    You're definitely right about Louisiana food being influenced by multiple ethnic groups. There are European, African, Native American, and Asian influences running through Louisiana at varying levels. It is that way all over the South and America in general. The South and especially New Orleans embraces that blending of ethnic food more than other regions. I say especially New Orleans because the people take a great deal of pride in knowing the origin of their foods down to who added what ethnic technique or ingredient to a dish.

    I think they expect red beans to be bright red instead of understanding that they're red as opposed to black beans or white beans or pinto beans. English baked beans are made by Heinz from white beans; the red color comes from the tomatoes Heinz cooks them in.

    Scotch egg is a hard boiled egg wrapped in sausage meat, with bread crumbs on top. SO GOOD

    As far as hot sauces we have the "Big Three" you stated, but also use Texas Pete's and Frank's @ the house as well.

    Y'all are right about the hot sausage Po' Boy , that & the soft shell crab are the only 2 Po' Boy's that I order.

    Watching Jolly in NO has me adding sausage and beans to my grocery list this week because I'm craving some jambalaya and some red beans & rice. My Dad was Cajun. I had never had either one until he and Mom got married when I was 10 and we went to visit his family in Gonzales, Louisiana (Ascension Parish). Now those are 2 of my favorite meals.

    Franks Redhot (my all time favorite hotsauce) is also a Louisiana brand I believe.

      The original company (The Frank Tea and Spice Company) was founded in Ohio, and worked with Estilette Pepper Farm in Louisiana to make the Frank's RedHot. The brand has since been sold multiple times and is currently owned by McCormick & Company, which is based in Maryland. So, up to you how much that qualifies as a Louisiana brand. lol

    Jersey does pizza fries and disco fries. Pizza fries have marinara and mozzarella. Disco fries is gravy and mozzarella.

    well the sista is right! the best new orleans "style" food will be at someone's house or or at the small dinner or small food store... and It does not have to be New Orleans .... just about any of the small mom and pop shops south of I10 will have great food ...

      Josh has a more Korean palate so he would be fine. Ollie on the other hand has a very British palate

    Aw, my Grandma and her entire family is from Monroe. She lived to 99, and passed a few years ago, but she introduced me to gumbo, and real southern food.
