How to Make Perfect Caramel Popcorn | Cupcake Jemma

- After using it on my Rainbow Rocky Road video, a bunch of you asked me how to make Caramel Popcorn. Well the time is NOW! Here is my recipe for the stuff. You won't be able to stop popping!
Recipe
1 tbsp butter
1 tbsp oil
90g popcorn
1 tsp salt
100ml water
210g sugar
1 tbsp butter

(helpful tip: to clean the pot,boil some water,add to the pot and continue boiling until the sugar/caramel is dissolved)

People who have failed at this either didn't measure their ingredients, or mixed the sugar syrup too much causing it to crystalise. Add water to the pan then carefully pour the sugar into the centre. Start heating it without mixing (any stray sugar crystals on the side or spoon can cause crystallisation), until there is any indication of browning. Turn the heat to the lowest possible and monitor it carefully, gently mixing with a wooden spoon. When it is seconds away from the ideal colour, add the butter and stir. Once combined, immediately remove from the heat and pour.
It didn't work I tried this recipe atleast 4 to 5 times. I cannot be wrong at all times right?
Shaheen Indorewala caramel is easy. No problem heating up at high heat at start for few seconds. Then lower the heat. when it starts to melt, silicone spatula on it, slowly just to avoid sticking. You can mix water enough to make a crumbly goo of sugar before starting with heat. Butter in the end. If you want you can add a pint of bicarbonate or baking soda to make it softer.
I think i messed it up cause i waited a little bit too long after adding the butter and it tasted burned but i will manage it this time

Did you get early crystallization?: This happens when there are sugar crystals on your spoon or on the side of the pan, don't stir after the sugar has dissolved in your water.
Did it refuse to become brown?: Too low heat or just not enough time. This can take up to 10 or even 20 minutes depending on your stove, give it time and make sure it gets hot enough. Use a food thermometer if unsure.
Or did it burn? Too much heat, happens when you're impatient. Also, sugar will burn if you're not fast enough. Take the pan from the heat a couple of seconds before it reaches its ideal colour and add the butter immediately. The residual heat will keep on cooking it even after removal from the heat source. Happened to me way too often.
Did it refuse to become hard after poring?: Too much water, or too much butter. You really need to be exact with the amounts given if you do this for the first time.

Just made this amazing caramel popcorn! I used sweet microwave popcorn instead of plain kernels in the pan.
You have to be quite patient with the caramel making. I used plain white sugar and thought that it wasn’t working but I kept my hopes up and OMG!!!
It took around 10 minutes for the caramel mixture to turn that golden amber colour. Will DEFINITELY be making this again!

I made this before a few months ago and it was absolutely delicious! Then after I made it another five or six times and it tasted great each time. I am now going to try it again and see if I can succeed this time, thanks for the great recipe Jemma!

The recipe is absolutely amazing, perfect and delicious 😍😍😍 i used the exact measurements but i add 1 teaspoon of baking soda after the butter because i saw others doing so and it turned so well most of the popcorns got coated and they are not so hard to peal apart but still crunchy and satisfying 💙💙💙💙 i love it, you are amazing 💙💙💙

Awesome recipe Jemma, I followed it to a T and got perfect crunchy like-at-the-movies caramel popcorn. This one's a keeper!
I have made this recipe a few times and it’s really good. I recommend using brown sugar instead of white. White sugar works aswell, but if you have brown sugar at home, it will really make a difference! Thanks for the recipe Jemma
I tried it the second time today and wow I am so proud of what it became! It is sooo crunchy, so caramelly and lovely and yummy! Next time I'm gonna put some sea salt in it to balance the taste since I used an unsalted butter. Thankyou so much for the recipe, Jemma!
Excellent guide. Proportions are great. I recommend having it on medium to high heat with the sugar. Once the sugar starts to colour, let it colour for around 1-2 minutes more, depending how dark it gets. Then put in the butter, and switch the heat to minimum, and stir in the butter till it colours nicely and smooth. Depending on your stove, all of the sugar may not colour. This is okay, as when you mix in the butter it will fully colour.
What about popcorn
Can I give a quick small tip? If you hadd half a teaspoon of baking powder after you melt the butter in the caramel, it creates a super fluffy caramel that's easier to spread across your popcorn as it doesn't sag to the bottom of the bowl as easily

