I've just made this in batch with 1kg of chicken and only used a 400g can of diced tomatoes, 200g of evaporated milk and 3 wedges of cheese and that was enough in that case, just had to adjust the spices but it ended up in a flavor bomb 🔥 Also, charring 1kg of chicken in a pan or a pot takes a while as it needs to be done little by little, so to save me some time and actually get something that had even more of a tandoori feeling, I just tossed everything at once in the pot for a few minutes until the outside was cooked but still pale, but then I put everything flat on a sheet pan and charred the hell out of the chicken bits with a blowtorch, that worked perfectly. (and I use a whole sliced nappa cabbage to add volume and because I love it, but that's drifting away a lot from actual butter chicken :p)

The right word is "gravy". In India the word sauce is used exclusively for western condiments. The word gravy or curry is more appropriate for the liquid or semi-liquid part of such dishes.
You should also add cashews in the butter chicken. It adds to the creaminess. But if you want to reduce the calories maybe you can add almonds and see how that works.
Add whole cummin before the onions. Add the tomatoes before any ground spices, as to not burn the spices. The most important step is to let the onions brown (at least 10 min) and let the tomatoes cock until oli and tomatoes separate (at least 10 minutes). A curry is never a quick meal, the more time you spend the better it taste.
@@justlearner2012 You don´t remove the cumin seeds. Heat the oil and and the cumin seeds, fry the cumin seeds on a medium temp, until you can smell them (takes a few sec). Then you add the unions, fry cumin and unions on medium heat for about 10 min, until brown. (I you want the unions to brown faster you can add som salt and put a lit on the pan. The salt and the steam softens the unions faster.) Honest kitchen is a good indian youtube channel, if you want to learn more about indian cousin.

I just made this today using this recipe for the first time with the suggestions from the top comment and it was absolutely amazing! The laughing cow cheese and the evaporated milk are genius ideas. I made it in a 1kg chicken portion and the best part is that the ingredients like the canned diced tomato and one can of evaporated milk were just enough for no waste. A part of cooking with canned items I really dislike is when I don't need all of it or when I just need a little more than what is contained so this works out very well in the end with no waste! Great macros and recipe overall.
Your last 3 chicken recipes have basically been my groceries shopping list for the last month, and there goes a 4th one =) I've meal-prepped all of them for 5 meals so far and it's always been a hit, and I feel that with this one we could use 5 times the amount of chicken but probably only 2 to 3 times the quantities for the sauce would be enough, that could bring each meal down to 400-450kcals

@@ago8871 I cook the meat all the way through, typically on Sunday, split it up in individual airtight containers and wait at most 1h before putting them in the fridge, preferably even sooner as the goal is to bring the temp to below 5C as fast as possible, however putting it too soon is not ideal if you only have one fridge as it will bring up the whole temperature of the fridge a lot. I've been doing this for years and eat my meals up for up to 5 days and didn't have any issue so far, but maybe I've just been lucky :) Re the rice, reheating it isn't really the issue, (and day old rice is the staple of any fried rice recipe!) the problem is that rice can contain a bacteria that has chances to survive the cooking process and will multiply quickly at room temperature, but following the same process (i.e. getting it to < 5C within 1 hour) didn't give me any problem so far (however chances were lower as I use potatoes or konjac noodles/konjac rice most of the time) - Side note: there are actually benefits of reheating rice, when cooling down a part of the starches turn into resistant starches, which lowers the calories (well, not dramatically though) and the glycemic index, and improves digestion, the same goes for potatoes and pasta. Sorry for the long answer :p
This is a great recipe, just tried it out and it’s quite quick and easy to make and is delicious. Had to adjust it slightly to make it for two people but this is definitely a winner and I’ll definitely be making it again. This is the first one of your recipes that I’ve had a chance to try and I’m very pleased and will be trying out some of the others in the coming days.
Instead of what you chose to replace the cream the best thing to use is Blended Cashews. Fresh Cashew Puree is the best or Coconut milk. Also with the fresh garlic you added, you need to add ginger paste and any green chili paste. Sautee it for a little bit longer too.
Just cooked this. Used condensed milk instead of evaporated milk..... omg it was amazing! Tasted sweet like a korma but without the coconut. Added a few extra spices also to give it a little kick. Try it

Just made the unhealthy version with cream and butter, adjusted for 400g of chicken. Absolutely delicious. Very well explained recipe! Now that i got the spices i need, i guess i will eat this a lot in the future :)
What a recipe! So great! I put my chicken breast under the grill in the oven for 10 minutes until I see very dark charring, I think with the yoghurt marinade it doesnt dry out as easily. The chicken thighs that I can get here release a lot of fat (even after trimming all the visible fat) and water, so I dont really like to use them. I also use 18% sour cream instead of cream in the end, because I couldn't get low fat evaporated milk and the cheese where I live. 25g is enough for one portion or butter chicken and it gives it the same color and creaminess as heavy cream at only 50 kcal:) My portion comes down to 426 kcal, 10 g fat, 10 g carbs, 67 g protein:)

