Alcapurrias de Yuca - Easy Puerto Rican Recipe

And although alcapurrias are typically made with a mixture of root vegetables, we're going to show you how to make a super easy alcapurria with just yuca. This delicious treat is the perfect appetizer for any party, any time!

    Ingredients:
    2 lbs ground yuca
    1 tbs sofrito
    1 tbs achiotte oil
    1 tbs vegetable shortening
    1 pkt sazon
    1 tsp salt

    When I was younger my next door neighbor, Clara, who was raised in Puerto Rico used to make yucca alcapurrias and share with us neighborhood kids, they were so delicious, spongy and chewy on the inside but a bit crispy on the outside, So Good! But, unfortunately my Wonderful neighbor, Clara, passed away, God Rest her Beautiful Soul and I never got a chance to ask her to teach me how she made them. Now I tried other alcapurrias from other Hispanic restaurants or street vendors, hoping to find that same tasting Alcapurria, but they were never nearly as good as Clara's, the textures never came close. Watching your video, your alcapurrias looked so much like hers and seems easy to make. I can't wait to try them! Thank you so much!!

    Thank you so much for this video. I loooove pasteles and alcapurrias de yuca, but there is no one around that makes them. I finally gathered the courage to do this since you made it seem fairly easy :D. We will see how it goes.

      arroz con gandules, pernil, viandas y alcapurrias. Pero aunque no lo creas no ha querido darle sus recetas a ninguno d sus hijos. 😆 Precisamente por eso ella dice q después las pasamos pa lante

    Hi, is the cassava shredded and then processed into a paste , wasn't sure.
    I love Puerto Rican food.
    I'm Cuban, I learned how to make pasteles. Azuca!!!!😄

      Not exactly sure but it’s generally shredded and then just blended - not much else processing.

    vegetable shortening is a no go Because of the inflammation it will cause in body , use beef tallow instead .

    If you're making it from the whole yuca root, what is the best way to prepare?

    No se de dónde o quién te dio esa receta, pero las Alcapurrias Puertorriqueñas, no llevan manteca en la masa nunca jamás ❌️ en la vida, Eso es un disparate.
