Caramel Corn Ingredients:
3 Tbsp Neutral Oil
½ cup Popcorn Kernels, unpopped
1 cup Water
1 cup Sugar
½ stick Unsalted Butter, cubed
2 tsp Kosher Salt, more to taste
1 tsp Vanilla Extract
1 tsp Baking Soda
1-2 tsp Turbinado sugar (optional)
Brown Butter Cheddar Popcorn Ingredients:
3 Tbsp Neutral Oil
½ cup Popcorn Kernels, unpeopled
1 stick Unsalted Butter
1 cup Cheddar Cheese Powder
2 tsp Kosher Salt, more to taste
½ tsp MSG

I make my popcorn like that. Throw popcorn in a pot with some oil, cover it, turn on the heat. When it stops popping, it's done. Comes out perfect.

Garrett's uses half "Mushroom" popcorn and half traditional butterfly popcorn in their mix. "Mushroom" popcorn is best used for coated popcorns because of its surface area and it holds up to mixing too. Ya can't beat this mix...yum!
They also use air to pop and not oil. Did you see that same episode on Business Insider? Just watched it today.

No its not a mix. All mushroom kernels do not pop into a pefect mushroom. They use mushroom for the cheddar also.

The 'brain' look to the kernal is from using a specific type of corn, versus the typical 'sploded' looking style kernal....Garrett's (as well as, Nuts On Clark) use the 'brain' looking one specifically for heavier flavors because it holds the toppings better.....

Are cheddar popcorn soft? Since they don't have caramel and you pour melted butter on them, doesn't the popcorn feel wet? Because caramel ones end up being crunchy :) Thank you!😃
Coconut oil is a MUST! Way better than neutral oil. I jse a Whirley Pop, butter flavored coconut oil and Flavocal. Literally identical to movie theater. I grew up in Valpo (where Orville Redenbacher started). He was a client of mine.
If doing caramel or cheese flavored, then use regular coconut oil, if the butter flavored is too much for you.
Just two questions. What did you mean by, "GP?" And that what is your sugar and water ratio? In other words, how much sugar? And How much water? Finally, how much baking powder/baking soda did you add? Thank you!

Garrett's does not use powdered cheese for their cheese corn, which is what makes it so good.

Whyyy do you add MSG?? Like what does it do for the popcorn? I've heard such terrible things about it.
MSG gets a bad rap, it's unhealthy in large doses, like salt and sugar, but it enhances flavors in a way salt doesn't.

You using the wrong sugar. Garrets uses brown sugar and corn syrup. I will not tell you the brand but with a little research you can spot it in videos here on youtube. Trust me the brand does matter cause not all brown sugar is created equally. Its owned by a major company who also produces brown sugar under their name. But for some reason it doesn't have the same flavor profile.
Why not just say the brand? Sheesh, it's not some government secret.
