home."*
Kids are evil. Yes they will.
The only thing I’m upset about is you forgot the spicy ketchup. That’s a whataburger staple!
I love watching this on my free time
Wow, this recipe looks like straight fire... I'm hungry now.
Don’t remove the truffle. DO remove the ketchup. Will make the sauce even more special!
Might be a great patty melt, but there is 0% Whataburger contained in the video. Take em on when you're ready to do a big boy Whataburger video, such as a double jalapeno burger. That would be interesting.
Joshua Weismann but better, just use $500 of ingredients to make a $5 sandwich. Its not but better its but expensive
Then go to his “but cheaper” playlist?
I've been waiting so long for this
Their jalapeno burger was my lunch staple for years lol
Pro: he's a chef that teaches very well.
Con: he's so embarrassing and condescending that I can't share his videos.
I've been here from the beginning and this is so sad.
I feel you… some times a cringe and face palm 🤦🏽♂️ while watching but I’ve learned
I love how Yall smash the competition burgers all the time, and by smashing I mean compressing the burger into a pancake to make yours look better
Happy birthday Josh!
You are ABSOLUTELY AWESOME...You inspire me to utilize my kitchen with a new sense of adventure. Thank You for being such an AWESOME "YOU"!!!
This looks delicious but I'm so intimidated to cook it 😂 also, I used to work @ whataburger. They do salt every patty however lightly.
The ultimate is a triple triple patty melt (triple meat, triple cheese) add grilled jalapeños and bacon and thank me later 😌
A good runner up we also have in TX is the Hopdoddy patty melt ... If it had the creamy pepper sauce I'd almost prefer it
the sweet and spicey burger is their best burger IMO. its what got me putting spicy jelly on burgers.
