Lovely idea. I usually make candied orange peel (my kids love those and the little lady needs these with a 70% chocolate cover (half covered, actually). I'll give it a shot., that sounds brilliant. Another wonderful way is to dry slices of orange - not lemon! - and the drying does virtually the same thing - condensing the sugars in the slices and they turn out wonderful . You can dry the slices in the oven but a solar dehydrator is a wonderful tool, and it's electricity bill stands on zero year round... :) I'll also try your idea of boiling the lemons to reduce the citric acid in them before dehydrating them. Soft fruits if treated this way will really just result in Jam or I think you call Jelly, They will break down, this method is really only suited to the hard citrus peels.. Thanks you two ;o) Steve
+Steve's Kitchen So you know, jams have pulp and jelly is strained or clearified. At least on my part of the World. Apples came out nice and there thick skins (tree ripe) made nice garnish. The plumbs and peaches made a nice glaze sauce. The cherries, great and nice sauce that has been frozen for future things like ice cream. Maybe even a frozen cake glaze. Give it a try and you will not regret it. Food is what you have at hand and make the best of it. Valarie went a little upset at me and then realized what I was doing. The soft fruits need nothing past the caramel smell (if It's does....cool it quickly)
Steve, I think when you worked in Hong Kong there were a few people who said your desserts were too sweet. Thanks for the candy recipe though. I wanted to do that for your no bake which I tried a few weeks ago. Turns out, I didn't do it, and it was a good thing. I'll try again later.
So the first batch I out right burned. Second batch I might have burned a little. I won't know until they finish cooling. The third batch looks right. I made twice as much sugar water and kept some on the side because when the second batch was cooking I noticed it was reducing too much before the lemon slices became clear. It really helped! I cant wait to try them. The lemon syrup I will save for my roommate to add to her coconut water lemonade. Can you do a video making candied violets or rose petals?
Thanks for sharing your results. Petals are not hard to do, just use a very soft brush and Paint a little egg white onto the Petals, then dust with Powder Sugar and set aside to dry over night.. :o) 🌻

I have stuff filmed from over a month ago but have had no time to edit. I've been very busy having all windows in the house replaced plus the front door. It was a huge project. Gabby is graduating next week and the window people wanted to start the project on 5-31-16 I told them that wouldn't do. So they started the project on 5-17-16 and did 7 windows over a 2 day period. Then came back last week and did 3 more windows and finally they finished on Tuesday with the door. I've been totally out of commission here for 3 weeks between moving stuff all over the place to give them access and working to clean up all the mess I've had very little time to produce videos. You cant imaging the amounts of brick dust and rubble that falls out all over the place in these very old houses. I've tried to stay active on IG so no one would worry about me. Instagram is easy. You just find a corner somewhere to snap a picture then write a short caption. The problem is that most of my YT subscribers don't follow me on IG. lol I should be back on YT soon.

Hi Cindy, It;s the same for all citrus fruits yes. I do have an embarrassingly old video on youtube of me dipping the Peel in Chocolate, which is my favourite way of eating them :o). It's a kind of by Eye balancing act, to get the right water sugar for the quantities of fruit, I am sure there is an exact guide but I never use it, if the pan will allow you can just increase the water and sugar an equal ration for your needs.. I hope you try it. Dry them on a rack by the way and don't look for perfection, just enjoy (Try not to burn your sugar,

Thanks Dax, you could still use the same ratio to be honest, actually Icing Sugar by volume is lighter than granulated sugar, so in fact it might be about 1/2 a cup of sugar to make it the equivalent, I use icing as it dissolves a lot quicker.. Thanks buddy. Steve

They don't freeze well, they are preserved already so they don't need to be frozen. They were last many months just kept in a cool dry storage.

This looks great. How long do they last? If I make a batch to use on cheesecake and want to make extra how long can I keep them in the 'fridge?
Weeks if they are sealed well.
You'll never keep them that long. I made them today and can't stop sneaking another ... then another ....

could you use granulated sugar instead of powdered sugar?
I think for a simple sugar you would do 1:1 water:granulated sugar, but Steve might have a better answer. I hope you enjoy whatever method you choose.
Thanks Dax, you could still use the same ratio to be honest, actually Icing Sugar by volume is lighter than granulated sugar, so in fact it might be about 1/2 a cup of sugar to make it the equivalent, I use icing as it dissolves a lot quicker.. Thanks buddy.

Tacky, depends what you want them for? If you want them dry, people tend to coat them in Sugar, I don't like them that way myself..
I'm adding little slices (limes) to mini Margarita cupcakes. I don't like the Idea of sugaring them, either, but might have to. I think everyone might eat them either way..I mean, it's a cupcake, right?! Lol. Thanks so much for the reply 😊

Pearhaps your lemons weren't ripe? But it shouldn't more bitter sweet

As long as you want really but they will get dryer.

Ok.... made them ... oh dear, oh dear .... they're never going to last long enough to dry out! Anyway... I've kept them in the syrup!
