I have a story about heads of garlic. When I was in the Army, my friend and I were dying for some homemade lasagna, so we found a lasagna recipe that called for four to six cloves of garlic among the ingredients. We confused cloves for heads of garlic in our preparation. Obviously, the lasagna turned out way over garlicked but edible none the less. The next day at the range was a warm sweaty one, especially with all the gear that we were wearing. We REEKED! People could not come within 10 feet of us all day.
Tortellini definitely was how i got my wife. i had her over for dinner and i had Tortellini in the pot and i was cutting up the baguette with the name on of the restaurant (same place i bought the already made Tortellini 😅) dinner was a hit, probably because i didnt cook it. she never knew until about 10yrs later. been stuck cooking all the dinners ever since.
Try it. I’ve never really cooked either but use Sam’s recipes occasionally and they’re always a hit. Another easy one to try from him is the Shepards pie. I made it recently and it was great, I used ground beef instead of the lamb though
We made this last week and we took your advise we made it our own. We used sun dried tomato's and changed out the tortellini with Italian sausage stuffed raviolis, we also added mushrooms. It was great the people who ate it with us have asked for the recipe. I am going to show them who you are on you tube so that they can make this and other things you make on your channel. Thanks

Made this with what I had in the fridge. Replaced heavy cream with Greek yoghurt, frozen chopped spinach instead of fresh baby spinach, and no peppers. Still great!!!!!

Sam, made this for dinner tonight but used the canned chipotle peppers you always use. This recipe blew me away! Very delicious! I’m so glad i have left overs to look forward to tomorrow!
If you don't use garlic much, then buying 8 could result in losses to flavor from staleness or just simply rotting. If you only buy one at a time, you should always have the freshest garlic possible, unless you lose it. Or like me, sometimes don't feel like going to get some garlic when you need more. Garlic paste is a good option as it's easier to find in the fridge than trying to find a head of garlic in the pantry and keeps fresh longer with less prep to peel and chop.
Hey Sam, Max, and Chance! After watching today’s video, I think a great video idea would be something on how you clean your STCG cast iron pan after a dish like that. I love mine, but I think for people who love you guys, and want to start getting into cooking with a cast iron, have the OG show us how you all clean them would be great!
I would like to see Sam do a vid on this too. In the mean time, here is my method: Empty food from pan into bowl/platter for serving. Don't serve from the pan, it's easier to clean while it's still hot. Turn on hot water in and empty sink. With a heating pad or glove, grasp the handle of the pan in your off-hand and get a pan brush (like a big toothbrush) in your dominant hand. Scrub the pan under the running hot water in the sink. Dry the pan and wipe down the inside with a tiny bit of oil (i like grapeseed oil). Use a paper towel to spread and remove the excess oil as it can become sticky if too much is left to dry. For extreme cases, you can purchase a silicone pad sheathed in chainmail to scrub, but this might also remove some layers of the pan's seasoning, so only use if absolutely necessary. Also remember: The more fond you scrape off the bottom of the pan while making the sauce, the better the sauce and the easier it is to clean the pan. Don't use metal; wood spatulas/spoons are the best option here as they are stiff enough to work while soft enough to not damage the pan. Wood will also self sharpen and mold itself to the pan with use. Never put a cast iron pan in the dishwasher. The corrosive/abrasive washing process and chemicals can strip the seasoning and damage or even rust the iron. Also, never soak the pan as it can cause the pan to rust. If you need to clean a cold pan, heat it up on the stove first. If you stack other pans on top of this one on the shelf, separate them with a paper towel to prevent stray water dripping into the pan and causing it to rust and to prevent the oil from getting on the bottom of the other pans which could cause a fire in the worst case.
A 1/4 cup of vermouth would have been a nice add to deglaze the pan. And small button mushrooms would add nice flavor and texture. But great idea to use the tortellini!
