My hearing is not bad, but as I age, I guess that’s one of those things that change. I used your ratios and created a keto-ish (it had 1 banana in it) banana bread and it turned out awesome! I also used the ratios and created a pancake recipe that was almost the same consistency as a wheat-made pancake. Love it!

Unknowingly, I've been giving her all the wrong foods and she's been ridden with many allergies, including yeast infections! I am now going to start making her treats and food, and will be using coconut flour for her biscuits using pumpkin, peanut butter, coconut oil, etc., so I totally appreciate your explanation about coconut flour - which I did not know. Thank you for the great tips! I have been experimenting with coconut flour for a while and it always came out too dry even if I tried to eyeball measurements. You also make a great point that not all recipes can be successfully substituted with coconut flour...I was just being stubborn haha!

I wish I had seen this video before I started my recipe. I am a diabetic type two so I’m always looking for healthier alternatives and better versions of the same great foods and recipes that I already love. I wanted to make a keto, friendly pizza. I figured using 2 cups of coconut flour in replacement for 2 cups of all purpose flour would be just fine. I learned the hard way just as you did. It came out into a ginormous mess, and I was not able to get a dough that I could roll out or knead or rise. Thank you so much for this video looking forward to trying these tips and methods.

I like the texture of most baked goods with coconut flour. If I need to add something to give it a a different texture I add just a bit of golden flax meal. I love your coconut flour recipes. On my cheddar biscuits I will add almond flour or golden flax meal for that craggy feel. Although your high fat coconut dinner rolls are lip smacking good. You put a lot of work into these recipes and I really appreciate it.

I have learnt these tips over time and experiments. But I should say you did create a great video and good for anyone who is new! Great summary. I found a recipe of a bread with 2 cup buckwheat. I want to substitute 1/2 cup of buckwheat with 1/6 of coconut flour. I don’t like almond flour etc because they both need lots of binders but buckwheat doesn’t need that. By the way I think your example isn’t correct: 1 cup of flour replaced with almond and coconut should be:3/4 almond and 1/12 coconut flour (because 1/4 remaining flour should be 1/12 coconut flour)

Ah! That's what I didn't do! I made your keto pound cake, and it's wonderful, but I didn't let the batter rest before putting it in the pan - so THAT's why my bread loaf pan was way too big! I used a Souper Cube and still got 12 slices out of it which are perfect for an after meal treat - but next time I make it I'll let it rest and see how that does. Thank you Janet!

I recently had my annual check up with my G.P. and heart Dr. First told me I am pre-diabetes and the other said I had some more heart trouble. It's always best to use eggs when dealing with coconut flour. however if you'd like you can check out my article on egg substitutes that work with coconut flour. Keep in mind any changes to recipes can effect the taste and texture. Also keep in mind not all recipes can have egg substitutes. My husband is diabetic so we prefer a low carb diet. However since I am hypoglycemic and have to have a certain amount of carbs in my diet to maintain my weight we are not strict keto in our personal diet. As for gluten free, unless you have gluten sensitivity it is not necessary to be gluten free on a keto diet it's just a matter of your personal preference

I have a couple of questions. If your recipe calls for yeast, how must baking powder do you us for the almond/coconut flour blend? I am not clear on the add one egg for blended flour. Do I add one egg for each cup of almond/coconut flour blend?
You can use baking powder as a 1 to 1 ratio for yeast. For the almond/coconut blend. If you are swapping out the almond/coconut flour blend for white flour in a recipe start out by using the same amount of eggs the original recipe calls for. Once you have all you ingredients together test you dough. It it feel like it is coming together into a smooth ball you most likely have the right texture. If you are creating your own recipe using the almond/coconut flour blend start out with 1-2 eggs for every 1 cup of flour. Then test the texture after everything is combined.

Yes hazelnut flour can be substituted 1 for 1 with almond flour. The biggest difference is hazelnuts have more fat and less protein than almonds so when they are used as flour the baked goods come out slightly crumbly. If a recipe calls for 1 teaspoon of baking soda, then you'll need 4 teaspoons of baking powder not 1 tablespoon. 1 tablespoon = 3 teaspoons. So it'll be 1 tablespoon + 1 teaspoon of baking powder to replace 1 teaspoon of baking soda.

Once everything is mixed check the dough if it seems dry or not holding together and another egg or small amounts of liquid as needed.

Dairy milk including skim milk are not low carb or keto. Your best choices for low carb milk are coconut milk or almond milk. Premade dairy creamers are not low carb however heavy cream and whipping cream are low carb

I am making chocolate fudge pudding cake which does not use eggs. If using almond/coconut flour blend - would I just increase the oil and milk instead? What about adding Xantham gum - does that help at all?
if you are substituting the almond/coconut flour blend for traditional flour you will need to increase whatever liquids (ex milk, oil etc) however you will not need as much liquid as you would need if using only coconut flour. Start out with the amount of liquid called for in the recipe and gradually increase the liquid in small amounts until the right consistency. Xanthan gum is my favorite binder. Sometimes you do not need it. It all depends on the amount of eggs and/or other binding agents you may have in your recipe.

