Just tried the recipe right now. they are spread down chilling. It's great. But, TIP: use the same huge pot for everything. do your caramel in it as well so that you put back the pop corn in it while it's still on the stove. makes it really easy to mix up everything and spread caramel all over the place nicely because the warmth of the pot keeps the caramel slimy.
Coconut oil is a MUST! Way better than neutral oil. I jse a Whirley Pop, butter flavored coconut oil and Flavocal. Literally identical to movie theater. I grew up in Valpo (where Orville Redenbacher started). He was a client of mine. If doing caramel or cheese flavored, then use regular coconut oil, if the butter flavored is too much for you.
Garrett's uses half "Mushroom" popcorn and half traditional butterfly popcorn in their mix. "Mushroom" popcorn is best used for coated popcorns because of its surface area and it holds up to mixing too. Ya can't beat this mix...yum!

The 'brain' look to the kernal is from using a specific type of corn, versus the typical 'sploded' looking style kernal....Garrett's (as well as, Nuts On Clark) use the 'brain' looking one specifically for heavier flavors because it holds the toppings better..... Im not some all-knowing popcorn addict. I just saw it in a documentary one time on popcorn 😂 Great video, as always, Adam and team!

You using the wrong sugar. Garrets uses brown sugar and corn syrup. I will not tell you the brand but with a little research you can spot it in videos here on youtube. Trust me the brand does matter cause not all brown sugar is created equally. Its owned by a major company who also produces brown sugar under their name. But for some reason it doesn't have the same flavor profile.

No its not a mix. All mushroom kernels do not pop into a pefect mushroom. They use mushroom for the cheddar also.

I make my popcorn like that. Throw popcorn in a pot with some oil, cover it, turn on the heat. When it stops popping, it's done. Comes out perfect.

A readily available semi-substitute for cheese powder is just to smash up/food process Cheetos or another cheesy chip.
