I HATE almond flour!!!!! I am on the hunt for a baking mixture that replaces almond flour cup for cup because there are so many wonderful recipes out there. But as soon as I see almond flour, it's a hard pass for me. I tried a bread recipe with lupin flour, vital wheat gluten and oat fiber. It was ok for bread because you can load up the bread with deli meats and mustard and the bread taste is less prominent. But for sweet baked goods - I don't think it would be that great. Anyway, I appreciate your video and if you find such a blend of alternatives, please let me know!!
Of course!! I totally agree with you! Almond flour is just NOT good. I’m currently working on a pancake mix: I used almond flour and it turned out to be crumbly and too heavy.. I will let you know if I find something better 😊

if flaxseed is bitter, it means it's rancid and should be thrown out. ground flaxseed goes rancid very fast. it's better to have the whole flax seed and grind it yourself. fresh ground flaxseed is slightly nutty and very mild taste
Psyllium husk/powder is very, very different from xanthan gum. Psyllium husk is excellent in breads and rolls and helps give them the bread-like texture. I use xanthan gum for thickening gravies and sauces 😊
Psyllium husk is not good for long term health….maybe it does help with stomach issues etc, but it’s absolutely loaded with a silent assassin that is slowly and cumulatively poisoning you called oxalate.
I love your goals on your ABOUT tab. God bless! I use coconut flour for breading and frying pork chops as well as in some desserts. I love almond flour WITH oat fiber. Takes the baked goods up 10 notches as far as texture. Oat fiber is a godsend! Whey protein is good for donuts. Great review😍
An excellent summary of keto baking goods. I've tried about half of them. I've found Almond flour and Coconut flour to be too crumbly for bread. Adding lots of Xanthan Gum helps, but then the dough won't rise. A good bread recipe that uses these ingredients can be found in the RUclips Video The Most DELICIOUS Keto Bread! The Closest Recipe to White Bread! (Lupin Flour Keto Bread) by I Don’t Sugar Coat. It uses Vital Wheat Gluten, Lupin Flour, Oat Fiber (GLO). I've used it for loafs of bread, sandwich buns and hamburger buns. Being able to eat sandwiches again is a huge treat.
Vital wheat gluten is generally used in VERY SMALL amounts to improve the texture of breads (and sometimes cakes) mixed with a low gluten or lower protein flour to improve elasticity. I've never heard of it being used as a base flour. One way of upping the protein content of bread is to cook and drain some Quinoa and add it to the dough mix. Half a cup raw (then cooked) added in 500g of bread flour is great. High Fibre Loaf (Makes 2 1LB tins) 1/2 cup raw Quinoa - pre soak for I hour, rinse and drain 500g bread flour 1 1/2 TSP salt 10 ml sugar 10ml yeast 1/2 tsp dough enhancer 1 rounded tbsp Psyllium 1 tbsp nut oil 350 ml water 1 egg 2 tbsp milk powder (opt) Other seeds optional Use about half cup water to cook the Quinoa in the M/W for 10 min on high. Put water, salt, egg, oil and sugar in the mixer. When the Quinoa has cooled, add the other ingredients to the wet ones and mix till combined. Add the Quinoa and make sure the mix is not too dry. Mix until gluten is activated. Rest till doubled, shape, rise again and bake as usual. 190c for about 25 min. If it gets too brown on top, put a baking sheet on the rack above it. This comes out really tasty, fluffy and light. Not Keto but an improvement on plain white bread, taste wise and health wise. I like using peanut flour for pancakes, slight nutty flavour, and fine powder. They come out fluffy and light.
You can use the coconut flour and flax to make hot cereal/porridge (similar to cream of wheat), or even an oatmeal if you add hemp hearts and/or coconut shavings.

If it says "nut free" it usually still has coconut flour, which I don't understand why they would assume it is nut free when it has cocoNUT in it. The FDA considers coconut to be included in with tree nuts. So you recommended some options that I'm going to try, and good advice on how to use them. Big help!
I made keto noodles with lupin flour, egg yolk powder, xanthan gum, sodium alginate and sodium lactate. THAT is a total game changer for pasta! I made what the recipe called for 98 calories and 1 carb for a big bowl full, I love pasta so it made 2 nice size servings. It beats 42 carbs and over 200 calories for 2 ounce serving of pasta. I split the recipe with my son in law, I didnt tell him how I made it until he was done eating, he said it was good!
@@sandwichgrub I used a different lupin flour, Aviate, the noodles werent grainy at all. Not all lupin flours are the same. I bought it because someone on YT said it didnt have the bitter taste. I guess that would be another great quality of Aviate along side it not being grainy.