Coconut flour is very dense and will not rise even when using yeast. I use yeast in some of my bread recipes because it helps the bread taste more like traditional bread. I don't use almond flour very much anymore but yeast will work with almond flour as long as you mix it with some vital wheat gluten

Unfortunately coconut flour is a very heavy flour and does not rise very well at all. You have to use LOTS of eggs and liquid when using only coconut flour so it makes the dough or batter thick and heavy. The only way for it to rise is to add yeast and gluten or mix it with almond flour. Even then it's not a guarantee that the baked good will rise as high as a traditional baked good. Coconut flour is delicious but not the best if you are wanting a "tall" baked good.
As a general rule you can replace almond flour with lupin flour however when combined with coconut flour it may change the taste and texture. You will most likely have to use a little bit more liquid if you choose to use lupin flour with coconut flour . I have never tried lupin flour mixed with coconut flour so I can't speak from experience
Cake flour is basically a form of wheat flour that has a lower protein level which causes it to be lower in gluten compared to other wheat flours. Coconut flour is very high in fiber which makes it very low in net carbs and completely gluten free.
I make my own almond flour with raw unsalted almonds and the coconut flour I use is by Anthony's and contains no salt. If you buy a mix that contains salt either omit or reduce the salt that is called for in a recipe
Unfortunately coconut flour can not be substituted with any other flour. Coconut flour is very absorbent so requires much more liquid and binder than other flours
Hi Janet, I'm new to your channel, but LOVE the info that you provided. Quick question, if an original recipe calls for both Baking SODA & Baking POWDER, should we just omit the Baking Soda & only double up on the Baking Powder?
Welcome to our RUclips community. 🙋Yes I would definitely omit the baking soda in my experience baking powder works best. You can double up on the baking powder as long as it's not more than a total of 1 tablespoon. You won't need more than 1 tablespoon and if you had more than 1 tablespoon you would have an aftertaste.
@@cougmom50 Xanthan gum is used for 2 purposes. It's used to hold the ingredients together the way gluten would in traditional flour. It's also used as a thickener in sauces, gravy etc.

Yes you can. I personally have had the best results using baking powder especially when using coconut flour but if you want to use baking soda and vinegar or citrus you certainly can. To do that use 1/4 tsp baking soda + 1/2 tsp vinegar or lemon juice for every teaspoon of baking powder

The total of all the liquid you use in the recipes not counting the eggs should be equal in cups/tablespoons to the amount of flour used. For example if you have 1 cup of coconut flour your total liquid should be 1 cup for starters. Thank you for the great tips! I have been experimenting with coconut flour for a while and it always came out too dry even if I tried to eyeball measurements. You also make a great point that not all recipes can be successfully substituted with coconut flour...I was just being stubborn haha!
You're welcome. Yes coconut flour is very tricky to work with. I just recently in the past year or so felt comfortable using it as a main flour. I absolutely love it now but had A LOT of bad experiences lol. :)

I wish I had seen this video before I started my recipe. I am a diabetic type two so I’m always looking for healthier alternatives and better versions of the same great foods and recipes that I already love.
I wanted to make a keto, friendly pizza. I figured using 2 cups of coconut flour in replacement for 2 cups of all purpose flour would be just fine. I learned the hard way just as you did. It came out into a ginormous mess, and I was not able to get a dough that I could roll out or knead or rise. Thank you so much for this video looking forward to trying these tips and methods.

I like the texture of most baked goods with coconut flour. If I need to add something to give it a a different texture I add just a bit of golden flax meal. I love your coconut flour recipes. On my cheddar biscuits I will add almond flour or golden flax meal for that craggy feel. Although your high fat coconut dinner rolls are lip smacking good. You put a lot of work into these recipes and I really appreciate it.

I have learnt these tips over time and experiments. But I should say you did create a great video and good for anyone who is new! Great summary. I found a recipe of a bread with 2 cup buckwheat. I want to substitute 1/2 cup of buckwheat with 1/6 of coconut flour. I don’t like almond flour etc because they both need lots of binders but buckwheat doesn’t need that. By the way I think your example isn’t correct: 1 cup of flour replaced with almond and coconut should be:3/4 almond and 1/12 coconut flour (because 1/4 remaining flour should be 1/12 coconut flour)

Ah! That's what I didn't do! I made your keto pound cake, and it's wonderful, but I didn't let the batter rest before putting it in the pan - so THAT's why my bread loaf pan was way too big! I used a Souper Cube and still got 12 slices out of it which are perfect for an after meal treat - but next time I make it I'll let it rest and see how that does. Thank you Janet!

