Thank you!!
When I was younger my next door neighbor, Clara, who was raised in Puerto Rico used to make yucca alcapurrias and share with us neighborhood kids, they were so delicious, spongy and chewy on the inside but a bit crispy on the outside, So Good! But, unfortunately my Wonderful neighbor, Clara, passed away, God Rest her Beautiful Soul and I never got a chance to ask her to teach me how she made them. Now I tried other alcapurrias from other Hispanic restaurants or street vendors, hoping to find that same tasting Alcapurria, but they were never nearly as good as Clara's, the textures never came close. Watching your video, your alcapurrias looked so much like hers and seems easy to make. I can't wait to try them! Thank you so much!!
I’ve been making Alcapurrias since my mom passed away and I have to let you know that your recipe and instructions are the best. Yes so easy, thank you for the best, beginners should follow

Hello Jeff. I'm studying this recipe. I have grated yuca in my freezer so I needed a recipe. Thanks a bunch. Say hello to Jo.👍👍👍👍
Thank you! Hello!! (Jo here)
Thank you so much for this video. I loooove pasteles and alcapurrias de yuca, but there is no one around that makes them. I finally gathered the courage to do this since you made it seem fairly easy :D. We will see how it goes.
Good luck! Keep us posted!
@@JeffandJosPuertoRicanKitchen for being my first batch it was really good! I will make this recipe again and probably follow it more closely. I ended up with more meat than masa de yuca but still yummy lol.
Wow!

Hi, is the cassava shredded and then processed into a paste , wasn't sure.
I love Puerto Rican food.
I'm Cuban, I learned how to make pasteles. Azuca!!!!😄
Not exactly sure but it’s generally shredded and then just blended - not much else processing.
Can you recommend a dipping or side sauce. Empanadas are usually served with a dip or side of sauce. 🤔
Really no dipping sauce is used but you can add some mayo-ketchup n
I wonder if they can be done in air fryer.
We haven't tried that, but let us know how it works out if you do!
I put them in the air fryer frozen and they are delicious
Can I use coconut oil in instead of shortening ?????
You can, it may affect the flavor but give it a try!!
How long do you fry for
The instructions are in the video description and you can also find them here: www.jeffandjopr.com/post/alcapurrias-de-yuca
If you're making it from the whole yuca root, what is the best way to prepare?
If you are using the root then you peel it, and put it through the food processor. Check out this video here - you follow the same process ruclips.net/video/sstBFOq6hZ0/видео.html
vegetable shortening is a no go Because of the inflammation it will cause in body , use beef tallow instead .
Thanks for the suggestion
Saludos desde Maryland USA, so Jeff what happen with some diabetes fixings ...????
Frank, we are still thinking about you - it often takes us a while to develop recipes but we are keeping you in mind ☺️
Im counting on you .... !!!
Hey bud, that’s a carimañola 🇵🇦
Quiero uno sin carne , puedo usar yaca. Jackfruit o que pareces,
Usa impossible meat or some veggie ground beef
I've never met a Puerto Rican named Jeff before
Really? Gotta get out more!!! 😂🤣
The leafs are not from rubber tree , they are from the banana tree .
They are not from the banana tree.

Glad you can all enjoy what you like!
@@JeffandJosPuertoRicanKitchen yeah my mom taught me how to cook the food when I was 8yrs old
Habla español o ingles no spanenglish