In Japan, Soya fiver powder ( remaining part after squeezed Tofu) is popular to use for KETO recipes. And also Conjac powder is used like psyllium powder. But we don’t have coconut flour..I have never seen in a supermarket in Japan..I really want to try to use coconut flour..!

Flaxseed have a bitterness because once you grind it oxidastes, it also loses all its properties. You need to grind as u go, also golden have a more mild flavor.
I hate coconut flour and almond flour for keto baking! I also don't like xanthum gum because it can be slimy. I like lupin flour, oat fiber, vital wheat gluten, and pecan flour. I also find that if I have to use almond flour then I put in the blender or food processor so it can have a smoother texture. Thanks for sharing different alternatives.
A review at high end market I saw many, many alternative flour options. I also saw baking mixes made by Swerve! I used almond flour in a carrot cake recipe and was perfect. I've also found recipes using riced cauliflower instead of flour! Just made a pizza recipe that was pretty good!

Hi OMG! Flaxseed can turn rancid and become bitter. Have you tried more than one bag or brand? Also, one correction: you stated that if a recipe calls for one cup of almond flour, you can do half a cup of almond and half a cup of lupin flour. Now, lupin flour is very absorbent, so you cannot substitute lupin flour cup for cup with almond flour. The ratio would be more like using a half cup of almond flour and one-quarter to three-eighths cup of lupin flour. The ratio is to use about 40% less lupin flour, I believe, which is more in the range of substituting cup for cup of lupin flour for coconut flour because their absorbency is similar. I am glad that I stumbled upon your channel! Great job!
I cannot consume lupin flour. It gives me awful gastro problems. I substitute cassava flour. Works best for me. I can't use almond flour as my son is allergic. I'm surprised you didn't mention cassava flour.

Wheat gluten is very inflammatory and a lot of people have allergies, myself included. Inflammation is the root of a lot of health problems and diseases as well as hinders weight loss. Also oat flour is not keto because of the high carb content. Its actually more lower carb or Paleo. Great video. Thanks for letting us know what is out there.
Its really nice that there are folks that do not like the gritty texture of almond and coconut flours. Some folks have some bizzare tastes when it comes to texture, not just taste. Its been almost 3 mos into my diabetic diet and the hunt for low carb recipes. As many folkds here have stated, as soon as i see coconutt or almond flour i usually end up passing/not watching the videos. I have watched so many and have tried so many recipes, its very discouraging. Gkad to have found reviews like this, and other non-coconut/almond based recipes. Hopefully this week i can get the ingredients to start making some more realistic low carb foods... and not these gritty crap look alikes.
What would you suggest I use instead of cornflower please? I’ve seen a lovely lemon cheesecake recipe but it contains cornflower to bind, which has too many carbs. I simply despise both Coconut and almond flour. I reside in the UK but can get many of the ingredients on Amazon. Thank you very much.

I don’t trust the oats because they probably have carbs, oat fiber that’s low carb? maybe. That would be great because then we can make oatmeal cookies
Im sorry to hear since keto my wife has gone through almost every flour I can find, try flex seed, coconut, protein power and Sunflower seed flour. If you can eat Sunflower seed they make SunButter (peanut butter) as well. An Lankanto makes chocolate SunButter. Hope this helps.

You started to mention an optional replacement for vital gluten...what was that? I've been researching options for this and collagen/gelatin seems to be the only readily available protein that has stretch. Thoughts?
@@sandwichgrub I have used Lupin in several new recipes I have been trying. It's by far the best flour replacement I've found. I've just been trying to find something to mimic the pull/texture of gluten. There are similar proteins in other grains but they aren't available commercially yet.

@@sandwichgrub I just made up chaffles with THM mix. I’m happy with the taste. Although the whole mix has 2 Tbs of almond flour, I didn’t taste the almond. But I have a multi nut mix with a mixture of nuts. I’ll try that next. I’m on the hunt for anything but almond flour. Update on the THM effort for a chaffle. Taste was not eggy, I used egg white, chaffle was very dry. Next time I’ll use Olive oil Mayo. 1 T. Experimenting.
I use Lupina brand lupin flour. It's not bitter at all. I saw a review of 3 brands, he said the Miracle Flour was bitter, and there was another, I forget the name. 2 were great, 1 was bitter. The other non-bitter lupin was the only one that said "sweet white lupin" on the label, if that helps. I'm still experimenting with baking. Mixed results. But I use lupin to dredge meats in to fry/oven fry. It's great, you can't tell by the taste that it's not wheat flour. In baking it tastes the same, the issue is getting a good texture. I'm going to try some of the recipes I recently found, that use paneer. I get mine from Netrition, it's the best price. I wait until I want a LOT of stuff, so I can get free shipping. Lupin flour keeps very well, none of mine has gone rancid or anything.
the only one on your list that's actually an alterative to almond flour is Lupin flour. All the rest are binding and fillers that can only be used in addition to almond flour or coconut flour.