This is definitely one of the best cooking channels on RUclips. Very good instruction and very easy to follow.
I always use the lid of the pot to calculate the amount of popcorn to use. Saves getting the scales out if just adding salt/icing sugar 😋

I like to add a tsp of vanilla and a tiny bit of baking soda at the end...the baking soda makes its more fluffy and light and easier to coat the popcorn. Who doesn't love caramel popcorn!! YUMMY!!

i added about 1 rounded tablespoon of gochujang (korean pepper paste) to the caramel and it taste great!! good combination of sweet and salty and spicy.... people, please try it ^^

Hey guys if you struggle making this I’ve got a bit of an easier recipe?
Ingredients
•just under half a cup of sugar
•1 table spoon of butter
•Popcorn
“How to”
First I pre make my popcorn and set it to the side. Then I take my butter and let it fully melt once melted I add my sugar and stir it in and leave it till I see progress in the sugar melting then start stirring until all the sugar bits have been fully melted and there is a decent amount of color to the caramel. Then I poor it on my popcorn and done!

Wonderful! I added a bit of cinnamon and 1/2 teaspoon of vanilla extract before adding the butter. then added 1/2 cup toasted pecans to the popcorn before the candy hardened! Delicious!

One suggestion for everyone who just love sweet and salty mixes, instead of adding butter to the caramel y like to use creamy peanut butter (in the same proportion as it says in the recipe). The result is a gorgeous nutty caramel pop corn you won't regret!

Thank you! The caramel technique work! Do not stir at all until you add the butter, but it's easier if you use an induction stove cause the heat is more even, thus there's no need to stir.

tried it right away after watching and it tastes amazing! 😍 though I just made half the quantity of the caramel so it would not be too sweet - well after burning the first batch of caramel I ended up using the actual amount anyways 😂🙆 note to myself: if it starts to appear to change the colour to amber, do not leave it alone 😜

I’ve made this multiple times and it really is super good, I would absolutely recommend it
Here is my own recipe, maybe you like to give it a try.
Poor in a sauce pan 3 Tablespoons of vegetable oil, 3 Tablespoons of sugar and 1 tablespoon of clear honey and warm it up til the sugar is completely dissolved. When reached that stage, pour in your popcorn and give it a good stir on high heat, make sure every popcorn is coated. Then put on the lid an keep shaking as soon as the popping starts til everything in your pan has popped. It tastes just like popcorn you can buy in german cinemas

Can someone please help me, I used refined sugar and it did not reach an "amber" color so I waited till it reached a gold ish color, then I added butter and waited for it to turn golden and thin but it took too long so I just stopped and added it to the popcorn, it ended up tasting bitter I guess the "caramel" was overcooked? I also ended up burning my hands :(( it hurts and the popcorns taste like failure

tried this tonight. it was a bit of a disaster ^^;
I burned the first two batches of popcorn(gave that to my parents), and my first batch of sugar crystallized. Turning it up to a medium-high heat fixed that problem, but i was trying to cook like 3 things at the same time (typing this the day before thanksgiving) so scrambling to get the caramel onto the popcorn and then onto the tray to cool was quite hectic. But yeah I dunno if my stove top is different than Jemma's, but if you try this and your sugar crystallizes, try turning up the heat, because the second time i did this it turned out perfect.

I used to make the werther's caramel popcorn at disney world and just a little tip to try out (If you haven't yet): Try adding baking soda to the caramel before adding in the popcorn and stir it in for a bit! It'll fluff up the caramel, which makes it easier to coat the popcorn (you can then also just add the popcorn right into the pot and mix it under) and the popcorkn won't be quite as sticky but also very crunchy! xx

@@Ces911 if i remember correctly, we put 2 teaspoons in one big batch. So i believe half a teaspoon should do the trick for a home sized batch 🤔
I’m curious if the you used all the caramel you made. I just tried it, everything turned out perfect except that it’s waaaaay too much caramel for 90 grams of popcorn. I don’t think it’s question of taste, it was just way too sweet. We had to throw most of it away.
Same here, I only did 60 grams of popcorn and used 2/3 of what's came from the pot and now it is waaaaaaaaaay too sweet....
