"I'm Puerto Rican, so I don't have exact measurments" - I've asked for recipes from so many friends and family and this has always been my experience. Shout out to Mami and Wela! Thanks for the video.
Thank you so much for sharing this recipe. Two weeks ago, my “Cooking Hotline” passed away and seeing you talk to your mom brought back so many wonderful memories of me calling my mom for cooking advice. I’m in tears but I feel so blessed to have had a mother like I did. Thank you again.
Yes there are measurements if you're gonna make a big batch 15 lbs of green bananas 3 lbs of yautia one large potato and one large green platano and it makes the best masa my Titi gave me the measurements my family and friends say I make the best pasteles and alcapurrias so there u Go 🇵🇷
If there are no Latin restaurants in your area, look for Asian or African supermarkets for the green bananas and yautia. You can get the rest of the stuff (sazon, adobo) online. Even the sofrito-Loiza has a great shelf-stable sofrito you can order online. Happy cooking!
Let me know how it goes! Here’s a link to my blog post with step by step instructions and more tips: www.diningtraveler.com/2021/07/recipe-making-alcapurrias-at-home.html
I use help my Mom make sofito. Then I would make it for us when she got older. My daughter makes her own too. If I finish my sofito and don't have any more I have never or ever will buy it made from the supermarket. Oh I been making alcapurrias for years.
What food processor do you use? I tried making alcapurrias once before by grating the yautia and it didn't come out well. I think for a second attempt I'll get a food processor to make sure the masa is the right consistency.
I have a kitchen aid food processor, I had this one for over 10 years. amzn.to/45m0SUs If you’re going to use a box grater, use a box one in the smallest setting. Hope this helps! Éxito
I've never tried them with plantains but I suspect it will probably not work. Try finding yuca instead. Do you have Asian supermarkets in your area? You can find them there. Éxito
I've never tried it this way but the consistency of the masa would probably be the same. It would taste different though. Let me know if you try it! Thanks for watching

Thank you! I had to make it several times and measure just to have the measurements for the video!

That’s not exclusive to Puerto Ricans. Most people who have cooked anything more than three times don’t have exact measurements.
AFRICAN supermarkets have it all!!!
Ain't nothing like homemade sofrito.
Facts!!!
Love your video!!!!! Great recipe!!!! 👍🇵🇷🕺❤️👌💃🙏💯💯

I needed this recipe!
I really like this recipe. Thank you.
Thank you!
Hello! For about how many alcapurias is this recipe? Can't wait to try it!
This recipe yields around 12 alcapurrias 😊 let me know how it goes
How long do you fry them for and what temperature??!
around 375F and around 4-5 minute on each side, the key is that it's nice and crispy!
It kinda looks complicated to make but I must try cause ever since I moved outta the Bronx NY I can’t find those anywhere here in the south lol
If you have a food processor, it makes t much easier. Get some friends to help you peel the guineos and yautia! Let me know how it goes
❤

A friend of minds send me a bottle of abodo great for my fish
I'll take a dozen 🍽️
coming right up!
I can’t find green bananas, can I use plaintains
I've never tried them with plantains but I suspect it will probably not work. Try finding yuca instead. Do you have Asian supermarkets in your area? You can find them there. Éxito
With the plantains they would turn out hard!
Thanks for the recipe. Can one substitute the masa ingredients with green plantains and potatoes instead of the green bananas and yautia?
I've never tried it this way but the consistency of the masa would probably be the same. It would taste different though. Let me know if you try it! Thanks for watching
I have used grated yucca.
And they come out good.
The ones made with yucca are alcapurrias de yuca. They also make those in Puerto Rico.
Mexicans use banana leaves too.
In Veracruz tamales.
I've never had Veracruz tamales, I bet they're delicious!
Maybe use enough of the oil to go over the top?
Dime esa es yautia o mapagana lo Creo es malagana
Es yautia ☺️
@@Diningtraveler ok gracias
Se llama Malanga, yautia o taro.
Omg r u guys in philly?! I would love to order from u! Do u have instagram?
No, we're in DC but we don't sell, sorry! We only did it for charity once. But once you get the hang of the recipe, it's really easy!
These are fucking bomb!!!
They are ❤️❤️❤️

You have to give measurement's.
They’re in the description, I had to make it like 5 times to record the measurements
Thanx! lol@@Diningtraveler
Now a days corn beef is as expensive as ground beef lol.
😂😂😂 that’s my mom’s favorite filling
They never leave over any platanos, isn't that always a hurdle? they always cook mofongo and tostones in this house ... 😒
Es puelto loco chica
Slice the banana and put in the microwave for 3 secs peels awesome
Thanks for the tip!
