  • In this video I Freeze Dry the Candy Nerd Clusters using Candy Mode on my Freeze Dryer! These turn out crunchy and amazing.

    I use the dividers for just about everything... helps with packaging even if using large bags. Looks good.

      Yep, I love my dividers especially for things like soup that you want to be able to pull out a meal and have a general idea of how much water to add back... Work great for keeping Candy that is fragile and will stick together apart, I pretty much love all the products from freezedryingsupplies.com

      Let me know how it goes for you! I am learning that each machine, like a person, had it’s own idiosyncrasies and especially Candy had to be tweaked for your machine. I keep a notebook on all of my experiments and what works best for me, starting with what has worked for others.

    This was a huge helpful video!!! I just bought our first FD the same one you have. In fact it is currently going through the “burn in” batch. Thank you for this info on exactly what your settings were! Have you tried gummy bears or any other candy? I apologize if you have and I haven’t seen them yet. I just subscribed to your channel so I will be checking out your videos!!

      I have not had much luck with gummies.. I do lemon heads, skittles, milk duds, caramel m&m, salt water taffy…thanks for subscribing! We just got done moving so I should be getting back to 1 video per week now that my kitchen, freezer, and freeze dryer aren’t 20 minutes apart!

    Great video. Thanks. Mine came out still cold in the middle, is it alright to put them back in to dry for extra time ? Also, is it okay to take the candy out while the freezer is still cold?

      The Freeze Dryer Drum should be cold but trays should be warm. I have put Gummy Clusters back in with varying results.

    So did you check them at 6 hrs? Did the machine let you know 6 hrs were up? The video shows complete I’m not sure why it shows that if you set for 12hrs but only did six? I would want to do six as well.

      I have never been able to get Nerd Clusters in 6 hours, they require 12, it shows 6 hours because i let them go 18. I always have my extra dry time set to 24 hours, so I have to keep track of time, because the machine does not alert me as to how much time has gone by.

    What does having extra dry time do? Can it ruin the candy or? I’m not fully understanding

      You can’t over dry the candy. Extra Dry Time is technically how long the machine will run in Candy Mode. I leave mine at 24 hours to give me freedom for when I’m going to deal with the load of Candy.

    I'm confused? 12 hours of extra dry time, but you said you'd only need 6? So you stop machine earlier?

      Yes, I stopped it at 6 hours of extra dry time. I always set for 12 in case something comes up and I can’t get the candy out.

    In the beginning where you mention 12 hours in the settings, but actually 6 hours? Im confused, which one is it?

      They will look done in 6, but you want to run them for 12

      If there are ones that are smaller it's usually because they are not done. I have done many batches of NC and it has taken every bit of 12 to 18 hours. You can get 90% done and find 10% not finished and it's usually the smaller ones you find in the batch.

    been warming candy, does it hurt to warm these at all? so far we have skittles and bit o honey turning out great. Trying caramel apple pops tomorrow but not sure any tips or tricks. Warm them? Harvest Right Large machine. Thx!

      Some candy needs it, other candy kind of blows up and then sticks to the warming pads on the under side of the tray above. I do not warm my Nerd Clusters for this reason.

      We did the Carmel Apple suckers, the Carmel was airy and fluffy but the green apple stick stuck to our teeth s little bit.

      They are from www.freezedryingsupplies.com I get my dividers, precut parchment OA's, stackers, lids all from them.

      I dry them for 12 hours. When I go less than 12 in my machine some squish in on themselves when I go less than 8. So I go 12 to make sure I have no failures
