    Great video! Thanks for the shout out! I have a steam injection pellet grill video coming out soon. The key is raising wet bulb temp as you mentioned. Winston Cvap, alto shaam etc have already discovered this for commercial ovens. Anova is now popularizing it for the residential market. Higher wet bulb = less evaporative cooling = faster cook times, no stall, higher moisture retention and generally better bbq. Myron Mixon has already brought this to the bbq world to some extent with his H2O smokers.

      Ooh I'm looking forward to this video! I feel like hot holding brisket in an oven just isn't the same because of the moisture loss through the vents. Injecting steam into your smoker was a genius move brother! Get yourself a patent before corporate America picks up on it. Good luck!

      I think a bunch of us are waiting for the video where you inject steam into a pellet grill. If it actually succeeds, THAT'S going to blow up bbq youtube lol.

    Big fan of Steve and his channel. When I saw him do this I thought same thing it’s great idea. Problem I think is steamers are notorious for breaking down. The cost of implementing a reliable long term steam option would probably be very expensive for the consumer

      Yea I've gone through a few steamers already. Need a simpler option like controlled heated water vapor.

    When smoking salmon with a Big Chief or Little Chief smoker the instructions recommend soaking the wood chips for 20 mins first to keep from burning up. But IMO it does make the fish smokier too.

    You realize you add this moisture feature to the pellet grills. The price is gonna keep going open up.

    Hmmm .. moisture and pellets don’t mix. I understand the concept; however, I can see pellet grills augers getting log jammed with swollen pellets. A potential candidate is the master built gravity feed units .. not a pellet model. But just my opinion

      Maybe gravity feed is a better candidate. It wouldn’t surprise me if engineers could figure it out.

    I can see pellet grills being used as a kindergarten stepping off point for first time smokers. They are way overpriced. They produce very little smoke flavor. They are horrible at grilling. I think they should be renamed as an outdoor oven. True smoke requires live fire management. There are unfortunately no short cuts to perfection. Great video as always. Cheers!

      I started with a pellet grill. But yes, cooking with live fire is so much more fun!