I recently had my annual check up with my G.P. and heart Dr. First told me I am pre-diabetes and the other said I had some more heart trouble. It's always best to use eggs when dealing with coconut flour. however if you'd like you can check out my article on egg substitutes that work with coconut flour. Keep in mind any changes to recipes can effect the taste and texture. Also keep in mind not all recipes can have egg substitutes. My husband is diabetic so we prefer a low carb diet. However since I am hypoglycemic and have to have a certain amount of carbs in my diet to maintain my weight we are not strict keto in our personal diet. As for gluten free, unless you have gluten sensitivity it is not necessary to be gluten free on a keto diet it's just a matter of your personal preference

I have a couple of questions. If your recipe calls for yeast, how must baking powder do you us for the almond/coconut flour blend? I am not clear on the add one egg for blended flour. Do I add one egg for each cup of almond/coconut flour blend?
You can use baking powder as a 1 to 1 ratio for yeast. For the almond/coconut blend. If you are swapping out the almond/coconut flour blend for white flour in a recipe start out by using the same amount of eggs the original recipe calls for. Once you have all you ingredients together test you dough. It it feel like it is coming together into a smooth ball you most likely have the right texture. If you are creating your own recipe using the almond/coconut flour blend start out with 1-2 eggs for every 1 cup of flour. Then test the texture after everything is combined.

Yes hazelnut flour can be substituted 1 for 1 with almond flour. The biggest difference is hazelnuts have more fat and less protein than almonds so when they are used as flour the baked goods come out slightly crumbly. @@Iamsimplyfree I wouldn't double the salt. You might want to increase it just a little just be careful.
If a recipe calls for 1 teaspoon of baking soda, then you'll need 4 teaspoons of baking powder not 1 tablespoon. 1 tablespoon = 3 teaspoons. So it'll be 1 tablespoon + 1 teaspoon of baking powder to replace 1 teaspoon of baking soda.
Yes this is true but I never use more than 1 tablespoon of baking powder because you will start to taste the baking powder if you use too much

Once everything is mixed check the dough if it seems dry or not holding together and another egg or small amounts of liquid as needed.

Dairy milk including skim milk are not low carb or keto. Your best choices for low carb milk are coconut milk or almond milk. Premade dairy creamers are not low carb however heavy cream and whipping cream are low carb

Splenda can be used 1for1 just like sugar. It tastes and browns pretty much just like sugar

I am making chocolate fudge pudding cake which does not use eggs. If using almond/coconut flour blend - would I just increase the oil and milk instead? What about adding Xantham gum - does that help at all?
if you are substituting the almond/coconut flour blend for traditional flour you will need to increase whatever liquids (ex milk, oil etc) however you will not need as much liquid as you would need if using only coconut flour. Start out with the amount of liquid called for in the recipe and gradually increase the liquid in small amounts until the right consistency. Xanthan gum is my favorite binder. Sometimes you do not need it. It all depends on the amount of eggs and/or other binding agents you may have in your recipe.

Coconut flour is very dense and will not rise even when using yeast. I use yeast in some of my bread recipes because it helps the bread taste more like traditional bread. I don't use almond flour very much anymore but yeast will work with almond flour as long as you mix it with some vital wheat gluten

I don't use tapioca flour. I focus more on low carb flours. Tapioca flour spikes my husband's blood sugar.

Unfortunately coconut flour is a very heavy flour and does not rise very well at all. You have to use LOTS of eggs and liquid when using only coconut flour so it makes the dough or batter thick and heavy. The only way for it to rise is to add yeast and gluten or mix it with almond flour. Even then it's not a guarantee that the baked good will rise as high as a traditional baked good. Coconut flour is delicious but not the best if you are wanting a "tall" baked good.

You can make it taste more like wheat products by adding nutritional yeast and yeast.
Can you use Lupin flour with coconut flour to forgo almond flour?
As a general rule you can replace almond flour with lupin flour however when combined with coconut flour it may change the taste and texture. You will most likely have to use a little bit more liquid if you choose to use lupin flour with coconut flour . I have never tried lupin flour mixed with coconut flour so I can't speak from experience

Cake flour is basically a form of wheat flour that has a lower protein level which causes it to be lower in gluten compared to other wheat flours. Coconut flour is very high in fiber which makes it very low in net carbs and completely gluten free.

Keep the recipe the same. Once everything is mixed together check your dough. If it's not holding together then add the egg as needed.

I make my own almond flour with raw unsalted almonds and the coconut flour I use is by Anthony's and contains no salt. If you buy a mix that contains salt either omit or reduce the salt that is called for in a recipe

Welcome to our RUclips community. 🙋Yes I would definitely omit the baking soda in my experience baking powder works best. You can double up on the baking powder as long as it's not more than a total of 1 tablespoon. You won't need more than 1 tablespoon and if you had more than 1 tablespoon you would have an aftertaste.

@@cougmom50 Xanthan gum is used for 2 purposes. It's used to hold the ingredients together the way gluten would in traditional flour. It's also used as a thickener in sauces, gravy etc.

Yes you can. I personally have had the best results using baking powder especially when using coconut flour but if you want to use baking soda and vinegar or citrus you certainly can. To do that use 1/4 tsp baking soda + 1/2 tsp vinegar or lemon juice for every teaspoon of baking powder
