Looks like restaurant served chicken there are no real Chinese restaurants where I live in NC. I grew up in NYC and use to eating in restaurants not so much take out shops. My question is, what oil for frying did you use and does the type of oil matter ? How much corn starch should be used ? And can you use this recipe for duck or do you have one for duck specifically ? Thank you for your easy follow recipes and instructions. Happy New Year
You're right this kind of chicken isn't served here in the US maybe NYC but I've never seen it where I live. I used canola oil. And used 2 tbsp of cornstarch. It depends on how much broth you have then you add cornstarch until it thickens up to your liking. I'm guessing you can prepare duck the same way but I'd suggest boiling the duck alittle longer since duck is a tougher piece of meat. Good luck and happy new year 🎉 🤗
Can I query why the other Chinese fried chicken recipe uses less water to parboil (3 x cups) versus this 10 x cup of water. Guess probably depends on the size of the chicken leg or entire leg quarter. Thanks.
Yes you can. But the reason I like to brine in plain salt and sugar is because it doesn't change the texture of the chicken some ingredients change the texture of the meat and I don't like that. But you can absolutely try using the Sauces alone I think those should be fine since there's no acidity in them. Good luck.

Totally depends on portion size. The chicken should be submerged in the liquid.
