  • I've been asked how I make my mashed cauliflower so that it turns out so silky smooth. The secret is a couple of tools that will I believe come in very handy in the kitchen: a potato ricer and an immersion blender. The adjustable ricer I have has me thinking about a way to use it for keto pasta (one of the many things I'm working on).     Yes - I realized that I refer to cauliflower as "broccoli" a couple of times in this video. I filmed this later in the day after accidentally knocking myself out of ketosis with the Natural Ovens bread test, so I'm going to claim "brain fog" as my defense. 😉

      1 recommendation if I may say so, a cube of chicken bullion or some low sodium chicken broth if you dont mind waiting for more water to boil out. Oh and some garlic of some kind. Crushed is best, powdered is easiest.

      Both good suggestions. This video was more about the tools/technique than the ingredients. I always encourage people to have fun experimenting with the "extras".

      Also as a second comment I’ve cooked my cauliflower and bone broth chicken bone broth and did pretty similar stuff to what you did with your cauliflower and it just added an extra depth of flavour so you might want to try that it’s pretty cool thank you for all your tips

    If you add 1 or 2 cups of beef bone broth and a tbsp of tallow to the water that you're boiling the cauliflower in, I personally find that gives the califlower a more potato like flavor

      What a great idea! I think you're right... Beef broth and tallow seems like it would impart some tones similar to potato. Everyone always says chicken broth but I think you're onto something.

      What a great idea, with the tallow, hey would you know if keto allows zucchini/acorn squash or spaghetti squash?! I would like to be eating some of these vegetables, but I can't get an answer..maybe you know, if you do please let me know I would appreciate it so much, thank you ☺️😊

      @@skylarbix7912 I eat spaghetti squash and zucchini. They are not very carb heavy and add variety and texture to dishes. Allowed is such a funny word. If you eat it and have the results you want and feel good about your choice, it's "allowed." Enjoy keto!

    I just made this and it's WONDERFUL! I don't have a fancy rice masher like you have but I do have a rice masher on a handle like a potato masher but didn't use either. I put the drained cauliflower in my food processor and let it do it's thing for about a minute and then poured it in the pot with the butter and cream cheese. Then added the salt and pepper. Never had to whip out my immersion blender either but I have one just in case. Thank you for the recipe and tips sir! I will be doing two heads of cauliflower next time..this stuff is that good.

    Great method using the ricer, Amazon, here I come! When my daughter was little (back in the day, LOL), she loved cauliflower. but didn't like the name...so I called it white broccoli and she ate it up. Think I'll have some creamy mashed white broccoli with dinner tonight!

    Thanks Steve, I won't mention the "b" word (oh look I just did). I just use my immersion blender with butter, sour cream and sometimes even mayo, but I will try with the cream cheese. I didn't realize that cream cheese has a binding or thickening effect. Good to know. Such a good teaching coach.

    So that's what that thing is I found recently while helping clean out my grandma's house! A ricer! I was wondering about that contraption.
    Another super simple method for super smooth cauliflower mashed "potatoes" for folks without a ricer is to use two 12oz bags frozen cauliflower (Walmart brand is cheaper than fresh) microwave in the bag per instructions. Dump very hot fully cooked cauliflower in food processor along with 1/4-1/2 tsp xanthan gum, an ounce or so of grated parmesan (not the powdered stuff in a jar) salt & pepper to taste. Run until silky smooth.
    Cleanup and having to do a large enough batch to fill the food processor are the downsides though. I will definitely try the ricer and stick blender method with frozen cooked cauliflower next time for easier cleanup and smaller batches. I look forward to easier cleanup! Great ideas /innovation!

      Honestly, I have been making these for years, even before keto. I skip the ricer, use the immersion blend solely. The key to smoothness is making sure to cook the cauliflower til it is tender. Thanks for the video and tips!

    Mashed cauliflower is a staple in my house.😋 Using a ricer is a good idea, but I simply use my food processor. My recipe also calls for butter and cream cheese, salt and pepper, and a few dashes of Cholula hot sauce. The hot sauce doesn't add heat, but it makes the flavor of the cauliflower pop!
    If someone overcooks their cauliflower, even slightly, the moisture can be removed by placing a kitchen towel on the counter, covering it with paper towels, adding the cauliflower, then rolling it up to get out the moisture. It works like a charm to make thick creamy mashed cauliflower.

