Much healthier and I save my peels in the freezer until I have enough, then make a big batch, chop it in the food processor and freeze in bags. Wonderful for Teacakes, buns, fruitcakes etc and cost next to nothing!

If you have the orange peel scorer from Tupperware, which I remember was super popular in the 1970’s (at least here in Norway) - that makes it super easy to score your citrus peels too… 🤗🍊🍋🍊🍋🍊🍋

Lol, I've made Panettone this week and run out of peel now. The last time I had what I class as really good peel, it was from a market stall in Italy (and cost a fortune!) Oddly, here citrus peel is not sold everywhere (silly people!) but they sell whole candied fruits - which are largely tasteless. I'd have to travel 20 km just to get some... So I now have orange, lemon, pink grapefruit and lime simmering away. The smell is beautiful!

Hi Steve. I have made the candied peel from your recipe and it was so easy to understand and to make. However, I over calculated for the sugar syrup to use for the amount of peel I had so I saved the leftover syrup and bottled it and stored it in the fridge. It is coming in very useful for all sorts of ideas, and I have citrus flavoured sugar syrup available on tap!!
That's great to hear Joan. I find that the sugar syrup that is left over from making Peel has drawn out some of the sourness of the Pith and isn't to everybody's taste but if you find it fine that's great. Normally if you want a really easy to enjoy Lemon or Orange Syrup, it's better to us only the zest of the fruit but if it's great for you, then go for it and enjoy..
Thanks Steve...absolute delicious. The technic to peel the oranges...wow it really works...!!! Just today we did them agein, but this time we cut the oranges in a different way. First cut them in 8 pices then remove the orange from the peel using the knife horizontally. With this techinc a small layer of the fruit stay attached to the peel adding a little bit of extra flavor. My wife and daughters love them this way. Then cut the peel agein in 16's or even 32's and folow your recepy from there... Cheers...!
Our trees are full of fruit and I want to have this made for making hot cross buns on 4th April. How long do they keep these peels? And what do you do with the sugar syrup afterwards - I bet it is amazingly aromatic. Thank you for posting the recipe.
The citrus water from that first boil can be used in cleaning solutions. Repels bugs, and smells nice.

Also soda can push tab with ring still on makes great peeler as it just deep enough. 😉

My Grandmother used to put small cut up bits of candied oranges in scones, they were so delicious!
