is the texture crispy or chewy?
It has a chewy texture like a gummy candy
They are very good but will not dry... any suggestions?
Maybe try a cooling rack if they’re thicker
Does it work with brown sugar?
The flavor would be different and the lemons a darker caramel color but besides that I would think that it would work.

When stored in the fridge, your candied fruit can last up to two weeks.

mine came out terribly wrong lolI don't know what I did wrong, but it was VERY bitter
You might need to let it stay cooking a little longer in the sugar syrup and also make sure that they are thin enough to have a good ratio of sugar to lemon rind.
Try blanching them first. I could never get them to be not bitter without blanching.

@@HWDY.mp3 I do slices first, take out seeds and then blanch them.