    My husband just started a low carb Keto diet and he has not been happy with my "mashed" cauliflower. I watched your video and quickly ordered a immersion blender lol ..I successfully made them tonight and oh my gosh they were so darn good!!     Another good way to thicken this up is to not boil the cauliflower, but roast it (without oil). This will help drive off a lot of the moisture, and add a nice depth of flavor if you let it get some browning in the oven. The rest of your recipe (cauliflower cooking method aside) is pretty much how I make mine, and the smoothness is a huge improvement over other methods I've tried (or gotten from grocery store mashed cauliflower). Always delicious.

      jonathan lustenader I microwave mine for about 4 or 5 minutes without water, with a towel on top. The towel catches the moisture from the steam as the the cauliflower cooks.

    My ricer and immersion blender were waiting for me when I got home. Last night we had a package of store bought mashed cauliflower. My wife couldn’t eat it. But, she LOVED the ones I just made using your recipe! Thank you. By the way, she eats a lot of mashed potatoes and said that she would actually prefer to have these.

    These are great ideas. I don't have a ricer like that so I use the ninja and mine come out nice and smooth. A couple things I've found to improve the flavor of mashed cauliflower are to roast the cauliflower instead of steaming or boiling. It helps dry it out and make it less watery as well and gives it a little more of an earthy flavor. Another tip from a recipe book I have is to also boil some celery root and then mix the two after they're cooked.

    I love cream cheese for lots of things. I miss eating potatoes as i was diabetic.I used to eat mashed potatoes at least 4 times a week. When i went to the doctor the other day she worte in my chart i had a history of diabetes. This is a great alternative recipe for potatoes. Will give it a try.

    I steam the cauliflower then purée in a food processor. Next into a tea towel and squeeze out as much liquid as I can. Back into the pot and add butter, salt pepper and cream to the desired consistency. I’m going to try your way out next time. It looks delicious.

      If you have a salad spinner, I recommend giving the florets a whirl in it after boiling. This will spin off some of the water and further improve the texture.

      The older (and hopefully more stoic) I get, the more I wonder why people allow themselves to get so bent out of shape about little things. Things like an ingredient someone chooses to use, or whether they want to be slightly "dirty" keto, or whether I pronounce Instant Pot "Instapot". 😄

    These look awesome! Thanks for explaining the reason for cream cheese. I have a SERIOUS aversion to the stuff, always have. 54 years later I doubt it’s gonna go away and I have always wondered what the purpose of cream cheese is in so many keto recipes. Assuming it was just for fat, I have tried many substitutions but so far nothing has worked the way I wanted it to. Now that I know about the guar gum I think I will experiment with sour cream and Xanthan gum or something like that. Thank you!

    Another way of thickening it up is to put it in a casserole dish along with any add ins you like then baking at about 275. The time will depend on how thick you want it and how thin it is to begin with. It’s perfect every time (unless you forget it’s in the oven ✋🏼). It will take longer so it is a plan ahead kind of thing.

      this is a good suggestion especially if you are cooking a meal with multiple components. You can make the mash ahead of time and put it in the oven to finish while other dishes are being made fresh!

    I cook my cauliflower in a steamer, use an old fashioned potato masher or my hand mixer, add butter, sour cream, couple of tablespoons powder/flaked potatoes, salt, pepper...stir...and done. Won my “meat and potato “ hubby (who didn’t like cauliflower) over! First time I served it, I didn’t tell him...he asked if there was anymore mashed potatoes! Win! I change it up by adding cheddar cheese, bacon bits, garlic, green onions, or whatever.

    I love Cauliflower mashed potatoes. I made them a few years ago, can't remember whose recipe it was but it was amazing. These look so good. Will have to give them a go. I've got some riced cauliflower in my freezer I need to use up(homemade).

    My favorite thing to do with mashed cauliflower is add some heavy cream and cheddar and use it as a substitute for grits in Shrimp and Grits. I’m definitely going to try it your way! Can’t wait!

      Shrimp and Grits is one of my all time favorites- especially when I go down south! I will try your suggestion for when at home...but when in the south well... no can do!

