I've Been Using Coconut Flour Wrong This Whole Time!

  • When I first started using coconut flour years ago it was a struggle. Today I see so many people having a hard time with it from paleo, keto and gluten free dieters.
    It' is far from perfect but I show the tricks I've learned over the years in using this grain-free flour on the keto diet specifically. Almond flour is still king but there is a prince rising for those with gluten intolerance, nut allergies and who suffer from celiac disease.

    Use avocado instead of banana. Very similar texture!

    I'm rooting for you, Amigo. I didn't think much of coconut flour till I had some tasty vegan (no eggs), no flax seed or almond flour neither) biscotti made from coconut and tapioca flour and coconut cream, milk and oil. Now I desperately want t replicate it.

    Yes on adding a starch. Arrowroot fixes issues

      Definitely going to give it a try. I’m worried to get coconut flour to work well it may take the recipe out of the realm of keto ya know

    I made shortening sugar cookies using cold coconut oil as shortening. It worked well with coconut flour.

      SUGAR COOKIES
      2 cups Semi-solid Coconut Oil
      ¾ cup granulated Sweetener
      1 teaspoon vanilla
      1 egg
      4 teaspoons coconut milk (alt Heavy Whipping Cream)
      1 ¾ cups sifted Almond flour
      ¼ Coconut Flour
      1½ teaspoons baking powder
      ¼ teaspoon salt
      Thoroughly cream coconut oil, sugar, and
      vanilla. Add egg; beat till light and fluffy.
      Stir in milk. Sift together dry ingredients.
      blend into creamed mixture. Divide dough
      in half. Chill 1 hour.
      On lightly floured surface, roll to ½
      inch thickness. * Cut in desired shapes with
      cutters. Bake on greased cookie sheet at
      375° about 6 to 8 minutes. Cool slightly.
      remove from pan. Makes 2 dozen.
      *Chill other half till ready to use.

    No eggs,used butter and oil which ever one you want to use in the flour to keep bread moist, i will combine coconut and little all purpose flour.

    I agree with you about using coconut flour and almond flour mixed together. I haven't experimented with tapioca or other additives, mostly because I just chickened out and limited my bread intake, made microwave mug bread, or used store-bought stuff (which isn't great).
    You mentioned adding cheese and to coconut flour and I'm wondering about other cheeses...soft cheeses. Perhaps using rocotta or a queso fresco?
    Also, I have to mention that the absolute best baked goods I've had since I started eating low carb, was your lemon pound cake. That really is a delicious recipe.

      Aww thank you so much! I worked on that one and sent it for testing on ppl who weren't keto, turned out well. And yes I think those cheeses could work as well. I actually have started using avocado in my chocolate coconut flour recipes with great results.

    Have you tried making a water roux with coconut flour (tangzhong method) and adding it into the recipe, for more moisture?

    I love baking but haven’t really tried much keto baking because I’m allergic to all nuts except peanuts. So I’m truly missing treats. I just buy some of those chip monk ones when I have the urge and chug some Benadryl

      If you're allergic to all nuts and can eat peanuts then they're alot of nuts you haven't actually tried at all 😂

    I've seen alot of people use flour blends. 3 different flours.

      I agree and I stand by that till today. One flour isn’t amazing but things start to happen when you combine them

    Ok so maybe that the real result cookies and things of that nature can't be made useing these flours so why continue to imatateba cooking style that only can into reality because of the way the "material" flour behaved. This stuff doesn't behave that way at all cause I was experimenting with coconut flour this morning my self... failed. Like u said it not really flour. And coconut bread is regular flour of some kind with a bit of coconut for flavor. So breads with it alone,let see if it can be done oh and vegan. Lol. It is basically a filler flour not a main one in my opinion.