Just made this for dinner and I can safely say its absolutely delicious! A couple of minor tweaks I made for my own palate: 1) I whizzed up the sauce in the blender. I prefer the texture and you get a more consistent flavour 2) I added some frozen spinach at the end for extra healthy goodness, and to fill out the meal a bit more. Just cooked this yesterday, i live in Indonesia, so most of our groceries don't have passata and garam masala. So i tried to made my own passata and replace garam masala with a spice called ngohiong, and it still tastes great! this is probably gonna be one of my go-to for healthy chicken dishes.

one suggestion. add bit of lemon juice in marination. it will add nice flavour & will keep the chicken juicy & soft. add some soaked cashews with onions, tomato puree & masalas while cooking. cashews will make the gravy bit thick & after cooking, let everything cool down, then grind them all together. now add some butter in pan, then add this gravy & chicken. mix them well & cook it for 5 mins.
Just copied the recipe but went ahead and put that butter and cream in it… I ate it all. The whole 1.5 lbs of chicken and 3 cups of rice. It’s amazing. Cannot wait to make this again. 🔥🔥🔥
I use coconut condensed milk in my butter chicken. Try ittttt. So good 🔥also I go half n half with jasmine rice and cauliflower rice to boost volume and feel like I'm eating more "rice" with less cals ❤️

Looks delicious. I found another good way to make curry's creamer and thick without adding any more fats. Once the sauce has simmered a bit just blend it up and the pureed onions etc thicken it up nicely.

A few tweaks - I’m punjabi so know this dish well. Instead of the evaporated milk and laughing cow, add ricotta which is very low fat and add saffron in 5pms milk, and then add more yoghurt. I would also blend the sauce before adding the chicken back and can use xanthum gum to thicken

Has little less calories is quite the same in aminoacids and protein as whey but 30% cheaper, in expense of being harder to dissolve in water or milk than whey (always need a blender), smelling a little eggy and having some slight eggy flavor. I bought natural albumine without flavor and before I was just having vanilla whey, this might have generated a big difference in taste but there is flavoured albumine as well that I need to try

What you could do as well with such a quantity is to throw it on a sheet pan and broil it in the oven, works like a charm

one suggestion. add bit of lemon juice in marination. it will add nice flavour & will keep the chicken juicy & soft. add some soaked cashews with onions, tomato puree & masalas while cooking. cashews will make the gravy bit thick & after cooking, let everything cool down, then grind them all together. now add some butter in pan, then add this gravy & chicken. mix them well & cook it for 5 mins.
Just copied the recipe but went ahead and put that butter and cream in it… I ate it all. The whole 1.5 lbs of chicken and 3 cups of rice. It’s amazing. Cannot wait to make this again. 🔥🔥🔥
I use coconut condensed milk in my butter chicken. Try ittttt. So good 🔥also I go half n half with jasmine rice and cauliflower rice to boost volume and feel like I'm eating more "rice" with less cals ❤️

I will make this but i'll likely sub the cheese with something or eliminate it all together. Or use even lesser evaporated milk! I like having it with basmati rice so hoping I eat a bit more rice while sacrificing the extreme creaminess of butter chicken! It's all about balance and hey, thank you for this amazing recipe!

Looks delicious. I found another good way to make curry's creamer and thick without adding any more fats. Once the sauce has simmered a bit just blend it up and the pureed onions etc thicken it up nicely.

You can also just add in a cornstarch slurry and that will easily thicken up your sauce very quickly with very very little calories.

A few tweaks - I’m punjabi so know this dish well. Instead of the evaporated milk and laughing cow, add ricotta which is very low fat and add saffron in 5pms milk, and then add more yoghurt. I would also blend the sauce before adding the chicken back and can use xanthum gum to thicken
Used to be quite fit but I let myself go a bit. I'm 6ft 1 and I weighed 230 pounds with little to no discernable muscle mass. Meals like these will help me get back to where I was thank you!!

Just use ginger garlic paste. It’s more traditional. Peeling and mincing can get tedious.

Canned tomato will absolutely work. You can also use regular milk yes, it won't be as sweet but it will work
Evaporated milk and laughing cow cheese is brilliant. I always make this dish and when I’m portioning out my meals during fasting cycles I can never eat enough of this to get full broth your tip I can now eat an extra pita with my portions 😎😎

Hey Felu!! I bought some natural albumine to try and I wasn't able to handle it... I would be super glad if you make some recipe with albumine!!! The good thing it that is protein rich and almost 30% cheaper than whey, but I think it's better to cook than to drink
Never heard of that to be honest. Aren't they protein capsules?
@@Felu albumine is basically egg whites powder. Has little less calories is quite the same in aminoacids and protein as whey but 30% cheaper, in expense of being harder to dissolve in water or milk than whey (always need a blender), smelling a little eggy and having some slight eggy flavor. I bought natural albumine without flavor and before I was just having vanilla whey, this might have generated a big difference in taste but there is flavoured albumine as well that I need to try
