There are some recipes which recommend putting skewers in the panettone and hanging it upside down over a large bowl or pot when it comes out of the oven. This may solve my sinking problem ! its so good I'm making it again today.

I love this bread and make it every Easter. We just call it Easter Bread. The friend who gave me her recipe years ago, her last name was Pasquale, so that's kind of a funny coincidence. I don't do the over night batter part, but may try that. Sometimes I add anise seed, and yes the dough is very sticky and takes a while to rise.

Usually all recipes are amazing and work perfectly, thank you for your recipes!!! But I just made it and it seems it has almost no sugar. The colomba seems more like bread. I believe that it should be much more sugar and butter. Next time I will almost double them. Also all famous brands nowerdays use honey as well as sugar and yolks instead of all egg.

I am making this now. Looks great all except for my DIY Colomba Mold...lol. Looks huge for the amount of dough I made. What are the dimensions of the mold in your video? It would be helpful.

Seen your video and checked with your reciepe. There is something I have noticed, you have said the biga needs to be prepared 16 hrs before and the reciepe says 1&1/4 cup of all purpose floor and 2/3 cup of water with yeast. This would be good for making biga, whereas you have used polish in the video with hydration of around 100. kindly clarify.

Why would you want a gluten free version? You do know gluten isn't bad for you, right? If you have that disease that makes you intolerant to gluten, that's understandable, but like 0.000001% of the population suffers from it. This gluten free phase westerners are going through is absolutely ridiculous.

Phillip Arpin ~ In an attempt to educate you, one out of 166 people have CD. And most of the time they are misdiagnosed over & over again. Many people suffer an average of 10+ yrs before they are diagnosed correctly. I suffered for a very, very ( did I say very?) long time - I was finally correctly diagnosed via biopsy (ordered from a Nurse Practitioner), when I was 52 yrs old. I am now 64 & doing great & following a strict gf diet! So no! It's not a "FAD" diet for me. Who the hell would follow these strict food guidelines willingly ..... ????