I actually did that too.. I think it was good but a bit grainy. I have to play with the recipe a bit more and see if I can somehow improve it ;)

If you don't like the bitterness of regular flax meal, try golden flax meal which is not bitter. I much prefer the golden flax.

I hate coconut flour and almond flour for keto baking! I also don't like xanthum gum because it can be slimy. I like lupin flour, oat fiber, vital wheat gluten, and pecan flour. I also find that if I have to use almond flour then I put in the blender or food processor so it can have a smoother texture. Thanks for sharing different alternatives.

A review at high end market I saw many, many alternative flour options. I also saw baking mixes made by Swerve! I used almond flour in a carrot cake recipe and was perfect. I've also found recipes using riced cauliflower instead of flour! Just made a pizza recipe that was pretty good!

Oh yes! It’s also called carbalose four! I made pancakes 🥞 using this flour and it was the closest thing to a real pancake

Hi OMG! Flaxseed can turn rancid and become bitter. Have you tried more than one bag or brand? Also, one correction: you stated that if a recipe calls for one cup of almond flour, you can do half a cup of almond and half a cup of lupin flour. Now, lupin flour is very absorbent, so you cannot substitute lupin flour cup for cup with almond flour. The ratio would be more like using a half cup of almond flour and one-quarter to three-eighths cup of lupin flour. The ratio is to use about 40% less lupin flour, I believe, which is more in the range of substituting cup for cup of lupin flour for coconut flour because their absorbency is similar. I am glad that I stumbled upon your channel! Great job!

I cannot consume lupin flour. It gives me awful gastro problems. I substitute cassava flour. Works best for me. I can't use almond flour as my son is allergic.

I would say Lupin flour
Wheat gluten is very inflammatory and a lot of people have allergies, myself included. Inflammation is the root of a lot of health problems and diseases as well as hinders weight loss. Also oat flour is not keto because of the high carb content. Its actually more lower carb or Paleo. Great video. Thanks for letting us know what is out there.

Its really nice that there are folks that do not like the gritty texture of almond and coconut flours. Some folks have some bizzare tastes when it comes to texture, not just taste. Its been almost 3 mos into my diabetic diet and the hunt for low carb recipes. As many folkds here have stated, as soon as i see coconutt or almond flour i usually end up passing/not watching the videos. I have watched so many and have tried so many recipes, its very discouraging. Gkad to have found reviews like this, and other non-coconut/almond based recipes. Hopefully this week i can get the ingredients to start making some more realistic low carb foods... and not these gritty crap look alikes.

You can.. but you need to add almond flour or another flour to combine with. If you don’t, then the mix will be bitter

I’ve seen a lovely lemon cheesecake recipe but it contains cornflower to bind, which has too many carbs.
I simply despise both Coconut and almond flour.

Sorry, I only know of “cornflower”. We use it to make a roux for sauces and to thicken gravy.

Im sorry to hear since keto my wife has gone through almost every flour I can find, try flex seed, coconut, protein power and Sunflower seed flour. If you can eat Sunflower seed they make SunButter (peanut butter) as well. An Lankanto makes chocolate SunButter. Hope this helps.

@@sandwichgrub I have used Lupin in several new recipes I have been trying. It's by far the best flour replacement I've found. I've just been trying to find something to mimic the pull/texture of gluten. There are similar proteins in other grains but they aren't available commercially yet.

@@sandwichgrub I just made up chaffles with THM mix. I’m happy with the taste. Although the whole mix has 2 Tbs of almond flour, I didn’t taste the almond. But I have a multi nut mix with a mixture of nuts. I’ll try that next. I’m on the hunt for anything but almond flour. Update on the THM effort for a chaffle. Taste was not eggy, I used egg white, chaffle was very dry. Next time I’ll use Olive oil Mayo. 1 T. Experimenting.
I use Lupina brand lupin flour. It's not bitter at all. I saw a review of 3 brands, he said the Miracle Flour was bitter, and there was another, I forget the name. 2 were great, 1 was bitter. The other non-bitter lupin was the only one that said "sweet white lupin" on the label, if that helps.
I'm still experimenting with baking. Mixed results. But I use lupin to dredge meats in to fry/oven fry. It's great, you can't tell by the taste that it's not wheat flour. In baking it tastes the same, the issue is getting a good texture.
I'm going to try some of the recipes I recently found, that use paneer.
I get mine from Netrition, it's the best price. I wait until I want a LOT of stuff, so I can get free shipping. Lupin flour keeps very well, none of mine has gone rancid or anything.
the only one on your list that's actually an alterative to almond flour is Lupin flour. All the rest are binding and fillers that can only be used in addition to almond flour or coconut flour.
