You probably cooked the Carmel too much, you should stop cooking as soon as it gets brown and work very fast, and it is also important at what temperature the room is. If the room is cold then the Carmel called faster

That’s how I make caramel corn..I also add peanuts with the sugared caramel..syrup..Some people bake it 10 minutes in the oven after you pour the Carmel on..You have to watch it and stir it real well..
