Quick Minestrone Soup

One evening early in March we had tacos and I made Dan a big bowl of his favourite Aberdeen Angus chilli. Even he couldn't eat it all so I turned the rest of it into a budget-friendly soup with a stock cube and a few store cupboard and fresh essentials from a zero-waste food box. A nutritious lunch within 15 minutes!
