Chargrilled Oysters

  • This here is my NOLA inspired chargrilled oysters. They are so freaking good!!! I highly recommend using oysters that are fairly meaty because the oysters will shrink when it cooks on the grill. Be prepared to make a few dozen because you'll probably go through these pretty fast! ;-P
    Ingredients:
    - Oysters (I used Yellowband oysters)
    - Old Bay Seasoning
    - Smoked Paprika
    - Cayenne Powder
    - Parmesan Cheese (grated)
    - Romano Cheese (grated)
    - Parsley (chopped)
    - Cracked Black Pepper
    - Garlic (finely minced)
    - Butter (melted)
    Instructions:
    1. Shuck oysters.
    2. Sprinkle cajun seasoning over the oysters. I used Taste My Roots Spicy Creole Seasoning blend but you can use Old Bay, paprika, and cayenne powder. Or you can use whatever you like!
    3. Top oysters with the grated Parmesan cheese, grated Romano cheese, chopped parsley, and cracked black pepper.
    4. Melt butter in a saucepan and add minced garlic to the butter. Thoroughly mix the garlic into the butter.
    5. Throw oysters onto a grill.
    6. Pour garlic butter over the oysters. You want some of that garlic butter to drip into the flame so the flame will rise.
    7. Cook until cheese is melted (approximately 3-5 minutes).
    8. Remove oysters from the grill. You can top with more cheese, cajun seasoning, and fresh parsley. Can even squeeze a little lemon juice & serve with bread!
    9. Enjoy!

    Awesome, but all that “water” you let drain out is the liquid gold that your supposed to keep it in the shell. Dragos in New Orleans has the best chargrilled oysters hands down

    I usually don't eat open oysters like that. I like to find the ones that are closed. Those taste alot better

    You dumped out the best part of the Oyster, the liquor, which you called water. That should be added back to the oysters along to whatever you want to add to them.

      I think you can get rid of that first batch of water, the oysters will rebuild water by themselves after a few seconds…

    She become my next wife all of her ingredients is what I use ;)
    On yellow band or any band oysters, you still need to check for any bad oysters. People are mislead to think a banded oyster always means fresh. So time that is not the case.

    Get a large aluminum pan & char your oysters in it. You want be messing up your gas grill. I've done it @ 450-500 degrees. Comes out great, regular grill really doesn't matter. Looks & bet taste great. I get my oysters by the sack, not time yet Nov. they are good thru March. From way South Louisiana, 30 miles north of Gulf.

      You can try cooking these on a comal but it def helps to have the oysters directly over a flame.

    They are already dead that’s why they’re banded. I hesitate using those. I want them to be alive and fresh.
