    Meant to ask, can you substitute something else for the beer? Perhaps some type of stock?

    This looks awesome! I was always afraid to add a beer. I've cooked ham with a couple beers, but never pork and sauerkraut

    Do you drain and or rinse kraut?

      Do not drain or rinse. The "juice" with the sauerkraut keeps the pork from drying out and the brine that the sauerkraut is cooked in gives the kraut its flavor. You'd be selling yourself and the dish short if you rinse or drain the sauerkraut! You can make the sauerkraut yourself to control the flavor for: make a milder, less acidic "vinegar-y" brine (shredded cabbage pickled in brine is all sauerkraut is) or research which brand of kraut may be milder in flavor. All and all, keep the juice!

    So nothing wrong with the recipe except not enough sauerkraut.