      Andy Honestly, i make it differently every time. Sometimes I use sausage, sometimes I add cream and spinach, just depends on my mood. Just look up a shrimp and grits recipe that sounds good to you. If it calls for any thickener, I use Xanthan gum. Then I put it over the mashed cauliflower thickened with heavy cream and cheddar but I’m going to try the cream cheese like Steve did.

    Use the leaves sautee in pan with garlic. You can use the stem(after cooking) for faux potato salad.

    I use my mother’s secret for incredible mashed potatoes, but works equally well for mashed cauli; beat in an egg. Also imparts a hint of color, and some protein.

    I just found potato extract made by the Amoretti company. I am not a fan of cauliflower no matter how it is made, so I have used turnips, jicama, etc. However, no matter what vegetable you are mashing, it you want them to taste more like potaotes, this extract is really great. It is still not exactly like potatoes but it is closer. Then with butter, seasons, etc, they are a very nice alternative. I can even eat cauliflower with the recipe given here with the addition on a little of this potato extract. Next time, I am going to try using bone broth or tallow to the water before boiling like someone suggested below!! Thanks for showing us how to make this so creamy!

    You bet! Creamed cauliflower is delicious! I make mine boiled in chicken bone broth, same method, added fresh garlic, and sprinkle with parm cheese but use ghee with salt added. This also makes a fantastic mashed bake!

    Haven't tried the ricer method but I use my food prcessor and add butter, garlic powder and a couple of TBS of sour cream.

    I just throw my steamed cauliflower into my food processor, add seasonings and smoked cheese, it's delicious! I will definitely have to try the cream cheese, yum :)

    Wow! I can't believe I didn't see this video when it was released. I love cauliflower but not when it's trying to be something else.

    That's how I make mine. Sometimes I add bacon and cheddar and parmesan and throw it in the oven for twice baked.

    I make mine with heavy cream instead of cream cheese and I add several garlic cloves that have been sautéed in butter. I then blend it all in my food processor. It’s to die for. :)

    You can add an egg and some lupin flour, pipe it into French fries shape, freeze it then bake it and you’ll get yourself some keto french fries, i’m gonna try doing that tomorrow 😉

    Just made this for the first time! I was skeptical because it's so simple but it's perfect! Not nearly as "cauli" tasting as other cauliflower mash I've had or made.

    These were great! I chopped up some bacon and fried it in the pan before adding the mashed cauliflower. And then if course the cream cheese, butter and cheddar cheese.

    The best recipe I've ever made. Thank you Steve. Of course, I guilded the lily and made my recipe with cheddar cheese and bacon bits (hatch chili flavored countrt bacon from the butcher shop). I also boiled the cauliflower in beef bouillon for extra flavor to match my grilled steak

    Just tried this with Mississippi pot roast (minus peppercorns) on top. Amazing is all I can say. Couldn't tell I was not eating potatoes.

    I've always relied on a potato ricer for the smoothest, creamiest mashed potatoes. It's good to know that i can still give ut a workout now and then. Also, I love the beef bone broth idea. I live alone, so doing up a whole head of cauliflower would be way too much for me. Im going to try this basic method with the frozen veg for now, before trying to do something potentially life-threatening, like take it to a big family dinner.

    Was curious to see how you make your caulimash. My absolute favourite seasonings are garlic, butter and Parmesan cheese. Our fresh cauliflowers are super expensive, but I buy a bag of frozen, steam it and it works just as well.

    Hi. I would like to share my fix for Mashed Cauli . I take 2 Birdseye Mashed Cauli and microwave them till done. Put them both in a bowl and mix in 2 Herb-Ox Sodium Free chicken bouillon packets, some garlic powder and 1/2 to 3/4 C. Sharp Cheddar Cheese. Top with Keto gravy if you like. Works for me. 👍🏼

    Actually , I do mine the same way, and actually use garlic and herb seasoned cream cheese! That’s how I made mashed potatoes, too. If I want to be real honest, I think I added at least 4 different dairy products in my mashed potatoes/cauliflower. Milk, butter, cream cheese, and sour cream or plain yogurt 😂 if I was out of yogurt or sour cream, then I used mayo. Cream cheese may be “over used” but it certainly sits at the head of the table at my house 🏡 Thanks for sharing, Steve.
