Does the USB-C charging port on the transmitter support data transfer? Specifically, can I connect an external recording drive to it instead of a power bank?

Unfortunately not, you can with Lark MAX, but not with this one...
But you can if your laptop/PC has a classic 3.5mm input, most PCs do...
Hello! If I want to record a video with this microphone on my phone (android), the sound will be mono, if I understand correctly. My question is, will the sound still be good for youtube or do I have to edit it to be stereo? Thank you very much!
You can always set it to stereo in your editing software but have no worries mono works too... Will be heard on both speakers on YT 👍
