My daughter's getting ready to head off to university in the fall and we were talking the other day about the challenges of coming up with meals every day. I remember my main nemesis being leftovers. You can only do so much with KD before you have to call it and sacrifice it to the garbage can gods. Planning ahead though and having the ingredients prepped with a few meals ready and waiting is going to be a game changer for her. And channels like yours that offer so many healthy and delicious options will keep her fridge stocked with no effort. Thanks for taking care of us.
A tip someone gave me years ago for a fluffier fried rice base. You can do this with freshly made rice (jasmine's good) or rice you refrigerated. The main point is you don't need to dry the rice out for a fluffy stir fry finish. Roughly, for every 2 - 3 cups of cooked rice, thoroughly mix in 1 beaten egg. Then put a couple of tablespoons of oil in a skillet, get it hot (the oil will shimmer). Toss in your rice, stirring and moving it about. After a while the grains will separate. You can keep cooking/stirring for quite a bit depending on how toasty you want the rice. Now, you can either continue by adding other ingredients, or remove it and put it aside, using it in smaller stir fry or other meals. Or, just have it as a quick side, topped with scallions, a spirtz or two of soy and a very light drizzle of sesame oil. I hope this works for you - it always has for me.
